CHICKEN MANICOTTI
Very easy quick yet tasty dinner. My guest can never believe I made this myself, and my husband can't get enough.

Steps:
- In a bowl combine parmesan and ricotta cheese, chicken and spices.
- Fill each manicotti shell with mixture.
- In the bottom of a rectangular casserole dish, spread a about 1/2 cup of spaghetti sauce around.
- Now place filled manicotti shells in dish.
- Top with 4 pieces of mozzarella cheese.
- Now pour the rest of spaghetti sauce over the top.
- Place the other 4 slices of mozzarella cheese on top.
- Cover dish tightly with tin foil and bake for about 30-35 mins in a 350 degree oven.
- Take the tin foil off and bake for another 5 or 10 minutes.
- Let cool for about 10 minutes before serving.
OVEN FRIED PARMESAN CHICKEN
A coating of garlic butter, soft white bread crumbs, Parmesan cheese and parsley makes this simple oven chicken dish sassy as well!

- Preheat oven to 350 degrees F (175 degrees C).
- In a shallow glass dish or bowl, combine the crushed garlic with the melted butter or margarine. In another small bowl mix together the bread crumbs, cheese, parsley, salt and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.
- Place coated chicken pieces into a lightly greased 9x13 inch baking dish. Drizzle with remaining garlic butter and bake uncovered in the preheated oven for 1 to 1 1/4 hours, or until chicken is cooked through and juices run clear.

PARSLEY PARMESAN CHICKEN
Great OAMC recipe - I am always asked for this recipe so I decided to post it! From >>>>> cook book. I have included instructions to bake on serving day and to prebake on assembly day. I usually triple the recipe to have handy in my freezer. I like to pre-assemble and bake on serving day. **I always use chicken breasts for this recipe - Yummy!!**

- Asembly Directions - Bake on Cooking Day.
- Pour chicken parts and salad dressing into a freezer bag. Combine the parmesan cheese, dry bread crumbs, parsley flakes, paprika, salt and pepper and pour into another gallon -sized freezer bag. Put both bags into another gallon freezer bag. Seal, label, and freeze.
- To serve: Thaw marinated chicken and crumb mixture overnight in refrigerator. Remove chicken one or two at a time from marinade bag (reserve marinade) and put in crumb mixture bag - shake to coat, then place chicken in a greased 9x13 pan or on a cookie sheet. Spoon excess dressing over the chicken. Bake at 350º for 1 hour or until thickest piece is done. It is handy to foil line the baking pan to speed clean up!

LEMON CHICKEN AND PASTA BAKE - OAMC
This comes from the Dream Dinners cookbook and works very well from the freezer. This has a fairly mild flavor.

- Cook spaghetti according to package directions. Set aside.
- Combine all ingredients in a large bowl. Toss and stir to combine.
- To serve immediately:.
- Spray a 9x13-inch dish with cooking spray. Pour chicken/pasta mixture into dish. Cover with foil and bake at 350°F for 45 minutes or until heated through.
- To freeze:.
- Place mixture in a large zipper freezer bag. Seal and freeze.
- To serve:.
- Thaw in fridge. Proceed with cooking directions as above.

CREAMY CHICKEN- STUFFED BELL PEPPERS

Steps:
- Pour the sauce into a ovenproof casserole dish that will hold peppers.
- Melt the butter and a large skillet over med-high heat.
- Add the onion and saute until translucent, about 3 minutes.
- Reduce heat to med-low and add the chicken, ricotta cheese, cottage cheese, ham, Parmesan cheese and cream.
- Simmer for 10 minutes until the sauce is reduced by half.
- Stir in parsley, salt and pepper.
- Let the filling cool.
- Stuff the peppers with the filling and arrange them on the sauce in the dish. Cover the peppers with the reserved tops.
- Cover with plastic wrap and refrigerate for up to 3 days or freeze for up to 1 month.
- Preheat the oven to 350°F.
- Allow the peppers to come to room temperature.
- Bake for 45-50 minutes, until the filling is bubbly and the peppers are softened.

GARLIC PARSLEY CHICKEN

Steps:
- Place flour in a plastic bag and add the chicken, tossing the bag to coat the chicken.
- Heat 2 tbs oil over medium-high heat in a large skillet. Add the chicken to the pan and brown well on each side, about 5 minutes per side. Remove the chicken to a plate.
- Heat the remaining 1 tbs of oil to the skillet. Add the mushrooms and let them sear, stirring constantly. This should take about 3 minutes.
- Deglaze the pan with the chicken stock then add the garlic, parsley, tomato, cheese and butter. Stir until butter is melted.
- Add the chicken back to the pan and heat through. Serve immediately.
