SPAGHETTI WITH ZUCCHINI

Spaghetti with Zucchini image

Lo Scoglio in Positano, Italy, is one of Katie Lee's favorite old restaurants. After a recent trip to the Amalfi Coast, she came home with the best possible souvenir: a recipe for Lo Scoglio's famous zucchini pasta. "The owner said it wouldn't be the same because we don't have their zucchini in the States," says Katie, "but I think it's about 98 percent there!"

Provided by Katie Lee Biegel

Time 20m

Yield 2 servings

Number Of Ingredients 8

1 clove garlic, smashed
2 medium zucchini, thinly sliced
6 fresh basil leaves, torn
1/3 cup grated parmigiano-reggiano cheese, plus more for topping
Kosher salt
8 ounces spaghetti
3 tablespoons extra-virgin olive oil
1/3 cup grated pecorino cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, 9 to 11 minutes. Reserve 1 cup pasta water, then drain the pasta.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic; when it begins to sizzle, add the zucchini and saute for a couple of minutes. Add 1/4 cup of the pasta water and cook until the zucchini is tender, about 5 minutes. Add 1/4 teaspoon salt and half of the basil. Remove the garlic.
  • Add the pasta to the skillet along with about 1/2 cup of the reserved cooking water; shake the pan vigorously, adding a little more cooking water if the pasta looks dry. Cook, tossing, until the liquid is absorbed, 3 to 4 minutes. Remove from the heat and add the parmigiano, pecorino and the remaining basil; toss. Top with more Parmesan.

SPAGHETTI WITH FRIED ZUCCHINI (SPAGHETTI ALLA NERANO)

Spaghetti with Fried Zucchini (spaghetti alla Nerano) image

Spaghetti alla Nerano made famous by Stanley Tucci in his Searching for Italy series is an excellent example of a simple but exquisite vegetable pasta recipe from Southern Italy. It includes ingredients typical of Neapolitan cuisine and is very easy to make!

Provided by Jacqui

Categories     Main Course

Time 35m

Number Of Ingredients 8

400 g spaghetti ((14oz))
700 g zucchini ((24oz))
olive oil (extra virgin)
2 cloves garlic (peeled)
100 g grated Provolone cheese ((3.5oz) preferably Provolone del Monaco or caciocavallo (see notes))
1 handful fresh basil leaves. (washed and torn into pieces)
salt (for pasta and to taste)
pepper (to taste)

Steps:

  • Wash and cut the zucchini into thin slices, then fry them in extra virgin olive oil until browned.
  • Once fried, put the slices on paper towels to remove the excess oil.
  • Meanwhile boil the pasta in plenty of lightly salted water until al dente and drain, keeping aside a cup of the cooking water.
  • Heat some more olive oil in a frying pan with the 2 garlic cloves and cook taking care not to burn the garlic.
  • Immerse the zucchini slices in boiling water for 4 or 5 seconds, then cream 1/3 of them either by mashing through a sieve or briefly liquidizing in a food blender with some of the pasta cooking water.
  • Remove the garlic and add the cream of zucchini and the zucchini slices to the pan and then stir in the cooked spaghetti. If the dish appears too dry add some of the saved pasta cooking water. Continue to stir over a low heat for a minute.
  • Remove the pan from the heat, stir in the grated provolone until it starts to melt and become creamy. Season with a sprinkling of pepper and salt as required, Serve decorated with the basil leaves cut into pieces and some extra grated provolone to taste.

PASTA WITH ZUCCHINI AND PARMESAN

Pasta with zucchini and parmesan image

This pasta with zucchini is your go-to recipe when you want a delicious, satisfying pasta dish loaded with vegetables. It's ready in about 15 minutes, it requires only 5 ingredients and turns plenty of zucchini into a perfect summer meal.

Provided by Katia

Categories     pasta

Time 15m

Number Of Ingredients 7

1/2 lb (220 grams) pasta
1½ Tbsp olive oil
3-4 garlic cloves, minced
1 lb (450 grams) zucchini, cut into slices or cubes ((approx 3 medium-sized zucchini))
1/2 cup (40 grams) parmesan, grated
1/4 cup (60 grams) cream cheese or ricotta (optional)
salt and pepper, to taste

Steps:

  • Cook your pasta in a large pot of salted boiling water according to the packet instructions, but drain 1 minute before the end of the cooking time.
  • Before draining, reserve about 1/2 of cooking water.
  • While the pasta is cooking, in a large pan (see notes) heat the olive oil, add the garlic and gently fry for about 30 seconds, until golden and fragrant.
  • Add the zucchini to the pan, add salt and pepper and toss to combine. Start with 1/2 tsp of salt and a good pinch of pepper, but after a few minutes check if you're happy with the seasoning.
  • Fry the zucchini gently over medium-high heat, stirring frequently. You want the zucchini to turn slightly brown and absorb the flavor from the garlic, the oil, and the seasoning. Make sure you don't steam them. Cook until soft, 8-10 minutes should be enough.
  • Add pasta to the zucchini, stir to combine. Then add parmesan, cream cheese, (or ricotta). Stir well to combine for about 1 minutes over medium-high heat. Add a few Tbsps of pasta cooking water to make it moist, if needed (see notes).
  • Serve immediately with grated parmesan cheese, freshly ground black pepper or chili flakes, if you like.

ZUCCHINI PASTA

Zucchini Pasta image

Zucchini, not pasta, is the star of the show in this easy weeknight dish from Mark Bittman. Six zucchinis, two tomatoes and one onion for a half pound of pasta make this a vegetable-rich tangle that makes worthy use of your farmers' market haul.

Provided by Mark Bittman

Categories     pastas, main course

Time 30m

Yield 4 servings

Number Of Ingredients 8

Salt and pepper
1/4 cup extra virgin olive oil
5 or 6 medium zucchini, rinsed, trimmed and cut into ribbons or coins
1 large onion, chopped
2 or 3 sprigs thyme
2 tomatoes, in wedges or roughly chopped, with their juice
1/2 pound cut pasta, like ziti or penne
Freshly grated Parmesan or freshly chopped parsley for garnish.

Steps:

  • Bring a large pot of water to a boil and salt it. Put olive oil in a large skillet over medium heat. Add zucchini, onion and thyme, and cook, stirring occasionally. Add salt and pepper and adjust heat so onion and zucchini release their liquid without browning. Cook for about 20 minutes, or until very tender.
  • Add tomatoes and their liquid to zucchini and raise heat a bit so mixture bubbles. Cook pasta until it is nearly but not quite tender. If sauce threatens to dry out, add a little pasta cooking water.
  • Drain pasta and finish cooking it in sauce. Serve, garnished with parsley or Parmesan.

Turn humble pasta and beans gourmet by adding roasted vegetables, fresh mint and tangy, salty aged goat cheese. PASTA WITH TOMATOES AND ZUCCHINI

Pasta with Tomatoes and Zucchini image

This quick pasta with tomatoes and zucchini is bursting with flavor, juicy, and packed with fresh vegetables. It makes a terrific vegan family meal ready in about 20 minutes!

Provided by Katia

Categories     pasta

Time 30m

Number Of Ingredients 11

8 oz (220 grams) pasta (penne, fusilli, spaghetti...)
1 Tbsp olive oil or extra virgin olive oil
½ red onion (any other color is fine), diced
1 lb (450 grams) zucchini, diced
¼ tsp chili flakes (optional)
10 oz (300 grams) cherry tomatoes, halved
salt and pepper, to taste
2 Tbsp fresh parsley, chopped
1 Tbsp extra virgin olive oil, to drizzle
freshly ground black pepper
grated Parmesan cheese

Steps:

  • Fill a large pot with salty water and place over high heat to bring it to a boil. Add the pasta to the pot while you're cooking the zucchini.
  • Cook until al dente according to the package directions. Reserve about ½ cup of cooking water when you drain the pasta.
  • Cut the tomatoes in half, and dice onion and zucchini. If zucchini is large, cut it lengthwise, than cut each half into three long batons. Then slice off the seeds from each baton and cut it into ½-inch cubes.
  • Heat the olive oil over medium heat in a large non-stick sauté pan. Add the red onions and cook, stirring frequently, until very soft and pale purple in color, 5-6 minutes. Do not brown.
  • Add the zucchini, chili flakes, about ¼ tsp of salt and freshly ground black pepper. Give a good stir and cook over medium-high heat for about 10 minutes or until the zucchini are cooked but still crisp, not mushy.
  • Add the tomatoes, stir and cook until the skins burst and the tomatoes begin to release their juices, about 4 minutes. Taste and adjust the seasoning according to your taste.
  • Add pasta and parsley to the pan and toss gently to combine. Add a touch of pasta cooking water if the pasta dries out (you don't need all of it, but use just as much as you need to keep everything moist and juicy).
  • Taste again and make sure you're happy with the seasoning.
  • Remove from the stove and serve immediately with a drizzle of extra virgin olive oil, black pepper and garnished with fresh parsley and parmesan cheese, if you wish.

  • In a medium sauté pan over low heat, add the olive oil and the chopped garlic. Let the garlic simmer in low heat for a few minutes stirring occasionally. You want the garlic to slowly infuse the oil while making sure it doesn’t turn brown.
  • Turn the heat to medium and add the onion, red bell pepper, zucchini and yellow squash. Add the Italian seasoning, dried oregano and salt and pepper to taste. Cook for about 4 minutes or until the onions are translucent and the vegetables are partially cooked. Add the chopped tomatoes, Kalamata olives, capers and red pepper flakes. Mix gently, cover and cook for about 5-7 minutes.

  • For the Brown Butter Breadcrumbs: Melt the butter in a medium skillet over medium heat and continue to cook, until the butter turns light brown in color. You will want to stir the butter occasionally as it is browning. As soon as it starts to smell nutty and is light golden brown, add in the breadcrumbs and garlic. Don't let it get too brown or it will burn. The butter will keep cooking as you toast the breadcrumbs. Stir until the breadcrumbs are moist with the butter. Add in the basil, lemon zest, and salt. Keep stirring and cooking until the breadcrumbs are toasted and golden brown in color. Set aside.
  • For the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Make sure you reserve a 1/2 cup of the pasta water before draining.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the zucchini and yellow squash and cook for 5 minutes, stirring occasionally. Add in the shallot, garlic, and crushed red pepper flakes. Cook until the vegetables are tender, but not mushy, about 3 more minutes.
  • Stir in the cooked pasta. Add in about 1/4 cup of the reserved pasta water and let simmer for 1 minute. Add in the butter and Parmesan cheese and stir until melted. Add the fresh basil, lemon juice, and season with salt, to taste. If the pasta seems dry, you can add in a little more pasta water and stir.

  • While waiting for the oil to heat up, slice your zucchini into medium-sized slices (about 1/4" thick). If they are too thin, they will come out too crispy like a chip.
  • Once the oil is hot enough, drop the zucchini slices in a few at a time. (Putting too many slices in at once will crowd the frying process and may cause the oil to foam up and overflow). TIP: To keep oil from splattering up onto your arm while dropping the slices in, I like to place the slices onto a slotted spoon and drop them into the oil one-by-one.
  • As the slices turn a golden brown, remove them with a slotted spoon and lay them on a plate covered with some parchment paper or paper towels. Repeat this process until all of your zucchini pieces are fried.
