- Preheat oven to 325 degrees farenheit.
- Whisk together egg yolks, granulated sugar, and salt in a bowl until combined well.
- Place this custard mixture into a 2qt saucepan.
- Using the tip of a knife, scrape seeds from vanilla bean into cream, then add pod.
- Heat over moderate heat until hot but not boiling.
- Discard pod and add cream to egg mixture in a slow stream, whisking until combined.
- Spoon 1/4 c mango into each ramekin.
- Pour custard through a fine mesh sieve into a bowl, then ladle over mango.
- Arrange ramekins in a roasting pan and bake in a hot water bath in middle of the oven until custards are just set, 35 to 40 minutes.
- Transfer custards with tongs to a rack to cool, then chill, uncovered, at least 4 hours.
- Preheat broiler.
- Sprinkle turbinado sugar evenly over custards and broil in a shallow baking pan (5 to 7 inches from the heat) until sugar is caramelized, about 2 to 3 minutes.
- *Note* A blowtorch can be used to caramelize the sugar topping instead of the broiler.

- Preheat the oven to 300 degrees F.
- In a medium saucepan, heat the cream, milk, and vanilla over medium heat, stirring occasionally, just until it comes to a boil.
- Immediately turn off the heat and set aside to infuse at least 15 minutes.
- In a large bowl, whisk the egg yolks with the granulated sugar.
- Whisking constantly, gradually pour in the hot cream mixture.
- Whisk in the passion fruit and mango puree.
- Pour the mixture into 4 ovenproof ramekins and arrange in a hot water bath.
- Bake in the center of the oven until almost set but still a bit soft in the center, 30 to 40 minutes.
- The custard should"shimmy" a bit when you shake the pan; it will firm up more as it cools.
- Remove from the water bath and let cool 15 minutes.
- Tightly cover each ramekin with plastic wrap, making sure the plastic does not touch the surface of the custard.
- Refrigerate at least 4 hours, and up to 24 hours.
- When ready to serve, preheat a broiler to very hot (or use a kitchen torch).
- Uncover the chilled custards.
- Pour as much coarse sugar as will fit onto the top of 1 of the custards.
- Pour off the remaining sugar onto the next custard.
- Repeat until all the custards are coated.
- Discard any remaining sugar.
- Place the ramekins on a baking sheet or in a roasting pan and broil until the sugar is melted and well browned, 1 to 2 minutes.
- Let cool 1 minute before serving.

- Heat the oven to 200°C/180°C fan/gas 6. Put one pastry sheet onto a large non-stick baking sheet. Put another baking sheet on top. Do the same with the other pastry sheet (see tip). Bake the sheets for 20-25 minutes or until the pastry is golden and crisp. Remove from the oven and, straightaway, use the tip of a sharp knife to lightly score the top of one of the pastry sheets into 12 equal rectangles (don’t cut all the way through). Leave the pastry sheets to cool and crisp up, then transfer to a chopping board.
- Using a sharp knife, trim both pastry sheets using the brownie tin as a guide, so the pastry will fit in the tin perfectly. Put the un-scored pastry into the bottom of the tin, then brush with a very thin layer of raspberry jam.
- To make the filling, put the cream into a large saucepan and warm through over a low heat. Mix the vanilla, sugar, egg yolks and cornflour paste with a balloon whisk in a heatproof mixing bowl. Soak the gelatine in a small bowl of cold water.
- When the cream is steaming but not simmering, pour it over the egg mixture, then stir with a balloon whisk. Return to the saucepan over a low heat, then stir until the custard thickens. It will take up to 15-20 minutes to fully thicken and start to bubble (it’s ready when it holds it shape if you dollop a little onto a saucer). Drain the gelatine leaves and squeeze out any excess water, then add them to the custard. Cook on a low heat, stirring constantly, until the gelatine leaves have melted, then remove the custard from the heat immediately.

- To make the puffs: In a large saucepan, combine the water, milk, butter, and salt. Bring to a boil over medium heat. When the mixture is boiling, add the flour all at once and stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan. Continue to cook and stir the mixture for about 1 minute to eliminate excess moisture. Take off the heat. At this point, the dough mostly comes together and rolls away from the sides of the pan when stirred.
- Transfer to the bowl of an electric stand mixer and let cool for 5 minutes, stirring occasionally to allow the steam to come out. Set the mixer to medium speed, and beat the eggs in one at a time, making sure each egg is well incorporated before adding the next. Also scrape the bowl down between each egg addition. Every time you add an egg, the dough will separate and look like a curdled mess, but it will then come back together in a really sticky, yet somewhat crumbly way. The dough will keep on getting smoother as you add more eggs. The dough is done when it is smooth and elastic, not dry. It will be very thick and sticky.
- Line large baking sheet with parchment paper. Using a 1.5 tbsp (22 ml) cookie or ice cream scoop, create mounds of dough on the parchment paper-lined baking sheet, spacing them 3 inches (7 cm). Using damp fingertips, press down any peaks of dough to create round puffs.

- Preheat oven to 150C. Put the cream into a small saucepan, add vanilla bean pod and seeds. Place over medium-low heat until almost simmering (90C).
- Meanwhile, place egg yolks and caster sugar in a bowl and whisk by hand until pale and creamy, then add in the juice. Pour hot cream over egg mixture, whisk to combine, then strain.
