CREAMY SAUSAGE & ROCKET LINGUINE

Steps:
- Squeeze the sausagemeat out of the skins, breaking into grape-size chunks. Heat the oil in a frying pan. Fry the chunks for about 8 mins until crisp and golden.
- Meanwhile, cook the pasta and chop most of the rocket. Add the chilli to the sausages, fry for 30 secs, then tip in the cream and chopped rocket. Season and heat until the rocket has just wilted.
- Drain the pasta, reserving some of the cooking liquid, then mix the pasta through the sauce with a splash of cooking water. Top with remaining rocket

- Cook the pasta following pack instructions. Meanwhile, squeeze the meat out of the sausage skins. Heat a frying pan over a high heat and brown the sausagemeat, breaking it up with a wooden spoon while it cooks. Once browned, push to the side of the pan.
- Add the garlic, chilli and fennel seeds to the empty part of the pan and cook for 45 secs until fragrant. Stir in the sausagemeat, season and add the cream, mustard and Parmesan. Keep on a low heat until the pasta is cooked.
- Drain the pasta, reserving a few tbsps of the water, then tip it back into the pan. Add the sausage sauce and mix, adding some of the pasta water if it needs it. Add the rocket, turn off the heat and spoon into bowls. Serve with extra Parmesan.

- Heat the olive oil in a heavy-based pan (preferably not non-stick) and add the sausages. Fry for about 8 mins until golden and cooked through. Tip in the garlic and fry for 1 min. Pour in the white wine and boil until it has reduced by half.
- Stir in the tomato purée and tomatoes, and season to taste. Simmer for 15 mins until the sauce is rich and thick.
- While the sauce cooks, boil the pasta according to pack instructions and drain. Stir in the basil if using, and cooked pasta into the sauce, then serve in bowls with grated or shaved Parmesan.

WILD ROCKET AND CHILLI SPAGHETTI

- Cook the spaghetti in boiling salted water according to the packet instructions. Prepare your sauce by gently heating a little olive oil then add the garlic, chilli, and anchovies. Add the wild rocket, toss and add the lemon zest. Remove from the heat and add the lemon juice.
- Drain the spaghetti then toss it with the sauce, taste and season if needed. Place on a plate and pile the extra handful of wild rocket on top with a good sprinkling of grated Parmesan.
FARRO PASTA WITH NETTLES AND SAUSAGE

- Fill a large pot with water for pasta and bring it to a boil.
- In a wide, deep skillet, heat the olive oil over a medium-high burner. Add the onion and a little salt, and let the onion begin to soften. Add the sausage meat, breaking it into rough pieces with a wooden spoon, and cook, stirring frequently, until the onions are lightly browned and the sausage is done, about 5 to 6 minutes. Add the garlic and tomato paste and stir well to coat. Turn off the heat.
- Salt the pasta water and begin cooking the pasta. When the pasta is nearly ready, reheat the onion and sausage mixture over a high burner. Add the nettles or greens to the pan along with 1/4 cup pasta water and stir until wilted and tender, about 2 minutes. Check the seasoning.
- Drain the pasta when al dente and mix with the skillet ingredients in a large warmed bowl. Serve with coarsely grated ricotta salata.
PASTA WITH SAUSAGE MEAT AND WILTED ROCKET
This is a quick and easy mid-week meal that is sure to please the taste buds! You can use any type of pasta with this - penne makes a good alternative also i find that for the sausages Cumberland work well if you can get them! Use what ever suits your own taste!

Steps:
- Bring a large saucepan of salted water to the boil.
- While the water is heating, remove the sausage meat from its skin and heat the oil in a frying pan over a medium heat.
- Add the sausage meat and garlic and cook, stirring occasionally, for 5 minutes.
- Break up any lumps with a fork.
- Add the chopped tomatoes and bring to a simmer then reduce the heat a little and simmer gently for 15 minutes.
- Season to taste with salt and freshly ground black pepper - keep the sauce warm until ready to use.
- Add the pasta to the boiling water and cook for 8-10 minutes or until al dente, drain the pasta and return to saucepan.
- Pour over the sauce and stir in the rocket.
- Divide the mixture between plates and serve with Parmesan.
