12 ounces short pasta (rotini, penne, farfalle)
2 (5-ounces) canned solid white tuna (in water)
1/2 cup diced onions
1 pint grape tomatoes, halved
1/2 cup Kalamata olives, pitted
1 cup diced cucumber
3 tablespoons capers, drained
3 tablespoons freshly squeezed lemon juice
1/4 cup olive oil
2 tablespoons plain yogurt
1/2 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1 teaspoon sea salt
1/4 teaspoon ground black pepper
1 tablespoon chopped parsley

Steps:

  • Whisk together the vinaigrette ingredients.
  • Cook the pasta according to package directions until al dente. Rinse in cold water.
  • Combine all the ingredients in a large bowl. Add the vinaigrette and toss well to combine. Serve (See Note)

Hands-down this is The Best Tuna Pasta Salad I've ever had! It's a cold pasta salad with Mediterranean flavors and features whole chunk light tuna (packed in water), peas, celery, green onions, tomatoes, kalamata olives, pepperoncini and parsley.

2-1/2 tablespoons red wine vinegar
1-1/2 tablespoons dried oregano
1 teaspoon dried basil
1 tablespoon fresh lemon juice, plus more to taste
2 garlic cloves, minced
2 tablespoons Parmesan cheese (optional)
1/4 teaspoon freshly ground black pepper, plus more to taste
1-1/2 cups good extra-virgin olive oil
4 cups gluten-free rigatoni noodles (cooked al dente)
2 (5 ounce) cans whole chunk tuna (packed in water )
3/4 cup frozen peas
1/2 cup celery, chopped
4 green onions, finely sliced (white and light green parts only)
2 medium tomatoes, chopped
1 cup kalamata olives, sliced
1/4 cup pepperoncini, sliced
1/4 cup fresh flat leaf parsley, coarsely chopped
3/4 cup Best Foods Mayonnaise (add more as needed)
5 tablespoons Italian Vinaigrette (use your favorite bottled brand or try my recipe for Italian Vinaigrette)

Steps:

  • In a large pot of salted boiling water, cook pasta according to the package directions or until al dente, rinse under cold water and drain.
  • Place the peas in a colander and pour boiling water over them. Drain and set aside to cool.
  • In a small bowl whisk the mayonnaise and Italian Vinaigrette until well blended. (If you don't have bottled Italian dressing and don't want to make a large batch of fresh dressing, you can whisk the mayonnaise with 3 tablespoons extra-virgin olive oil, 2 tablespoons lemon juice, 1 teaspoon dried oregano and 1/4 teaspoon dried basil)
  • Place the tuna in a large bowl. With a fork, break up the tuna.
  • Add the pasta, celery, green onion, and peas. Pour the mayonnaise dressing over the ingredients and gently toss to coat the ingredients well. Mound on a platter and top with the chopped tomatoes, kalamata olives, parsley and pepperoncini.
  • Toss all ingredients together just before serving so the tomatoes won't get soggy.
  • Combine the vinegar, oregano, lemon juice, garlic, Parmesan cheese, and pepper in a medium bowl and whisk to combine the ingredients.
  • Set aside for 5 minutes to marinate the oregano and basil.
  • Add the olive oil in a slow thin stream, whisking constantly to combine.
  • If you're in a hurry, just add all of the ingredients to a glass jar with a lid and shake to combine.

1 large shallot, thinly sliced

Steps:

  • Add tuna and its oil, olives or capers, if using. Add herbs and zest. Add olive oil, salt and pepper to taste and stir gently, flaking tuna into pieces. Cover and set aside at least 1 hour or up to 3 hours, stirring occasionally.
  • Cook pasta in plenty of boiling salted water. Drain very well. Combine tomatoes and pasta well, then taste and add more oil, salt and pepper to taste. Add red pepper flakes if desired. Sprinkle with pine nuts, if using, and chopped herbs. Serve immediately.

1 onion, chopped
2 garlic cloves, finely chopped
400g can chopped tomatoes with herbs
½ tsp chilli powder
1 tsp sugar
500g pkt pasta bows
100g can tuna, drained
handful of basil leaves, optional

Steps:

  • Heat the oil in a pan, throw in the onion and cook for a couple of minutes. Stir in the garlic, tomatoes, chilli and sugar. Season with salt and pepper and bring to the boil. Give it a good stir, then reduce the heat and simmer for 5 minutes.
  • Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions. Flake the tuna into the sauce and heat through. Drain the pasta, return to the pan and stir in the sauce and basil leaves if you have any. Serve with a generous grinding of pepper.

For the Dressing:

  • Gather the ingredients.

This Pasta Salad with Tuna is the classic pasta salad I grew up with, and it remains my favorite summer salad --- it sounds simple, but the combination of flavors is addictive, and once you start eating this, you won't be able to stop!

2 cups pasta curls or elbows
1 small can of your favorite tuna
1/2 medium red onion (minced)
6 scallions (thinly sliced)
1/2 large bell pepper or several colorful minis (cut in small dice)
1 to mato (cut in small dice)
Several large spoonfuls of mayonnaise
2 Tbsp fresh dill (or you can use 1 tsp dried)
1 tsp celery seed
fresh thyme leaves
salt and fresh cracked black pepper
a squeeze of lemon
2 or 3 hard boiled eggs (cut in wedges)

Steps:

  • Cook the past in plenty of salted water until just al dente. Drain and rinse in cold water. Dry on a clean towel.
  • Mix the first 6 ingredients together with the mayo. Measure in enough mayo to make the salad moist but not overwhelmed. Add the herbs, celery seed, salt and pepper to taste. Add the dash of lemon juice and then refrigerate the salad for at least a few hours.
  • When ready to serve, give the salad another toss, taste to see if you need more seasoning, or more mayo, (it will probably need something) and garnish with the sliced eggs

  • Cook pasta in large pot of rapidly boiling water until al dente or done to your liking.
  • Meanwhile, prepare the sauce. Place olive oil and the garlic in a large saute pan and turn heat to medium. Cook until the garlic is fragrant and lightly golden. Add capers, anchovies, olives, and tomatoes. Cook until the tomatoes start to break down and become a sauce, about 8 minutes. Toss with cooked pasta. Add parsley and tuna and season, to taste, with salt and pepper. Serve immediately.

the kernels of 2 cooked ears corn (2 cups)

3 green onions, chopped
3 tablespoons olive oil
1 lime, juice of

2 fresh tuna steaks, about 175g/6oz each
1 tbsp olive oil
1 tbsp lemon juice
1 large garlic clove , crushed
1 tbsp chopped rosemary leaves
410g can cannellini bean , drained and rinsed
8 cherry tomatoes , quartered
½ small red onion , thinly sliced
50g bag rocket
2 tbsp extra-virgin olive oil
1 tbsp lemon juice
1 tsp wholegrain mustard
1 tsp clear honey

Steps:

  • Put the tuna in a shallow dish, drizzle over the oil and lemon juice, scatter over the garlic and rosemary. Turn the tuna so it's well coated. Cover and put in the fridge for 30 minutes (you can leave it for longer if convenient).
  • Tip the beans into a large bowl. Toss in the tomatoes, onion and rocket. Put the oil, lemon juice, mustard, honey and salt and pepper in a screw top jar. Seal and put aside.
  • Heat a cast iron ridged grill pan or frying pan until very hot. Cook the tuna on a moderately high heat for 2 minutes each side - don't overcook or it will be dry.
  • Shake the dressing. Pour over the salad. Mix. Serve the salad with the tuna on top.

I have been making this light, tangy pasta salad ever since I was at the University of Wyoming in the late 1980s. Made with pantry ingredients, it's quick and easy. A nice lunch or summertime dinner with fresh fruit or hearty bread. Sometimes I add halved cherry or grape tomatoes for a little sweetness. Leftovers are just as good! (Prep time does not include cooking time for pasta.)

  • Bring a large pot of water to a boil along with 1 tablespoon kosher salt. Cook the pasta according to the package directions. Drain, but do not rinse the pasta.
