PORTOBELLO CREAM SAUCE WITH WHOLE-WHEAT LINGUINI



Portobello Cream Sauce with Whole-Wheat Linguini image

1 tablespoon extra-virgin olive oil
2 tablespoons butter
4 large portobello mushroom caps, wiped clean and gills scraped, thinly sliced
1 teaspoon ground thyme
1 large shallot, finely chopped
2 cloves garlic, sliced
Salt and freshly ground black pepper
1/3 cup port or Marsala, your choice of flavoring
1/2 cup chicken stock-in-a-box
1 1/2 cups heavy cream
A few grates nutmeg
1 pound whole-wheat linguini
1 cup walnut pieces
Freshly grated Parmigiano-Reggiano
1 large bunch watercress or upland cress

Steps:

  • In a medium saucepan, heat the extra-virgin olive oil, a turn of the pan, and butter over medium to medium-high heat. Add the mushrooms and brown for 10 minutes. Stir in the thyme, shallots and garlic. Season with salt and pepper, to taste, and cook for 2 to 3 minutes more. Stir in the port or Marsala, the stock and the cream. Season the sauce with a little nutmeg, then reduce the heat and simmer until it is just thick enough to coat the back of a spoon. Cool completely and store in the refrigerator for a make-ahead meal. Reheat the sauce, covered, over medium heat until it bubbles, then reduce heat to low.
  • Bring a large pot of water to a boil over medium heat. Salt the water and add the pasta. Cook until al dente and then drain. Add the pasta to a large serving bowl.
  • Toast the nuts in small pan over low heat until fragrant. Add the warm sauce to the pasta and serve with cheese, nuts and chopped watercress on top.

Penne Portabella (Copycat of Pasta Pomodoro's Dish) image

I saw one of the owners of Pasta Pomodoro make this on a local tv show. The measurements are approximate as he only demonstrated the ingredients used, no measurements. But this dish is easy and pretty hard to mess up. Mine tasted just as good as the one from the restaurant (I just tried this dish about a couple of weeks ago). A couple of pointers to make it tasty: Be sure to salt your water for pasta, this gives your pasta some flavor. After adding the pasta to the sauce, cook it for a minute of two so the pasta soaks up the sauce. After this step, you can taste and adjust flavor, adding parmesan cheese to give it more flavor (optional). Note: I actually didn't use the entire package of porchini mushrooms, only a little more than 1/2 of the package because it's expensive, also I used baby spinach instead of arugula because my kids do not appreciate the "bite" of the arugula.

1 large portabella mushroom, sliced
1 tablespoon extra virgin olive oil
1 lb mild Italian sausage
1/4 cup dry white wine
1/3 cup cream
3 garlic cloves, thinly sliced
1 lb cooked penne or 1 lb bow tie pasta
3/4 ounce porcini mushroom, dried
1/2 cup hot water, only as needed (or more)
1 1/2 cups baby arugula leaves or 1 1/2 cups baby spinach leaves
2 -3 tablespoons parmesan cheese, shredded (optional)
salt and pepper (optional)

Steps:

  • Soak the dried porchini mushrooms in the hot water (about 10 minutes), then squeeze the liquid out of the mushrooms and chop it up. Be sure to reserve the tasty soaking water for the sauce!
  • Prepare the sausage according to package directions (cooked throughly and browned), drain.
  • Cook the pasta according to package directions as well, however, minus one to two minutes to finsh "cooking" in the sauce. Meanwhile start the sauce:.
  • Heat up a large pan (large enough to fit the pasta in), add a tablespoon of extra virgin olive oil, sautee garlic just until fragrant, add in cooked sausage, portobello mushrooms and porchini mushrooms, and (first add 1/4 cup) of the reserved porchini soaking water as well as the wine. Let this cook for a few minutes. If the portobello mushroom is still dry, add more of the reserved soaking water (add all if possible), cook until the portobello is browned and tender.
  • Add cream and heat through, stirring to incorporate the flavors together. Next add the cooked pasta and arugula or spinach leaves, cook for a minute or two to let the pasta soak up the sauce and wilt the arugula or spinach.
  • Taste and adjust seasoning, adding parmesan cheese then salt and pepper if desired.

1 (12 ounce) package fettuccine
8 ounces already sliced portabella mushroom caps
1/2 cup butter
3 garlic cloves, minced
1 cup shredded parmesan cheese
1 teaspoon fresh coarse ground black pepper
1/2 teaspoon salt
2 tablespoons chopped fresh flat-leaf Italian parsley (or substitute w or Italian seasoning)
flat-leaf Italian parsley (to garnish)
1 cup whipping cream
1 cup milk

Steps:

  • Prepare pasta according to package directions, drain.
  • Remove brown gills from mushrooms and discard. Chop mushrooms.
  • Melt butter in a large saucepan over medium heat add mushrooms and garlic, and saute 5 to 6 minutes or until tender. Stir in cream and milk. Bring to a boil over medium-high heat; reduce heat, and simmer, whisking constantly, 10 minutes. Stir in cheese, pepper, and salt; stir constantly until cheese melts and mixture thickens. Stir in 2 tablesspoons parsley. Serve over hot cooked pasta.

1 (8 ounce) package uncooked penne pasta
2 tablespoons vegetable oil
½ pound portobello mushrooms, thinly sliced
½ cup margarine
¼ cup all-purpose flour
1 large clove garlic, minced
½ teaspoon dried basil
2 cups milk
2 cups shredded mozzarella cheese
1 (10 ounce) package frozen chopped spinach, thawed
¼ cup soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the oil in a saucepan over medium heat. Stir in the mushrooms, cook 1 minute, and set aside. Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mix in milk until thickened. Stir in 1 cup cheese until melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the prepared baking dish, and top with remaining cheese.
  • Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

3 tablespoons extra-virgin olive oil, plus extra for greasing the grill pan
4 -6 large portabella mushrooms (or you can use more smaller ones or even sliced)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 teaspoon italian seasoning
1/4-1/2 teaspoon red pepper flakes (optional if you like a little heat and zing)
1 cup marinara sauce (store bought or homemade)
4 garlic cloves, minced (optional)
1/2 cup shredded mozzarella cheese (or you could also use Fontina, Monterey Jack, even goat cheese)
1/4 cup grated parmesan cheese
2 tablespoons butter, cut into small pieces

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • Drizzle 3 tablespoons of olive oil over both sides of the mushrooms, coating well. Sprinkle the mushrooms with Italian seasoning, red pepper flakes if using, and salt and pepper.
  • Drizzle olive oil on the grill to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5-8 minutes per side.
  • Preheat the oven to 400 degrees F.
  • Chop the garlic cloves into very small pieces(mince), if using, and add to marinara sauce.
  • Spread 1/2 cup of the marinara sauce on the bottom of a 9 by 13-inch baking dish. Place the grilled mushrooms on top of the marinara sauce and top with the remaining marinara sauce. Sprinkle with the cheeses and top with the butter pieces. Bake until the cheese melts and the top is golden, about 15 minutes. Serve. Enjoy.

8 ounces bow tie pasta, cooked and drained (1/2 box)
2 tablespoons olive oil
1 tablespoon garlic, chopped
1/2 medium onion, chopped
1/2 teaspoon basil, prepared (from jar)
1/2 teaspoon oregano, prepared (from jar)
4 tablespoons butter
2 large portabella mushrooms, chopped
1/4 cup dry vermouth
1/2 cup heavy cream (or more if desired, can use up to 1 cup)
salt & pepper
1/2 cup parmesan cheese, grated

Steps:

  • Cook pasta per directions on box (al dente).
  • heat olive oil in skillet.
  • add garlic and onion and saute for 5 minutes (until light brown).
  • Add chopped mushrooms, basil, oregano, salt & pepper.
  • add butter and saute until mushrooms are almost tender.
  • add vermouth and saute for 2-5 minutes or until liquid is almost completely absorbed.
  • Add cream and cook until slightly thickened.
  • when pasta is done drain and mix with pasta over low heat until coated.

1/2-1 lb lean hamburger
1 Spanish onion, chopped medium (optional)
2 -3 cloves crushed garlic (optional)
1 (28 ounce) can whole tomatoes, with juice,cut tomatoes in half or 1 (28 ounce) can stewed tomatoes
1 (10 3/4 ounce) can Campbell's cheddar cheese soup (Grandma & Mom used real grated cheese)
2 -4 cups grated cheddar cheese, or slices to cover top of casserole
salt and pepper

Steps:

  • This recipe can be made vegetarian, leave out the hamburger and add 2 cups of fresh mixed vegetables,i.e. broccoli, mushrooms,spinach, carrots, etc.
  • Cook elbow macaroni "Al dente",according to instructions on box,drain, add to large casserole.
  • Scramble fry hamburger with spanish onion and garlic, if using,until no longer pink, drain any fat through colander, add drained mixture to casserole.
  • Add cheese soup, no water, to casserole.
  • Add tomatoes to casserole.
  • Add salt and pepper to taste.
  • Mix thoroughly, in casserole, to evenly distribute ingredients.

3 garlic cloves, minced
red pepper flakes (to taste or a couple of pinches)

  • Bring salted water to a boil in a deep pasta pan.
  • Cook the pasta al dente; when you drain the pasta, cold-shock it with running water to stop the cooking process.
  • While the pasta is cooking, heat a large skillet over med-high heat.
  • Add in oil, garlic, and crushed red pepper.
  • As soon as the garlic speaks by beginning to sizzle in the oil, dump in the portobello slices.
  • Coat them with the oil with a good shake or two of the pan (or stir).
  • Sprinkle them with a little salt.
  • Cover the pan with a lid or foil and lower heat to med-low; let the mushrooms cook for 10 minutes or until deep brown and soft.
  • There should be a good amount of mushroom gravy in the bottom of the pan.
  • Add in the can of tomatoes and parsley; heat through and give the pan a good shake (or stir).
  • The sauce will be a nice reddish brown and will have a beefy taste; combine with the pasta and dump on a platter.
  • Serve with shaved or grated Parmigiano or Asiago cheese, bread, and a green salad.
