This recipe is adapted from Step-by-step cookery series " Salads and Summer dishes" and is a mayo-free recipe that appeals to me as I try and eat a little healthier. Cooking time included chilling time. ZWT REGION: Italy.

175 g pasta shells (6 oz)
150 ml unsweetened apple juice (1/4 pint)
1 teaspoon of fresh mint, chopped
1 teaspoon white wine vinegar
salt (to taste)
pepper (to taste)
225 g cooked large shelled prawns (8 oz) or 225 g large shelled cooked shrimp (8 oz)
225 g crisp red apples (8 oz)
lettuce leaf
paprika (to garnish)

Steps:

  • Boil pasta for 10-15 minutes in salted water, until it is just cooked though ("al dente") Drain off the cooking water and rinse in cold running water.
  • Mix together apple juice, mint, vinegar, salt, pepper.
  • Dry the prawns in paper towels, peel, core and dice the apples and add them and the dressing to the cooked pasta. Mix well, cover tightly and refridgerate for 2 hours.
  • Wash lettuce leaves and slice finely, line the serving dish/dishes with lettuce and then spoon the salad mixture on top. Dust salad mixture with paprika.
  • Serve as a large main dish or as individual portions as prefered.

A really cool salad I made as a kid. Really easy and a great way to make salad fun! Recipe comes from "step by step easy cooking for boys and girls" - my first cook book!

4 eggs
2 large tomatoes
lettuce leaf
cucumber
2 tablespoons mayonnaise

Steps:

  • Boil eggs until hard boiled.
  • Place eggs in cold water and then shell.
  • Slice top and bottom from egg so it can stand up.
  • shred lettuce finely and put on plate.
  • Peel cucumer, slice finely and place on top of lettuce.
  • Stand the eggs on bed of lettuce and cucumber.
  • Place 1/2 tomato on top of each egg.
  • Dot mayonnaise on tomato halves to look like toadstools.
  • (toothpicks to hold the tomato and eggs together sometimes helps).

From *Taste of Mexico* by Elisabeth L. Oritz & per her intro, "Salads in Mexico are usually served w/the main course instead of green vegetables. Salads containing meat or seafood, however, are very satisfying & usually served as a separate course." I adapted this essentially make-ahead & assemble in minutes salad to suit our preferences w/options to add Old Bay Seasoning to the dressing & garnish w/avocado or lime wedges as desired. All ingredients are pre-cooked, but it seemed realistic to show that + ingredient prep time, so 20 min was allowed for prep & 5 min for assembly. *Enjoy* !

1/2 head iceberg lettuce (separated into leaves, or assorted lettuce leaves)
4 tablespoons mayonnaise
4 tablespoons sour cream
1 teaspoon Old Bay Seasoning (opt add to dressing)
12 ounces prawns (pre-cooked & chopped, may use frozen but well-drained prawns or baby shrimp)
1/2 cup green beans (pre-cooked & chopped)
1/2 cup carrot (pre-cooked & chopped)
1/2 cucumber (peeled, seeded & chopped)
2 eggs (hard-boiled & coarsely chopped)
1 jalepeno chili (pickled variety, seeded & finely minced)
salt (to taste)
1/2 avocado (sliced as opt garnish)
1/2 lime (cut in wedges as opt garnish)

Steps:

  • Line a lrg salad bowl, platter or individual serving dishes w/lettuce leaves. Mix the mayo, sour cream & opt Old Bay Seasoning (if desired) in a sml bowl & set aside.
  • In a separate bowl, combine choppped prawns, beans, carrot, cucumber, eggs & chili. Season w/salt to taste preferences.
  • Add the prepared dressing to the prawn mixture & fold it in gently to ensure all ingredients are well-mixed & coated w/the dressing. Pile the mixture into the bowl, onto the platter or divide equally among 4 individual serving dishes & serve immediately garnished w/opt avocado slices &/or lime wedges as desired.

A friend of mine showed me how to make this. It's incredibly EASY and you'll have so many people asking for the recipe! This is also a great pasta salad if you're looking for something without mayo. Add or delete vegetables as you desire!

1 (12 ounce) package rotini pasta
1 (12 ounce) package tri-color rotini pasta
6 roma (plum) tomatoes, chopped
1 cucumber, chopped
½ cup chopped purple onion
1 (16 ounce) bottle ranch dressing
1 (16 ounce) bottle Italian-style salad dressing

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the rotini and tri-color rotini at a boil until tender yet firm to the bite, about 8 minutes; drain. Rinse the pasta with cold water until cool; drain.
  • Combine pasta, tomatoes, cucumber, and purple onion in a large bowl.
  • Stir ranch dressing and Italian-style salad dressing together in a separate bowl; spread over the pasta mixture and stir to coat.
