ROCKY ROAD BARS
Chewy bars loaded with the classic Rocky Road trio of marshmallows, chocolate, and nuts. Taken from a newsletter from CHOW.com. These look decadent!

Steps:
- Heat the oven to 350°F; coat a 13-by-9-inch baking dish with butter; set aside.
- Combine 3/4 cup of the chocolate chips and all the butter in a small saucepan.
- Cook over low heat, stirring constantly, until melted, about 8 minutes. Remove from heat and let cool slightly.
- Whisk sugar, eggs, vanilla, and salt in a large bowl until eggs are broken up and smooth.
- Add chocolate mixture and stir to combine; add flour and baking powder and stir until just incorporated.
- Add 3/4 cup of the marshmallows and 3/4 cup of the almonds and stir to combine.
- Transfer batter to the prepared dish and spread evenly.
- Bake until a toothpick inserted in the center comes out mostly clean, about 25 to 30 minutes; remove from the oven.
- Move the rack to the top of the oven.
- Sprinkle remaining chocolate chips, marshmallows, and nuts over the surface of the batter.
- Return to the oven and continue baking until marshmallows are puffed and golden brown, about 10 minutes more.
- Remove from the oven and cool completely on a wire rack before cutting.
PASSOVER BISCOTTI (AKA MOCK MANDEL BREAD)
Another great recipe from my SIL. Very forgiving--can use cake meal, matzo meal, a combo. Stores well.

Steps:
- Cream together sugar and margarine.
- Add eggs, one at a time, beating throughout.
- Mix together cake meal and potato starch (or don't bother), and add to wet stuff. Mix well.
- Mix in nuts and chips.
- Form 2 loaves (about 3" x 16") on cookie sheet (I line mine with parchment paper for ease of removal).
- Sprinkle with cinnamon sugar.
- Bake at 350F for 35-40 minutes.
- Remove from oven and slice horizontally, cutting about 3/4 of the way through the loaf.
- Return to oven for 5 minutes.

- Preheat the oven to 325°F (160°C). Prepare a 9x13-inch pan by lining it with parchment paper or spraying it well with cooking oil spray.
- Melt the chopped chocolate and margarine in a double boiler and stir well. Stir in the sugar. Cool slightly.
- Whisk in the eggs one at a time. Stir in the cake meal and salt, and remove the pot from the heat. Stir in the chocolate chips, marshmallows and walnuts.
- Pour this batter into the prepared baking pan and bake for 30 minutes or until set. Remove the pan from the oven, and sprinkle the brownies with the additional cup of marshmallows.
