If you have a recipe that calls for a graham-cracker crust, and you don't have the ingredients to make one or just want to try something that's not only simpler but much tastier--try this. Straight from Joy of Cooking, I found this recipe when I made Million Dollar Pie because I didn't feel like crushing graham crackers. It's simple and to die for and requires zero baking. My personal preference is pecans, but you may use walnuts or what the heck--try any nut out for size.

Number Of Ingredients 4

2 cups walnuts or 2 cups pecans
1/4 cup unsalted butter
3 tablespoons granulated sugar
1/4 teaspoon salt

Steps:

  • Chop walnuts or pecans (I did mine in the blender).
  • Melt butter and mix with the nuts in a pie plate.
  • Add sugar and salt and pat into bottom of pie pan.
  • Oila! Cooking is done, and you're ready to fill your crust.

This crust is especially good as a base for Eggnog Pie with Rum, but can be used with almost any custard pie.

2 ½ cups ground pecans
¼ teaspoon ground cinnamon
⅓ cup white sugar
4 tablespoons unsalted butter, melted

Steps:

  • Stir together ground nuts, cinnamon, and sugar. Mix in melted butter.
  • Press the mixture into the bottom and up the sides of a 9 inch, deep-dish style, pie pan. Chill the unbaked crust in the refrigerator for about 30 to 45 minutes.
  • Place pie crust on a cookie sheet, and position on the middle rack of a preheated 350 degree F (175 degree C) oven. Bake for 12 to 15 minutes, or until lightly browned. WATCH it carefully, as nut crusts burn easily; they DON'T have to turn black to taste burnt! Cool completely before filling.

  • Bake for 7 minutes.

1 cup uncooked rolled oats
3 tablespoons brown sugar
2/3 cup walnuts or 2/3 cup pecans, minced
1/3 cup butter, melted

Steps:

  • Preheat oven to 350°F.
  • Spread oats in a large shallow pan and bake for 10 minutes to toast.
  • Toss with sugar, nuts and melted butter.
  • Press over bottom and up sides of 9-inch pie pan. Refrigerate while preparing your filling. Bake like any pie with a "regular" crust would require.

10 eggs, separated
1 cup sugar
2 tablespoons matzo cake meal
1 tablespoon plum brandy (slivovitz)
1/2 lb walnuts, finely ground (scant 1.5 cups)

Steps:

  • Preheat the oven to 350degF.
  • Lightly grease a 9 inch springform pan.
  • Beat the egg yolks with the sugar until the mixture is pale yellow and thick. Add the cake meal and slivovitz. Slowly beat in the ground nuts.
  • With an electric mixer, beat the egg whites until stiff but not fry. Gently fold them into the yolk-nut mixture.
  • Turn the batter into the prepared pan and bake for 50minutes to 1 hour, until the cake has risen substantially and is lightly colored on top.
  • Cool the cake on a rack. As it cools, it will deflate.
  • Remove the sides of the pan.
  • It is best served the day it's made.
