CREAMY PARMESAN SPINACH
This recipe, from Priscilla Gilbert of Indian Harbour Beach, Florida, combines fresh baby spinach with a delicious, creamy Parmesan cheese sauce. Crushed croutons top it off and give the side dish a wonderful crunch.

- Place spinach and water in a Dutch oven; cover and cook for 3 minutes or until wilted. Drain and set aside., In the same pan, melt butter. Stir in the cream, lemon zest, garlic and pepper flakes; bring to a gentle boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly reduced. Stir in cheese and spinach; heat through. Sprinkle with croutons.

I love pizza without tomato sauce or what is called White pizza. We love this! It is so good and easy!

- Mix olive oil and garlic in small microwavable bowl.
- Microwave on HIGH 30 seconds.
- Place pizza crust on cookie sheet; brush entire surface with oil mixture.
- Top with spinach, mozzarella cheese, tomato slices and feta cheese.
- Sprinkle pizza with rosemary and parmesan Bake at 450' F for 10 to 12 minutes or until cheese is melted and crust is golden.
- Let stand 5 minutes.

PARMESAN SPINACH PIZZA
I could not find a recipe for a green and white pizza, so I decided to create my own. It turned out well, so, enjoy! The red-pepper flakes add a zing that I like, but leave them off if you prefer it non-spicy.

- Preheat oven to 375.
- In a small bowl, mix olive oil, basil, parsley, nutmeg and garlic.
- Place spinach in a pile of several paper towels and wring well.
- Mix the wrung spinach and the onion into the olive oil mixture.
- Spread the spinach mixture onto the two Boboli pizza shells and top with the mozzarella cheese.
- Bake for 4 minutes, then pull it out of the oven and sprinkle with the parmesan cheese.
- Place back in oven and bake for 4-5 minutes, depending on your desired brown-ness.

- Preheat oven to 425 degrees,.
- Pat out Pizza Dough into a rectangle. about 1/2 an inch thick , cut into strips, about 12 inches long,.
- Spray with butter flavored or olive oil cooking spray. Cut strips again into 6 inch lengths. Twist and sprinkle with the mixture of Parmesan Cheese and Chives. Put on cookie sheet with parchment paper sprayed with Butter or Olive Cooking Spray.
- Use 1/4 cup of the Parmesan Cheese and 2 tbsp of the chives to coat pizza crisps. Reserve other 1/4 cup of Parmesan Cheese to mix with the Spinach and the Hidden Valley Original Ranch Dressing.
- Cook in preheated oven for about 10 minutes. Set aside and cool for 10 minutes.
- After draining the spinach, mix spinach with Hidden Valley Ranch Original dressing and 1/4 cup of Parmesan Cheese. Fold and make spinach dip. Place in serving bowl. Once the Parmesan Crisps cool slightly for 10 minutes or so, serve on side with dip on an attractive tray or platter.

PEPPER-JACK & SPINACH PIZZA PIE
I love this pretty little pizza, not just for its amazing flavors but also for how quick it is to put together. I am not a big fan of tomato sauce on pizza so this pizza is one of my favorites. The pepper-jack cheese is wonderful! I use fresh spinach; if you want to use fresh spinach, remove stems, wash well and tear into large pieces. Saute the spinach in some of the bacon fat until it begins to wilt. Squeeze dry and combine with the other ingredients, as indicated in step two. Approximately three pounds of fresh spinach will equal the amount of frozen spinach used here, but if you don't mind a pie with less spinach then one pound will suffice. WINE: A nice Australian Shiraz with its plum and blackcurrant flavors and its slight whisper of black pepper is a great accompaniment for this cheesy pizza.

- Thoroughly wash and dry spinach and remove stems.
- (I usually use the packaged, pre-washed spinach so that I don't get too much water in this dish. Otherwise, be sure to dry the leaves very, very well.) Using half the ingredients and working in batches, heat olive oil in a large skillet over moderate heat.
- Saute garlic about one minute.
- Add spinach leaves, increase heat to high, and stir until evenly wilted, about 2 minutes.
- Add salt, pepper, and tomatoes.
- Cook an additional minute.
- Stir in grated Parmesan, remove from heat, taste, and adjust seasonings.
- Serve immediately.
- If spinach releases too much water, you can drain mixture in a colander before serving.
- Taste and adjust seasonings again after draining.

CHICAGO-STYLE STUFFED SPINACH PIZZA
This is my favorite pizza. It's a little work but, to me, it's worth every minute. Another recipe that I clipped years ago from the Chicago Trib. The prep time includes the dough rising time, though it may be less if you're using quick-rise yeast, which works fine with this recipe.

Steps:
- Crust: dissolve yeast and sugar in water in a large bowl; let stand until bubbly; stir in oil then stir in 4 cups of the flour until smooth; add additional flour as needed to form a stiff dough.
- Lightly flour the work surface; knead dough until smooth and elastic, about 7 to 10 minutes; put into a greased bowl; turn to coat top then let rise, covered, in a warm place until doubled, about 1 hour.
- Sauce: heat oil in a large saucepan over medium-high heat; add garlic, cook 2 minutes; stir in tomatoes, oregano, basil, salt and pepper; simmer until very thick, about 30 minutes or so.
- Filling: mix spinach, mozzarella, mushrooms, parmesan, romano, garlic, olive oil, basil, salt and pepper in a large bowl.
- Heat oven to 450°.
- Punch down dough; let rest 10 minutes.
- Lightly oil a 12-inch pizza pan that is at least 2" deep.
- Roll two-thirds of dough into a 16-inch circle; let sides overhang the pan.
- Put the spinach mixture into center of dough; smooth evenly over the surface.
- Roll the remaining dough on a lightly floured surface to a 12-inch circle; place over the spinach filling then pinch the edges together and cut excess dough at the edges so that the bottom dough is level with the top crust.
- Pour sauce over the dough to cover.
- Bake until crust is golden, 20-40 minutes.
- Let stand 10 minutes before slicing into wedges for serving.
- Ice cold beer or root beer is great with this pizza.

DEEP-DISH SPINACH PIZZA
My husband won a pizza contest with this pizza from Jane Brody who got it from Pizzapiazza in Lower Manhattan. He won for best tasting AND best looking pizza. Hard to believe when in competition with other cheese and meat-loaded pies. This one is full of vegetables with low-fat cheeses and homemade sauce in a whole wheat crust. Baked in a springform pan, the sides allow for an attractive design of plum tomatoes and fresh basil leaves. It's definitely worth the effort.

- Crust: Proof yeast in water with sugar; in a food processor or in a bowl, mix 2 cups of the all-purpose flour, whole-wheat flour and salt; add oil to bubbly yeast mixture and stir or process into flour mixture until dough pulls away from sides of bowl.
- Scrape dough onto floured work surface and knead until smooth and elastic (or process until smooth and elastic), using up to 1/4 cup more all-purpose flour, if needed, to keep dough from sticking.
- Place dough in oiled bowl, cover with plastic wrap and allow to rise, in warm place, until doubled; punch dough down, wrap it well and refrigerate until needed.
- Sauce: In a skillet, saute onion and garlic in oil until soft; reduce heat to low and add tomatoes and their liquid; break up the tomatoes slightly and add the salt, sugar, pepper, and pepper flakes; simmer, uncovered, stirring occasionally, until very thick, about 30 minutes.
- Topping: Cook spinach in covered saucepan until wilted, about 3 minutes; drain, rinse with cold water and squeeze dry; chop coarsely; saute garlic in hot oil for 15 seconds; add spinach and cook, stirring, for 1 minute; set aside.
- In a small bowl, mix the cheeses and set aside.
- Assembling: Move oven rack to lowest position and preheat to 475°; grease a 9" springform pan and sprinkle with corn meal.
- Roll half the dough out to a 12" circle; reserve other half of dough for another use; line the bottom and sides of the pan with the dough, but don't let any dough hang over the edge; spread 1 1/2 cups of the cheese mixture over the bottom of the crust.
- Spread tomato sauce evenly over the cheese; spread spinach over the tomato sauce; sprinkle with remaining cheese; arrange the tomato slices vertically, along the side of the pie, alternating the slices with the basil leaves.
- Place the remaining tomato slices in a circle in the center, alternating with the pepper slices, interspersing red and green strips; bake for 25 minutes or until crust is golden and filling is bubbly; let set 5 minutes before removing side of pan and cutting.

- Begin by removing the outer skin of the garlic bulb. Cut the top of the garlic to expose the crowns of the cloves.
- Pre-heat oven to 400 degrees and coat the top of the exposed garlic clove with olive oil. Cover with foil and cook the garlic for 30 minutes on a baking sheet. Set to the side.
- While the garlic is cooking, pre-heat cooking pan on medium/low heat. Add 2 tbsp of butter and 2 tsp minced garlic. Slightly stir then add 1 tsp of all purpose flour and continue to stir while adding whipping cream, 1 tsp black pepper, Parmesan Cheese and 1 tsp garlic powder.
- Pre-heat separate cooking pan on medium heat and add 1 tbsp olive oil. Add fresh spinach and top with onion powder, remaining garlic powder, remaining black pepper, salt and remaining minced garlic. Cook for 2 minutes and remove from heat.
