A spaghetti gorgonzola recipe that resonates of creamy gorgonzola cheese and contains earthy flavours from spinach. You can substitute spaghetti with any type of pasta.

250g (9 oz) young leaf spinach, trimmed
400g (14 oz) dried spaghetti
salt and pepper
30g (1 oz) butter
120g (4 oz) Gorgonzola cheese, diced
90ml (3fl oz) milk

Steps:

  • Add the spaghetti to a pot of boiling salted water and cook for 8-10 minutes or until al dente.
  • Meanwhile, put the spinach into a pan, with just the water clinging to the leaves after washing, and cook, stirring over a medium-high heat for 2-3 minutes until wilted.
  • Add the butter, milk and Gorgonzola to the spinach and stir until the cheese has melted to a creamy sauce. Season to taste with pepper; salt shouldn't be needed.
  • Drain the pasta thoroughly and add to the sauce. Toss well to mix.

1 box (375 g) bow-tie pasta
1 shallot, chopped
1 clove garlic, finely chopped
45 mL (3 tbsp) olive oil
¼ cup (50 ml) dry white wine
2 tsp (10 ml) lemon juice
2 cup (500 ml) 35% cream
½ cup (125 ml) Canadian blue cheese
2 plum (Roma) tomatoes, seeds removed and diced
8 cup (2 L) baby spinach
4 slices slices prosciutto, finely julienned
4 tsp (20 ml) finely diced red bell pepper
Salt and pepper

Steps:

  • Cook the pasta until al dente in a pot of salted boiling water. Drain and set aside.
  • In a saucepan, sauté the shallot and garlic in olive oil. Add salt and pepper. Deglaze with white wine and lemon juice. Allow to reduce almost entirely.
  • Add the cream and the Canadian Blue cheese. Mix. Add the tomatoes. Allow to reduce halfway.
  • Add the pasta and continue cooking long enough to reheat. Adjust the seasoning, if necessary.
  • Arrange the spinach on four plates and distribute the pasta.
  • Garnish with prosciutto and pepper. Serve immediately.

good knob of butter
1 tbsp olive oil
2 large leeks , total weight about 450g/1lb, thinly sliced
500g packets penne rigate or your favourite pasta shape
200ml tub crème fraîche
1 tbsp wholegrain mustard
125g packet Danish blue cheese , roughly diced
8 sundried tomatoes in oil, drained and thinly sliced
225g bag baby spinach leaves

Steps:

  • Melt the butter with the oil in a large pan, tip in the leeks and splash in a little hot water. Cover and cook over a low heat, stirring occasionally, for about 10 minutes until no longer squeaky.
  • While the leeks are cooking, boil the penne in salted water according to the packet instructions. Meanwhile, tip the crème fraîche, sundried tomatoes and mustard into the leeks, add three-quarters of the cheese and season well. Stir until the cheese melts. Take off the heat.
  • Drain the pasta, reserving the cooking water. Tip the pasta into the sauce and stir, adding enough cooking water to make the sauce coat the pasta. Stir in the spinach, a big handful at a time, until it wilts, splashing in a little more water if needed. Toss in the remaining cheese and serve.

400g penne pasta
25g butter
1 onion , thinly sliced
1 garlic clove , crushed
1 tbsp fresh chopped sage , or 1 tsp dried
100g stilton , cubed
handful toasted walnuts , chopped

Steps:

  • Boil the pasta according to pack instructions. In a saucepan, melt the butter, then gently fry the onion until golden. Add the garlic and sage, fry for a further 2 mins, then remove the pan from the heat. Drain the pasta and reserve some cooking water. Stir through the buttery onions, stilton and 2 tbsp cooking water, then sprinkle with the toasted walnuts to serve.

2 cups half-and-half
4 tablespoons butter
1 head garlic, chopped
1 small onion, chopped
1/3-1/2 cup crumbled blue cheese
1/3-1/2 cup parmesan cheese
salt and pepper
1 lb pasta (I use penne)

Steps:

  • While the pasta is boiling: Melt butter in sauce pan over med-low.
  • Add onion and garlic saute about 5 minutes.
  • Pour in half& half, let heat through.
  • Wisk in blue and parmesan cheeses.
  • Salt and pepper to taste.
  • Sauce will thicken a bit upon standing.
  • Toss with cooked pasta.

1 pound spinach
1 pound spaghetti, linguine, or other pasta
2 tablespoons butter (preferred), or extra virgin olive oil
1/4 pound Roquefort, gorgonzola, or other good blue cheese, crumbled

Steps:

  • Set large pot of water to boil, and add salt. Remove largest, thickest stems from spinach; roughly chop leaves and remaining stems. Wash thoroughly.
  • When water comes to boil, add pasta and cook, stirring occasionally, until nearly tender. When just about done, add spinach. Stir. As soon as spinach wilts completely -- less than 30 seconds -- drain quickly.
  • Immediately return pasta and spinach to pot, with butter and cheese, over low heat. Cook, stirring occasionally, until cheese and butter melt, all water is absorbed, and pasta is tender. Add salt and pepper to taste and serve immediately.

3 tablespoons butter
3 tablespoons flour
1 cup milk
1 pound orzo, cooked and cooled
3 cups crumbled blue cheese
1 tablespoon salt and white pepper blend
2 cups fresh spinach
1 cup diced tomato

Steps:

  • In a saucepan over medium-high heat, add the butter to melt. Once the butter has melted, reduce the heat, add the flour and stir to create a roux; the roux should be pale blond in color. Once the roux is made, reduce the heat again to low, add the milk, stirring into the roux and cooking until the roux has thickened. Finally, add the blue cheese, 1 cup at a time, until all the cheese has been added and well blended. Season with the salt and pepper blend. Remove from the heat and continue to stir to ensure consistency.
  • Once the sauce has been prepared, add the orzo, spinach and tomatoes and stir to incorporate into the cream sauce. Allow the orzo to warm with the sauce, then remove from the heat and serve. This has a shelf life of 5 days.

1 shallot
2 cloves garlic
400 g deep freeze spinach, defrosted
100 ml cream
black pepper
8 pitted black olives
175 g blue cheese

  • Chop the shallots, garlic and olives.
  • Cook the pasta.
  • While heating water for the pasta, heat 3 tbsp of oil in a skillet and sauté the shallots and garlic circa 3 mins.
  • Add the spinach and heat it slowly.
  • Add the cream.
  • Add salt and pepper to taste.
  • Drain the pasta thoroughly and add pasta and olives to spinach mixture.
  • Crumble the cheese over the pasta; stir.
  • Drizzle rest of oil over pasta and add a generous amount of freshly ground pepper.
