Since we grow and harvest our own spinach, we use it in lots of dishes. One of our favorite ways to enjoy it is in this pasta salad.-Ruby Pyles, Myersville, Maryland

4 cups torn fresh spinach
4 cups cooked spiral pasta
4 cups cubed cooked chicken
2-1/2 cups sliced celery
2 cups green grapes, halved
1 cup fresh snow peas
1 medium tomato, chopped
3 green onions, sliced
DRESSING:
1/2 cup vegetable oil
1/4 cup sugar
2 tablespoons vinegar
2 tablespoons minced fresh parsley
1 teaspoon salt
1 teaspoon lemon juice
1/2 teaspoon finely chopped onion

Steps:

  • In a large bowl, combine the first eight ingredients. In a small bowl, whisk together dressing ingredients; pour over salad and toss to coat. Serve immediately.

6 ounce dried multigrain penne pasta
Nonstick cooking spray
8 ounce skinless, boneless chicken breast halves, cut into 1-inch pieces
1 cup sliced fresh mushrooms
0.25 cup chopped onion
1 clove garlic, minced
3 tablespoon olive oil
3 tablespoon balsamic vinegar
3 tablespoon snipped fresh basil or 2 teaspoons dried basil, crushed
0.25 teaspoon salt
0.125 teaspoon ground black pepper
1 6 ounce package fresh baby spinach or spinach
1 cup seeded and chopped roma tomatoes (3 medium)
0.25 cup shredded Parmesan cheese (1 ounce)

Steps:

  • Cook pasta according to package directions; drain. Rinse with cold water; drain again. Meanwhile, coat a large nonstick skillet with cooking spray; heat skillet over medium heat. Add chicken, mushrooms, onion, and garlic; cook for 8 to 10 minutes or until chicken is no longer pink and vegetables are tender, stirring occasionally. Cool slightly.
  • In an extra-large bowl combine cooked pasta and chicken mixture. For vinaigrette, in a small screw-top jar combine oil, vinegar, basil, salt, and pepper. Cover and shake well.
  • Pour vinaigrette over pasta mixture; toss gently to coat. Add spinach, tomatoes, and cheese; toss gently to combine.

1/2 cup hummus
3 tablespoons Italian salad dressing
1/4 teaspoon salt
1/8 teaspoon pepper

1 can (2-1/4 ounces) sliced ripe olives, drained
1/4 cup crumbled feta cheese

1/2 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil
1 tsp. zest and 1/4 cup juice from 1 lime
2 Tbsp. GREY POUPON Savory Honey Mustard
1 clove garlic, minced
1/8 tsp. ground black pepper
1 lb. boneless skinless chicken breasts, grilled, sliced
3 cups whole wheat rotini pasta, cooked
1 red bell pepper, chopped
1 pkg. (10 oz.) frozen chopped spinach, cooked
1 Tbsp. chopped fresh thyme

Steps:

  • Mix dressing, lime zest, juice, mustard, garlic and black pepper until blended.
  • Combine chicken, pasta, vegetables and thyme in large bowl. Add half the dressing mixture; mix lightly. Refrigerate 1 hour.
  • Add remaining dressing mixture to chicken mixture just before serving; mix lightly.

This is a delicious and light Pasta Salad that my sister-in-law Denise makes at family gatherings. It is so easy to make and the kids like it too! If you can find "Girard's Light Champagne Salad Dressing" in your grocery, use this. Otherwise, a light Italian will substitute fine. (Fat frees are too sweet)!

1 (12 ounce) bag bow tie pasta
1 (8 ounce) box cherry tomatoes, grape tomtoes will do as well
4 cups Baby Spinach
1 cup green onion, chopped
4 ounces pine nuts
8 ounces feta cheese, crumbled
12 ounces light Italian dressing (Girard's Light Champagne Salad Dressing preferred)

Steps:

  • Boil the pasta till done (about 10 minutes) and cool.
  • Toss all the ingredients together, except baby spinach. Add about 1/2 the bottle of the dressing and refrigerate.
  • When you are ready to serve, add spinach and more dressing to your taste (about another 1/4 of the bottle).
  • Serve.

4 chicken breasts, i used Low Fat Italian Dressing Chicken
2 cups egg noodles
1 cup red onion, thinly sliced
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
4 mushrooms, sliced
1 roma tomato, diced
16 ounces artichoke hearts, drained
4 cups Baby Spinach
2 tablespoons parmesan cheese
1/4 cup olive oil
1/4 cup balsamic vinegar
2 teaspoons water
1 teaspoon basil
1 teaspoon parsley
1 teaspoon oregano
1 teaspoon sea salt
1 teaspoon sugar
1/2 teaspoon black pepper
2 teaspoons garlic, minced

Steps:

  • bbq the chicken according to the directions for Recipe #359053, slice.
  • cook the noodles in boiling water until done, drain and set aside.
  • mix the dressing ingredients and set aside (you can do this way in advance).
  • make sure to have the chicken, noodles & dressing done before you continue cuz it goes fast from here and you dont want the spinach to overcook and disintegrate.
  • heat 2 tbs olive oil in a large skillet, once hot cook the onions and bell peppers for 2 minutes.
  • add mushrooms and cook for 2 more minutes.
  • add dressing, tomatoes and artichokes and cook for 1 minute to heat through.
  • add spinach and cook for 1 minute stiring constantly.
  • throw in chicken and noodles and toss!
  • sprinkle with parmesan cheese and enjoy!

I needed to get some type of great tasting chow on the table to feed the family as they were about to start streaming in through the back door at any moment. A wonderful, simple treat of a dish to enjoy sitting down next to your dog or cat, and just letting this dish take you away from the worry and stress of the world.

2 tablespoons olive oil
24 ounces boneless skinless chicken breasts
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper (can use more or not at all)
1/4 teaspoon kosher salt

1 large red onion, thinly sliced
1 red bell pepper, thinly sliced
1 bunch fresh spinach (can use frozen)
1 cup penne pasta (cooked)

Steps:

  • Heat oven to 400°F.
  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat.
  • Rub the chicken with the cumin, cayenne, and salt. Toss in skillet and cook until browned, 3 to 4 minutes per side. Transfer to a baking sheet and roast until cooked through, 6 to 7 minutes.
  • While skillet is warmed add medium heat and add the remaining tablespoon of oil. Add the onion and bell pepper and cook, stirring, until soft, 5 minutes.
  • If frozen cook spinach in microwave till warmed. If fresh add spinach directly to the skillet along with salt and pepper to taste. Cook, tossing, until just tender, 2 to 3 minutes.
  • Add pasta in with vegetables warming them, and you can either toss the chicken in with this, or serve the chicken separately.
