TUSCAN VEGETARIAN PASTA

A rustic and simple pasta dish that is light on calories and the budget but packed full of wonderful flavors. Quick and easy to prepare, this makes a complete meal with a warm slice of crusty bread and a chardonnay.

8 ounces cremini mushrooms
1 cup broccoli floret
1 cup spinach, fresh leaf, tightly packed
2 red bell peppers, julienned
1 large onion, chopped
1 cup mozzarella cheese, shredded
1 cup tomato sauce
2/3 lb pasta (fettuccine or penne works well)
1/3 cup parmesan cheese, grated
3 tablespoons herbes de provence
2 tablespoons extra virgin olive oil
1 tablespoon salt
1/2 tablespoon pepper

Steps:

  • Mix mushrooms, broccoli, spinach, pepper, and onion.
  • Spread on baking sheet.
  • Drizzle 1 T. olive oil and sprinkle liberally with seasonings.
  • Bake vegetables at 450 for ten minutes.
  • Boil pasta until "al dente".
  • Mix with mozzarella, vegetables, and sauce and transfer to casserole.
  • Drizzle remaining olive oil on top and coat top with Parmesan.
  • Bake at 450 for approximately 20 minutes.

12 ounces whole wheat pasta shells
1/2 teaspoon salt
3 tablespoons olive oil
1 lb mushroom, wiped and chopped
1 green pepper, de-seeded and diced
1 red pepper, de-seeded and diced
1 lemon, juice of
2/3 cup single cream
2 ounces fresh parmesan cheese, grated
salt & freshly ground black pepper

Steps:

  • Bring a large pan of water to the boil. Add the pasta shells, salt and 1 tbsp oil and cook for 12-15 minutes until the pasta is tender.
  • Heat the remaining oil in a frying pan, add the vegetables and cook quickly for 5-7 minutes, turning them frequently so that they do not brown. Preheat the grill to high.
  • Add the cooked, drained pasta, lemon juice, cream, salt and freshly ground black pepper.
  • Stir well, then quickly pour this mixture into a gratin dish.
  • Cover it with the grated parmesan and grill until the cheese is golden brown. Serve immediately.

My twins are starting to eat soft solid foods and noodles are easy for them to eat. I decided to try making some pasta with some leftover pureed baby food for a more nutritious and egg-free pasta. One 4 oz baby food jar is 1/2 cup. Cooking time is resting time.

2 cups flour
1/2 cup baby food
cold water
flour

Steps:

  • By Hand: Put flour into a mixing bowl making a well in the center for the baby food. Incorporate flour into baby food by mixing in the well slowly pulling in the flour. If using a Kitchen aide mixer use the dough mixer and it will do this for you. You should get a ball after a while. It should feel like play dough. If it does not start to ball you may need to add more water. If it is too sticky add more flour.
  • By Food Processor: Put flour into a food processor bowl add the wet ingredients and 1 tsp oil to the flour in the food processor. Turn on the processor and mix until ingredients are evenly distributed. Mixture will be sandy and crumbly. With the processor running, add another 1 Tbsp cold water through a feed tube. At this stage the mixture should start coming together into a ball. If you are not getting a ball after 30 seconds of mixing, open the processor and squeeze a chunk of dough with your fingers. If it comes together and feels like play dough, it's done. If not, restart the processor and drizzle in a little more water, 1 tsp at a time.
  • Turn the dough out onto a work surface and gather into a ball. Knead for 8 minutes. The dough should be soft, pliable, and slightly tacky, but not sticky. It should not stick to the work surface or your hands. If it sticks, add a little flour and continue kneading. Don't short cut this step. Kneading is what develops gluten and makes your dough elastic and workable later.
  • Let dough rest 1 or more hours.
  • If you have a pasta machine divide the dough into thirds and follow the directions for your pasta machine.
  • If you are making it by hand roll out very thin and cut as desired.
  • Dry. Remember when you go to cook it, fresh pasta only takes a couple minutes to cook. The longer it is dried the longer it needs to cook.

3 garlic cloves, minced
1 large broccoli, tree chopped into bite-sized pieces
1 medium carrot, cut into thin strips
1/2 cup green peas
1 tablespoon olive oil
1 tablespoon italian seasoning
1/4 cup parmesan cheese

Steps:

  • Cook pasta according to package instructions.
  • Using a large skillet, sauté garlic and vegetables in oil for 10 minutes, stirring often.
  • Add cooked pasta and Italian seasoning to vegetables and gently combine with a large spoon or spatula.
  • Sprinkle parmesan cheese over pasta mixture, cover and cook for two more minutes.

  • Fill a large stockpot 3/4 the way full of water, and bring to a boil. Cook pasta according to package.
