PARMESAN SWEET POTATO WEDGES
I roast these sweet potato fries when I want a fun and different side. The crispy Parmesan coating is the best. We like mustard, but they're also great dipped in garlic aioli, barbecue sauce or even ketchup. -Amy Green, Carrollton, Texas

UMAMI BURGER WITH PARMESAN SWEET POTATO WEDGES
Umami is a distinct flavor profile - aside from sweet, sour, salty, and bitter - that can best be described as savory, incredibly flavorful, and indescribably delicious. This dish has umami in spades! We start with a miso-marinated beef burger topped with all the fixings on a toasted brioche bun. It's paired with Parmesan sweet potato wedges for that extra special something.

Steps:
- Preheat the oven to 400°F/200°C.
- Wash the sweet potato thoroughly under running water, making sure to remove any dirt. Trim off the ends.
- Cut it in half crosswise. Place each half onto a chopping board (the wide side down) and cut it into quarters. That way the potato stands on the chopping board without moving which makes it easier to cut them through. Place the quarters (thick wedges) onto a chopping board skin side down, cut each in half again and you are done!
- Transfer the wedges into a large mixing bowl. Add the rest of the ingredients and toss the wedges well making sure every single one is covered with the seasoning.
- Transfer them onto a baking tray lined with baking parchment and spread them around.
- Bake them in a preheated oven at 400°F/200°C for 20 minutes or until they are cooked through.
- Serve as a side or with a dip of your choice.

Steps:
- Place the potato wedges in a large pot, and add in the water, vinegar, and 1 tablespoon salt. Press down on the potatoes gently to make sure they're all submerged. Bring the pot to a gentle boil and continue to boil the potatoes for 10 minutes. Drain and pat the potatoes dry with paper towels. Set aside.
- Preheat oven to 400 degrees F.
- Set the butter on a large baking sheet. Transfer the baking sheet to the oven and allow the butter to melt as the oven preheats. Once the butter has fully melted, carefully remove the baking sheet from the oven.
- Sprinkle parmesan cheese evenly on top of the baking sheet. Do the same with the garlic.
- Place the potato wedges on top of the garlic and cheese layer, so that one of the skinless sides is touching the cheese. Bake for 45 minutes, or until the potatoes are lightly golden and the cheese has browned.
- As the potatoes cook, combine the parsley, lemon zest, salt and pepper in a small bowl and mix. Set aside.
- Let the potatoes sit for 5 minutes. This ensures that the cheese will stick to the potatoes instead of ripping off and staying on the pan. It's very important to leave them be so they can set.
- Using a metal spatula, break apart the cheese in-between each wedge and lift the baked cheese and wedges from the baking sheet. Plate and then sprinkle with the parsley mixture.
- Serve warm with marinara, ranch, or sauce of choice for dipping.
POTATO WEDGES
These are Potato Wedges. To me potato wedges really are the perfect side dish for barbeque or hamburgers. They are similar to french fries but the wedges are just a different cut of the potato. They are often left unpeeled too which preserves the nutritional value of potato skin. And since it is baked, rather than deep fried like french fires, the fat content is lower for this dish. Enjoy this recipe from all of us at Filipino Chow.

- Prep wedges – Scrub and rinse potatoes to get rid of any dirt. Pat dry the potatoes on kitchen towel. Cut each potatoes in half length-wise, cut each half in half again length-wise and then cut the half in half. You get 8 wedges from each potato. At this stage you can soak the potato wedges in ice cold water for 15-20 minutes and then start using them. I skipped the soaking step. Because I got beautifully crispy baked potatoes without soaking so why bother about extra step here :D.
- Season – Use a large mixing bowl and add the potato wedges and all the seasoning ingredients into the bowl and mix. Or if you are being lazy like me, then throw the wedges straight on to a baking tray, add oil and seasoning, and mix with your hands. Easy!
- Bake the best potato wedges – Arrange the wedges in a single layer on the baking tray. Pop the tray into a pre-heated oven. Bake in pre-heated oven at 400 F for 35 minutes, turning wedges half way through baking time (spray oil after turning), until golden, crisp and cooked through when tested with a fork.
