Creamy Smoked Salmon Pasta image

This is a lighter version of pasta carbonara. For people who want the flavor but not the bacon, smoked salmon is the perfect substitute!

6 tablespoons butter
½ onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons garlic powder
2 cups skim milk
½ cup grated Romano cheese
1 cup frozen green peas, thawed and drained
½ cup canned mushrooms, drained
10 ounces smoked salmon, chopped
1 (16 ounce) package penne pasta

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
  • Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
  • Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.

1 teaspoon Dijon mustard
1 cup light cream
1/8 teaspoon black pepper (freshly ground)
salt, to taste
1/2 teaspoon dill (for garnish)

Steps:

  • Cook the pasta according to package directions.
  • Cut the salmon into thin strips.
  • Heat the cream and Dijon mustard in a small pan over a low heat but do not let it burn or boil. Stir frequently.
  • Add the salmon strips. Continue to heat until salmon is warmed through. Season with black pepper and salt.
  • Toss salmon sauce with cooked pasta and sprinkle with dill.
  • Enjoy!

1 teaspoon olive oil
1 scallion, trimmed, washed and finely sliced
2 ounces smoked salmon, chopped
4 -5 tablespoons heavy cream
1/2 lime, juice of, only
fresh ground black pepper

Steps:

  • Cook the pasta in a pan of lightly salted boiling water according to the packet instructions and drain. Meanwhile, heat the oil and fry the scallion until softened.
  • Stir in the chopped salmon and heavy cream and heat until beginning to bubble. Add the lime juice, bring the mixture to the boil and simmer for 1 - 2 mins, stirring.
  • Stir in the cooked pasta, season with pepper and serve.

12 ounces farfalle (bow-tie pasta)
Coarse salt and ground pepper
1 small red onion, quartered and thinly sliced
2 ounces bar cream cheese, cut into small pieces
1/4 cup fresh dill, coarsely chopped, or 1 teaspoon dried dill weed
2 tablespoons capers, drained and rinsed
4 ounces smoked salmon, cut into bite-size pieces

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Add onion to pot; immediately drain pasta mixture, and return to pot.
  • Add cream cheese, dill, capers, and salmon to pasta. Toss, adding reserved pasta water a little at a time to create a thin sauce that coats farfalle (you may not need all the water). Season lightly with salt and pepper. Serve.

8 ounces gluten-free pasta (notta pasta linguini)
2 tablespoons butter
2 shallots or 1 small onion, minced
1 pinch red pepper flakes, crushed (optional)
2 large garlic cloves, minced
2 flat fillets anchovies
6 ounces smoked salmon, diced
1 1/2 cups heavy cream
1/2 teaspoon dried tarragon
salt & pepper, to taste
1/4 cup grated parmesan cheese
parsley

Steps:

  • Put a large pot of salted water on to boil.
  • In skillet over medium high heat, melt the butter.
  • Add onions, red pepper flakes (if using), garlic and anchovies.
  • Saute for 1 to 2 minutes, breaking up anchovies with back of a spoon.
  • Add the smoked salmon and saute for 2 minutes.
  • Add the cream, tarragon, salt and pepper. Be careful not to over-salt, as the smoked salmon is quite salty by itself.
  • Simmer for 2 minutes.
  • Reduce heat.
  • Puree just 1/2 of the sauce in a blender or food processor, being careful of hot splatter.
  • Return to skillet with the rest of sauce.
  • Meanwhile, the water has come to a boil.
  • Add Notta Pasta.
  • Boil 4 minutes, stirring occasionally, until tender but still firm (al dente).
  • Watch cooking time carefully and check for texture.
  • Drain and quickly rinse.
  • Add to the sauce and toss.
  • Serve with grated parmesan and garnish with chopped parsley.
  • Enjoy!

200 ml white wine
200 ml double cream
1/2 grated lemon, zest of

500 g pasta (eg. fettuccine, linquini, tagliatelle)

4 teaspoons salmon roe (optional)
