This is a delicious and easy recipe. My kids love it. It can be made the day before and refrigerated. Good served over rice.

Ingredients

4 skinless, boneless chicken breasts
4 slices bacon
1 (4 ounce) jar dried beef
1 cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

Shred beef, and spread into the bottom of a greased 8 inch square baking dish.
Wrap each chicken breast with 1 strip of bacon, and lay on top of beef.
Mix together undiluted soup and sour cream. Pour over chicken.
Bake at 350 degrees F (175 degrees C) for 45 minutes to 1 hour.

I've been making this vegetable dish for years and recently added the chicken to make it a one-pan meal. It never fails to get raves from men and women alike!

6 boneless skinless chicken breast halves (4 ounces each)
1 cup water
2 cups sliced zucchini , cut 1/4 inch slices
1 package (14 ounces) frozen baby carrots or 3 cups fresh baby carrots
5 tablespoons butter, divided
2 tablespoons all-purpose flour
1-1/2 cups half-and-half cream or milk
2 teaspoons chicken bouillon granules
1/2 teaspoon prepared mustard
1/2 teaspoon dill weed, divided
1/8 teaspoon pepper
Dash nutmeg
1 can (14-1/2 ounces) small whole onions, drained
1-1/2 cups soft bread crumbs
3/4 cup shredded cheddar cheese
1/2 cup coarsely chopped walnuts

Steps:

In a large skillet, bring chicken and water to a boil. Reduce heat and simmer, uncovered, for 3 minutes on each side (chicken will not be completely cooked). Remove chicken from cooking liquid and place down the center of an ungreased 13-in. x 9-in. baking dish; set aside. , Cook zucchini and carrots in cooking liquid for 5 minutes or until zucchini just begins to soften; drain and set aside. In a large saucepan, melt 2 tablespoons butter; stir in flour and cook for 1 minute. Stir in cream until smooth. Add bouillon, mustard, 1/4 teaspoon dill, pepper and nutmeg. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat. , Spoon 1/2 cup sauce over chicken. Add the zucchini, carrots and onions to remaining sauce. Spoon along sides of baking dish. Melt remaining butter; toss with bread crumbs, cheese, walnuts and remaining dill. , Spoon over chicken and vegetables. Bake, uncovered, at 375° for 30-35 minutes or until topping is browned and sauce is bubbly.

1 cup onion, diced
1/2 cup green pepper, diced
2 tablespoons butter or 2 tablespoons margarine
2 cups cooked chicken or 2 cups cooked turkey
1 (4 ounce) can green chili peppers, chopped
3 tablespoons butter or 3 tablespoons margarine
1/4-1/2 cup flour (I use 1/2 cup)
1 teaspoon ground coriander
3/4 teaspoon salt
2 1/2 cups chicken broth
1 cup sour cream
1 1/2 cups monterey jack cheese
12 (8 inch) flour tortillas

Steps:

In a large saucepan cook onion and green pepper in the 2 tablespoons of butter until tender.
Combine onion mixture in a bowl with chopped chicken and green chili peppers.
Set aside.
For sauce, in the same pan melt 3 tablespoons butter.
Stir in flour, coriander and salt.
Stir in chicken broth all at once.
Cook and stir till thickened and bubbly.
Remove from heat.
Stir in sour cream and 1/2 cup of the cheese.
Stir 1/2 cup of the sauce into the chicken mixture.
Fill each tortilla with about 1/4 cup of the chicken mixture.
Roll up and arrange in a 13x19x2 baking dish.
Pour remaining sauce over and sprinkle with remaining cheese.
Bake, uncovered in a 350 oven about 25 minutes or until bubbly.
Can be made ahead of time and frozen. Place a large sheet of heavy duty foil in your baking dish with enough foil over the end to fold up and over the frozen casserole. Make the casserole up until you are ready to bake it. Freeze it solid. Remove frozen casserole from your dish and encase in the excess foil for storage. This frees up the dish for other meals. When you wish to heat it, remove foil from the still frozen casserole, and place back into the dish that you froze it in initially to thaw; bake as directed.
