BASIL PESTO PARTY ALMONDS



Basil Pesto Party Almonds image

These roasted, pesto-covered almonds make an irresistible snack or party appetizer. Recipe yields 2 cups pesto almonds.

2 egg whites
1/4 cup packed whole basil leaves
3/4 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
2 cups whole, unsalted almonds
1/4 cup finely grated Parmesan cheese

Steps:

  • Preheat the oven to 225 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside.
  • In a blender, combine the egg whites, basil leaves, salt, garlic powder and red pepper flakes. Process on low speed until mixture is pureed. In a small mixing bowl, toss the basil egg white mixture with the almonds until well combined. Let the almonds soak up some of the excess moisture for a few minutes. Stir in the Parmesan. Use a large mixing spoon to transfer the almonds to the prepared pan, leaving any excess basil mixture in the bowl.
  • Spread almonds in a single layer on the baking sheet. Bake for 30 minutes or longer, stirring every 15 minutes, until the basil mixture is dried and the almonds are sufficiently crunchy. Let the almonds cool completely, then store in an air-tight container. Mine are in a freezer-safe bag in the freezer for my next girls' night.

Great for nibbling at cocktail parties, spicy almonds can be prepared in 30 minutes. Guests will go nuts for them!

1 tablespoon butter or margarine
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon curry powder
1 tablespoon Worcestershire sauce
1/4 teaspoon red pepper sauce
2 cups whole almonds
1 to 2 teaspoons kosher (coarse) salt

Steps:

  • Heat oven to 325°F. In 2-quart saucepan, melt butter over low heat; stir in oil, chili powder, curry powder, Worcestershire sauce and pepper sauce. Simmer gently 2 to 3 minutes to blend flavors.
  • Add almonds; toss to coat and spread in single layer in 15x10x1-inch pan.
  • Bake 10 to 15 minutes, stirring once halfway through bake time. Pour hot nuts into large bowl, toss with salt to coat. Spread in single layer in same pan; cool to room temperature. Store in airtight container.

Candied Almonds image

Coat the almonds with beaten egg white, then the sugar/cinnamon mixture then bake them low and slow.

Number Of Ingredients 7

2 - 3 1/2 cups whole, raw, almonds (2 cups fit easily on a large baking sheet. Use 2 baking sheets if you are doing 3 1/2 cups.)
1 egg white (Beaten until frothy.)
1 T vanilla extract
1/2 c packed brown sugar
1/2 c granulated sugar
1/2 tsp salt
pinch ground cardamom (optional. Vanilla and cardamom pair well together.)

Steps:

  • Adjust oven rack to middle position and preheat oven to 250.
  • In a large bowl, beat the egg white until frothy. Stir in the vanilla. Add the almonds and stir well to make sure they are all coated with the egg white.
  • Combine the sugars, salt, cinnamon, and cardamom in a medium bowl.
  • Add the sugar mixture to the almonds and stir well to make sure each almond is well coated with the mixture. It will be thick.
  • Spread the almonds on a large, rimmed cookie sheet and bake at 250 for an hour. Set your phone timer and stir them every 15 minutes - it prevents them from clumping together.
  • Let cool before transferring to serving or storage vessel.

3 1/2 cups almonds (1 lb or 500 g)
1 tablespoon extra virgin olive oil (15 ml)
2 teaspoons coarse sea salt (10 ml) or 2 teaspoons flake sea salt (10 ml)
1 1/2 teaspoons ground cumin or 1 1/2 teaspoons curry powder

Steps:

  • Preheat oven to 325°F.
  • Toss all ingredients together in a large bowl.
  • Line a baking sheet with parchment paper or foil.
  • Roast almond mixture until lightly toasted and skins are just beginning to split (about 20 minutes).
  • Let cool.

Cooking spray
1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.
