1 pound Italian sausage links
½ pound lean ground beef
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped
1 (16 ounce) can canned tomatoes
1 (15 ounce) can canned tomato sauce
1 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf

Steps:

  • Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
  • In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
  • Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

Pasta and sausage are a combination that usually suggests a dense, heavy tomato sauce. But it can also mean the very opposite. Sausage, used in small amounts, can contribute to a relatively light, almost delicate pasta sauce. In fact, sausage is a gift to the minimalist cook: it comes already seasoned, and its seasoning can be used to flavor whatever goes with it. The technique is simple. It's easiest to start with bulk sausage, or patties, because then there's no need to remove the meat from a casing. (Though that is easy to do: Just slit the casing with a sharp knife and peel it off.) You crumble the sausage into a little melted butter, which adds smoothness to the final sauce (omit it if you prefer), add water or other liquid and finish with grated Parmesan.

1/2 pound sweet or hot Italian sausage (if using link sausage, remove it from the casing)
1/2 cup water, white wine or red wine
1/2 pound cut pasta like ziti
1/2 cup or more freshly grated Parmesan

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Put the butter in a medium skillet over medium-low heat. As it melts, crumble the sausage meat into it, making the bits quite small, 1/2 inch or less. Add the liquid, and adjust the heat so that the mixture simmers gently.
  • Cook the pasta until it is tender but not at all mushy. Reserve about 1/2 cup of the pasta cooking water.
  • Drain the pasta, and dress with the sauce, adding a little of the reserved cooking liquid if necessary. Toss with salt, pepper and Parmesan, and serve.

1 tablespoon olive oil
3 hot italian sausages
3 sweet italian sausages
1 red bell pepper, large, diced
1 green bell pepper, large, diced
1 yellow bell pepper, large, diced
½ white onion, sliced
2 cloves garlic, sliced
28 oz diced tomato
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black ground pepper

Steps:

  • Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
  • Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
  • In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
  • Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
  • Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
  • Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
  • Simmer about 10 minutes.
  • Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente.
  • Serve with grated parmesan.

2 tablespoons extra-virgin olive oil, plus more for the baking dish
Kosher salt
1 pound rigatoni
1 pound sweet Italian sausage, removed from the casings
1 medium onion, sliced
1 medium bulb fennel, trimmed, cored and sliced
3 cloves garlic, chopped
1/4 teaspoon red pepper flakes
1 28-ounce can whole tomatoes, crushed by hand
1/2 cup heavy cream
1/2 cup fresh basil leaves, coarsely chopped
2 cups shredded mozzarella cheese (8 ounces)
1/2 cup grated parmesan cheese (1 ounce)

Steps:

  • Preheat the oven to 425 degrees F. Brush a shallow 3-quart baking dish with olive oil. Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente; you still want it to retain a little bite. Reserve 1/2 cup pasta water. Drain well.
  • Meanwhile, in a large Dutch oven over medium-high heat, add the olive oil. When the oil is hot, add the sausage and cook and crumble with a wooden spoon until no longer pink, about 4 minutes. Add the onion and fennel; cook until softened, about 10 minutes. Add the garlic and red pepper flakes and cook until the garlic is fragrant, about 1 minute. Add the tomatoes and season with salt. Bring to a simmer and add the cream. If the sauce is too thick, add a little water from the pasta. Turn up the heat to medium high and simmer rapidly to thicken the sauce and blend the flavors, about 10 minutes.
  • Add the rigatoni and basil and toss to coat the pasta with the sauce. Remove from the heat and stir in half each of the mozzarella and parmesan. Transfer the mixture to the prepared baking dish and sprinkle with the remaining mozzarella and parmesan. Bake until browned and bubbly, 15 to 20 minutes. Let sit 10 minutes before serving.

3 tablespoons vodka
2 tablespoons heavy cream

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
  • Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
  • Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.

Inspired by my Dad's somewhat tamer spaghetti sauce, this is my spiced up twist on an old classic. It is easy to make, SMELLS great and makes enough for dinner plus 2 frozen dinners for two (for those nights you just don't have time to cook from scratch). This sauce comes out THICK and CHUNKY, so adjust if you like a thinner sauce. I also make this a day in advance of when I want to eat it as I like the flavor after it has been refrigerated over night and then reheated.

1 (1 1/2-2 lb) package hot Italian sausage, fresh (5-6 links)
1 (24 -28 ounce) jar of your favorite pre-made spaghetti sauce, no meat
1 (28 ounce) can tomatoes, crushed fire roasted (in organic isle, I like Muir Glen brand)
4 -5 garlic cloves, diced
1 large yellow onion, chopped
1 yellow bell pepper, seeded, chopped
5 -6 tablespoons dried Italian seasoning
salt, taste
pepper, taste
1 teaspoon sugar
1 teaspoon smoked paprika
2 bay leaves
2 -3 tablespoons olive oil

Steps:

  • Preheat oven to 500 degrees, line baking sheet or glass casserole with foil for easy clean up.
  • Chop onion, pepper and garlic while oven is preheating.
  • Put whole sausages on foil lined pan/casserole, bake 20- 30 minutes or until golden brown and expelling some juices, remove and let cool slightly.
  • While sausage is cooking, in a pan large enough for all ingredients, over medium heat, saute onions and peppers in olive oil 5-7 minutes until onions are almost translucent, add garlic and saute for 2 more minutes (DO NOT allow garlic to get brown or it will be bitter), reduce heat to simmer.
  • To pan of onions/peppers/garlic add jar of pre-made sauce (fill empty jar with a splash of water or beer :) , close lid, shake to rinse, open and add to sauce), fire roasted tomatoes, bay leaves, italian seasoning, sugar, and smoked paprika.
  • Slice sausage into bite sized pieces on a steep angle, add to sauce. Simmer 30 minutes, stirring occasionally. Add salt and pepper to your taste during the last 30 minutes.
  • Serve over your favorite pasta with some grated cheese.
  • ENJOY!

6 hot or sweet Italian sausages
1/4 cup best-quality olive oil
3/4 cup chopped onion
1 1/2 cups dry white wine
2 cans (28 ounces each) imported San Marzano Italian plum tomatoes, hand crushed
Salt, to taste
6 fresh basil leaves, torn
1 pinch dried oregano
freshly ground black pepper, to taste
1 pound pappardelle pasta
2 tablespoons freshly grated Pecorino Romano cheese, plus more to taste, if desired

Steps:

  • Remove casings from sausages, break meat up into chunks, and set aside.
  • Heat oil in a large skillet over medium-high heat. Add onion, and cook until just translucent, about 3 minutes. Stir in the reserved sausage meat, and cook until lightly browned, about 5 minutes. Drain off excess fat
  • Add wine, and stir to combine. Raise heat, and bring to a boil. Boil until liquid has reduced slightly, about 3 minutes.
  • Add tomatoes and salt. Return to a boil, then lower heat and simmer, uncovered, until sauce has thickened slightly, about 20 minutes. Stir in basil, oregano, and pepper; add additional salt and pepper.
  • While sauce is simmering, cook the pappardelle in a large, deep pot of rapidly boiling salted water until al dente (check package for exact cooking time). Drain.
  • Return drained pappardelle to the pot, and place over medium-high heat. Using a wooden spoon, stir in 1/2 cup of sausage sauce, and toss together for 1 minute. Remove from heat, and pour into a large serving platter or bowl. Spoon remaining sauce over the top. Sprinkle with 2 tablespoons of Pecorino Romano cheese. Top with additional cheese, if desired, and serve.

1 tablespoon olive oil
1/2 cup finely chopped onion
1 large garlic, minced
1 large red bell pepper, chopped (about 1 cup)
1 fennel bulb, sliced thin (about 2 cups)
1/3 cup dry white wine
1/2 cup chicken broth
1/4 cup heavy cream
1/2 pound rigatoni or other tubular pasta
1/4 cup minced fresh parsley leaves
freshly grated parmesan to taste

Steps:

  • In a heavy skillet cook the sausage over moderate heat, stirring and breaking up any lumps, until it is cooked through and transfer it with a slotted spoon to paper towels to drain. Add the oil to the skillet and in it cook the onion and the garlic over moderately low heat, stirring, until the onion is softened. Add the bell pepper and the fennel and cook the mixture over moderate heat, stirring occasionally, for 5 minutes, or until the bell pepper and fennel are softened. Add the wine and broth, bring the liquid to a boil, and simmer the mixture, covered, for 5 minutes. Add the cream and boil the mixture until it is thickened slightly and reduced by about one third. In a kettle of boiling salted water cook the rigatoni until it is al dente and drain it well. Stir into the fennel mixture the parsley, the sausage, and salt and pepper to taste and in a bowl toss the sauce with the rigatoni and the Parmesan.
