Steps:
- Preheat oven to 325 degrees F (165 degrees C). Melt butter in an 8 inch square pan. Stir in graham cracker crumbs, 2 tablespoons sugar and 1/4 teaspoon cinnamon. Pat over bottom and onto sides of dish. Set aside.
- In a blender, combine cottage cheese, milk, eggs, flour, lemon juice, vanilla, 2/3 cup sugar and 1/4 teaspoon salt. Blend until smooth. Pour into prepared crust.
- Bake in the preheated oven for 60 minutes, or until filling is firm. Allow to cool completely.

Steps:
- Heat oven to 325°F.
- Mix cookie crumbs and margarine; press onto bottom and 1 inch up side of springform pan sprayed with cooking spray. Bake 12 min.
- Meanwhile, beat cream cheese and 1 cup sugar with mixer until well blended. Add zest; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour into crust.
- Bake 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.
- Blend strawberries in blender until smooth; strain. Stir in orange juice and remaining sugar. Serve spooned over cheesecake slices.

In the early 1990's Gourmet Magazine did a series of Passover cakes which I now cannot find on epicurious.com. I had copied some of them and am posting them here. (Preparation and baking time shown does not include cooling and refrigeration time.)

- Set oven rack at middle of oven; preheat oven to 325 degrees F.
- Prepare the crust:.
- In a small bowl with an electric mixer, beat the butter until smooth. Add matzo meal, sugar and cinnamon; beat until it resembles coarse meal. Add wine, blend just until it holds together.
- Press onto bottom (and partly up the sides) of an ungreased 8 inch springform pan.
- Prepare the filling:.
- In a large bowl with an electric mixer, beat the cottage cheese and cream cheese until smooth.
- Add the egg yolks one at a time, beating well after each addition.
- Beat in sugar. Add sour cream, potato starch, rind and vanilla; beat until combined well.
- In a separate bowl with clean beaters, beat egg whites until they just hold stiff peaks.
- Stir ½ cup of the beaten egg whites into the cheese mixture. Fold in remaining egg whites gently but thoroughly.
- Pour on top of prepared crust.
- Bake for 1 hour. Turn off oven; let cake cool in oven with door slightly open.
- Chill in the pan at least 4 hours or overnight.
- Run a thin knife around edge of pan; remove side of pan.

- Preheat oven to 325°F if using a 9-inch silver springform pan (or to 300°F if using a 9-inch dark nonstick springform pan). Mix cookie crumbs and margarine; press firmly onto bottom of pan.
- Beat cream cheese, cottage cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.
- Bake 55 min. to 1 hour or until center is almost set. Run small knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Spread sour cream over top of cheesecake; top with strawberries just before serving. Store leftover cheesecake in refrigerator.

- Cake------------.
- Preheat oven to 350 degrees.
- Place all ingredients for cake in food processor.
- Pulse together until batter forms.
- Spoon into buttered 8 inch square cake pan.
- Bake for 45 to 50 minutes or until cake tester inserted in centre comes out clean.
- Topping------------.
- Combine berries.
- Melt red currant jelly with orange juice.
- Let cool slightly, stir into berries.
- Top cake with berry mixture and cut into squares to serve.
- Variation------------.
- If you don't have a food processor, you can use a blender to combine the ingredients for this cake.
- Process the eggs, cottage cheese and cream cheese until smoth, then add the remaining cake ingredients and process until combined.
- Proceed as directed above.
- (An electric mixer is not recommended for preparing this recipe as it changes the texture of the cake).
PASSOVER COTTAGE CHEESE PANCAKES
This is my mom's recipe for Passover pancakes. For non-Passover use, substitute regular flour for the matzo meal.

Cut into 16 squares. Top evenly with strawberries just before serving. Store leftover dessert squares in refrigerator.

- In a bowl, beat together the eggs, cottage cheese, milk, salt, and sugar with a fork. Stir in the matzo meal. Let rest at room temperature for 10 minutes.
- Pour enough oil in a 10- to 12-inch skillet to cover the bottom by a scant 1/8 inch and place over medium heat. When the oil is hot, pour a scant 1/4 cup batter in the skillet. You want it to form a pancake about 4 inches in diameter. If it’s too thick to spread this much, add a little more milk to get it to the proper spreading consistency. The pancake should sizzle immediately. Fry until the first side is golden brown, 60 to 90 seconds. Flip the pancake and cook the second side, which should take only about 30 seconds.

- Make the Crust: Grind Kosher for Passover cookies in a food processer to create crumbs. Place cookie crumbs in a bowl and pour melted butter over crumbs, mixing well with a fork. Press mixture into the bottom of a 10-inch springform pan. Freeze for 30 minutes.
- Make the Cheesecake: Beat cream cheese and sugar at medium-low speed with an eclectic mixer until soft and fluffy (about 1 minute). Mix in vanilla and salt. Add eggs, one at a time, mixing on low speed just until incorporated. Take springform pan from freezer. Pour cheesecake mixture on top of crust in springform pan.
- Bake at 325 for an hour. Turn off oven. Leave cheesecake inside while oven cools (about 2 hours) to avoid cake cracks. Chill overnight or at least 8 hours.
- Make Whipped Cream: Place metal whisk into the freezer for 15 minutes before using. With a hand mixer, whip whipping cream and powdered sugar on medium-high speed until medium peaks form, about 3 minutes. Stop the mixer and check the consistency of the whipped cream as you go, if needed.
