3 pounds sweet potatoes (about 4 large), peeled and cut into chunks
2 pounds medium carrots, cut into 1/2-inch chunks
1 package (12 ounces) pitted dried plums (prunes), halved
1 cup orange juice
1 cup water
1/4 cup honey
1/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/4 cup dairy-free margarine or butter

Steps:

  • Preheat oven to 350°. In a greased 13x9-in. baking dish, combine sweet potatoes, carrots and plums. Combine orange juice, water, honey, brown sugar and cinnamon; pour over vegetables. , Cover and bake for 1 hour. Uncover; dot with butter. Bake until vegetables are tender and sauce is thickened, 45-60 minutes, carefully stirring every 15 minutes.

This dish is inspired by several tsimmes recipes in Joan Nathan's "Jewish Cooking in America." Tsimmes, a Yiddish word that means "fuss," doesn't have to be fussy at all. Sometimes the dish contains meat (and is fussier than this one), but sometimes it's just fruit and vegetables. Warning: You may find yourself eating this for breakfast.

6 medium carrots about 1 1/2 pounds, peeled and cut in 3/4-inch dice
3 medium sweet potatoes about 2 1/4 pounds, peeled and cut in 3/4-inch dice
2 Granny Smith apples, peeled, cored and cut in medium dice
1/4 pound pitted prunes, cut in half
1/4 pound pitted apricots, quartered
2 tablespoons mild honey, like clover
1/2 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
Salt to taste about 1/2 teaspoon
1 cup fresh orange juice
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 375 degrees. Butter or oil a 3-quart baking dish.
  • Place the carrots and sweet potatoes in a steamer set above 1 inch of boiling water, and steam for five to 10 minutes, until just tender. Drain and toss with the remaining ingredients in a large bowl. Combine well, and scrape into the prepared baking dish. Place in the oven, and bake 40 to 50 minutes, stirring every 15 minutes, until the sweet potatoes and carrots are thoroughly tender. Dot the top with butter, and bake another 10 minutes until the top is lightly browned. Remove from the heat, and serve hot or warm.

1 egg

1 (10-ounce) bag marshmallows

Steps:

  • 1. Preheat oven to 350°F. Grease a 9- x 9-inch baking dish. 2. Cover potatoes with water in a medium pot and bring to a boil over high heat. Simmer until tender, about 15 minutes. 3. This recipe can be made 2 days in advance; cover and refrigerate until ready to bake. You can vary the proportion of carrots to sweet potatoes.

1 lb carrot, peeled and cut into 3/4- to 1-inch pieces
6 medium sweet potatoes or 6 medium yams, peeled and cut into 3/4- to 1-inch dice
1 cup orange juice (plus additional,as needed)
1/2 cup honey
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup pitted prune, coarsely chopped
3 tablespoons unsalted butter, cut into small pieces

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 3-quart casserole or baking dish (or 2 smaller baking dishes) with non-stick cooking oil spray.
  • Bring a large pot of lightly salted water to a boil. Add the carrots and sweet potatoes; cover, and reduce the heat to medium-low. Cook about 15 minutes, until the vegetables are easily pierced with a fork.
  • Meanwhile, in a medium bowl, combine the orange juice,honey,salt, and cinnamon. Set aside.
  • Drain the vegetables and transfer them to the prepared baking dish. Add the prunes and toss gently. Stir the orange juice mixture and drizzle over the top. Sprinkle with the butter pieces. (At this point, the tzimmes can be covered and refrigerated until ready to bake.) Cover with aluminum foil and bake 20 to 25 minutes, stirring once or twice, until warmed through. If the tzimmes becomes dry, add a few more tablespoons of orange juice.

1/2 cup plain low-fat yogurt
2 tablespoons margarine or 2 tablespoons butter
1/4-1/2 teaspoon salt
1/8 teaspoon ground red pepper
2 eggs, beaten
3/4 cup herbed feta cheese or 3/4 cup plain feta cheese
1/4 cup water
1 (10 ounce) package prewashed spinach
1/4 teaspoon paprika

Steps:

  • Peel and quarter potatoes.
  • In a large saucepan cook potatoes, covered, in a small amount of boiling water for 25 minutes or until tender. Drain potatoes.
  • Preheat oven to 425 degrees F.
  • Mash drained potatoes with a potato masher or beat with an electric mixer on low speed.
  • Add yogurt, margarine or butter, salt, and red pepper; beat just until combined.
  • Add eggs; beat with an electric mixer on low speed for 1 minute or until fluffy.
  • Fold in 1/2 cup of the feta cheese.
  • In a 12-inch skillet bring the 1/4 cup water to boiling; add spinach to skillet. Toss spinach for about 1 minute or until spinach is slightly wilted; drain. Press out excess liquid. Coarsely chop spinach.
  • Spread half of the potato mixture into a lightly greased 2-quart rectangular baking dish. Layer spinach on top; sprinkle with remaining feta cheese. Spread remaining potato mixture on top and sprinkle with paprika.
  • Bake, uncovered, for 15 minutes or until top is lightly browned.

2 tablespoons olive oil
1 cup chopped onions
3 large carrots (sliced)
3 large sweet potatoes (cooked, baked, or microwaved in their skins, then peeled and sliced)
1 large apple or pear (cored and sliced)
1/2 cup chopped prunes
1/4 cup chopped dried apricots
1/2 cup orange juice (preferably freshly squeezed)
1 1/2 teaspoons cinnamon
1/2 teaspoon each: ground ginger and salt
1/3 to 1/2 cup chopped walnuts (optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the oil in a large skillet. Sauté the onions over medium heat until translucent. Add the carrots and continue to sauté until onions and carrots are golden.
  • In a mixing bowl, combine the onion-carrot mixture with all the remaining ingredients except walnuts. Mix thoroughly; don't worry if the potato slices break apart.
  • Transfer the mixture to a large, oiled, shallow baking dish (a round or oval shape is attractive). Sprinkle the optional walnuts over the top.
  • Bake for 45 to 50 minutes, or until the top begins to turn slightly crusty. Serve hot or warm from the baking dish.

4 sweet potatoes, peeled and sliced
1/2 cup brown sugar, packed

Traditional tsimmes is a stew of sorts that includes sweet potatoes, carrots, one or two kinds of dried fruits, and spices. It's usually served as a side dish at Rosh Hashanah, the Jewish New Year, but it also makes frequent appearances on the Passover Seder table. The word "tsimmes" sometimes means a fuss or commotion, or even a muddle. This version is anything but fussy and definitely not muddled. Here, halved sweet potatoes are simply roasted and served with a scrumptious glaze that includes prunes, orange juice, fresh ginger and a hit of lemon.

4 small sweet potatoes (6 to 8 ounces each), halved lengthwise
1 tablespoon olive oil
Kosher salt and black pepper
2 navel or Cara Cara oranges, zested and juiced
1 tablespoon fresh lemon juice
3 tablespoons honey
1/2 teaspoon ground cinnamon
1 (1 1/2-inch) piece of fresh ginger, peeled and cut into fine slivers
1/2 cup bite-size pitted prunes, quartered

Steps:

  • Position a rack on the lower third of the oven and heat oven to 400 degrees. Line a sheet pan with foil.
  • Rub the sweet potatoes with the oil and season with salt and pepper. Arrange on the pan cut sides down and roast on the low rack until nicely browned on the cut sides and a paring knife inserted meets no resistance, 30 to 40 minutes.   • Arrange sweet potatoes on a serving platter cut sides up and spoon the glaze over top, rewarming with a splash of water to loosen, if needed. Sprinkle the remaining orange zest over the top.
