These green beans couldn't be easier. Made in my favorite cast-iron skillet, they're seasoned with lemon zest and juice, garlic and Parmesan.

Number Of Ingredients 8

1/3 cup extra-virgin olive oil
2 tablespoons salted butter
2 pounds fresh green beans, trimmed
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1/2 cup vegetable or chicken broth
Juice and zest of 1 lemon (1 1/2 teaspoons zest; 2 1/2 tablespoons juice)
1 cup freshly grated Parmesan

Steps:

  • Heat the oil and butter in a large skillet over medium-high heat. Add the green beans and garlic and season with salt and pepper. Add the broth. Cover and cook just until the beans are crisp-tender, about 8 minutes.
  • Just before serving, stir in the lemon juice. Top with the lemon zest and Parmesan.

1 lb fresh green beans, trimmed and snapped
1 tablespoon butter
1/4 cup heavy cream
2 tablespoons grated parmesan cheese
1 teaspoon ground nutmeg
salt, to taste
ground black pepper, to taste
2 tablespoons grated parmesan cheese

Steps:

  • Bring a large pot of lightly-salted water to a boil; drop in the green beans and return to a boil.
  • Cook uncovered until the beans are bright green and barely tender, about 6 minutes; drain and set aside.
  • Melt the butter in a large skillet over medium-low heat; whisk the cream, 2 tablespoons of Parmesan cheese, and nutmeg into the melted butter.
  • Bring the mixture to a simmer.
  • Gently stir the beans into the mixture to coat; season with salt and pepper Return to a simmer, transfer to a serving dish, and sprinkle with 2 tablespoons of Parmesan cheese to serve.

When our beautiful son was young, he would eat peas, broccoli, etc. When he turned 13 years old he became convinced that "green" anything was just too "gross." This recipe is one of the few he will eat that is not fried to a crisp. My DH and I love it too! Season to your taste...i.e. salt and pepper.

1 lb fresh green beans
1 garlic clove, large and crushed
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon lemon juice
2 tablespoons olive oil
1/4 cup parmesan cheese, freshly grated

Steps:

  • "Snap" and remove the "strings" from the beans.
  • Combine the beans with enough water to cover in a saucepan.
  • Bring to a boil; reduce heat, cover and simmer for 6 to 8 minutes or until "tender-crisp.".
  • Drain and plunge the beans into a large bowl of ice water to immediately stop the cooking; drain.
  • In a large skillet, heat the olive oil to medium heat and saute the garlic, with the salt and pepper.
  • Add the lemon juice, beans and mix well.
  • Saute until all is heated through.
  • Before serving, sprinkle with the parmesan cheese.

3 tablespoons light margarine
2 tablespoons olive oil
3 -4 fresh garlic cloves, minced
4 cups fresh green beans, cut
1/2 teaspoon coarse sea salt
1/2 teaspoon fresh coarse ground black pepper
1/2 teaspoon fresh lemon juice
1/2 cup fresh parmesan cheese, shredded
1/2 teaspoon colored coarse sea salt (optional) or 1/2 teaspoon flaked sea salt (optional)

Steps:

  • In large skillet, melt margarine with oil.
  • Add garlic and saute until lightly browned.
  • Add green beans, toss to coat.
  • Season with salt, pepper, and lemon juice. Saute to desired tenderness (8-10 minutes).
  • Place in serving bowl and toss with parmesan.
  • Sprinle with colored or flaked sea salt for added flavor & beautiful presentation.

These green beans look very pretty with the red and yellow peppers added. Throw in the italian seasonings and you get a great side dish. From an Atlanta real estate company cookbook by Cathryn DuBow. The original recipe called for 1/4 cup vegetable oil, but I thought that was too much.

1 1/2 lbs fresh green beans, cut in 1-inch pieces
1/8 cup vegetable oil (I use a bit less)
1 cup yellow sweet pepper, diced
3/4 cup sweet red pepper, diced
1/4 cup onion, chopped
1 garlic clove, minced
1 teaspoon dried basil
1/8 teaspoon dried oregano
1/8 teaspoon dried whole thyme
1/8 teaspoon pepper
3/4 cup parmesan cheese, grated and divided

Steps:

  • Cook the green beans in boiling water to cover for 3 minutes; drain, and plunge into cold water. Drain well, and set aside.
  • Pour oil into a large skillet; place over medium heat until hot. Add sweet peppers, onion, and garlic, and saute for 3 minutes. Add the reserved green beans, basil, and next 3 ingredients; cover, reduce heat, and simmer for 7 minutes or until the vegetables are tender.
  • Remove from heat; stir in 1/2 cup cheese. Transfer bean mixture to a serving dish and sprinkle with the remaining 1/4 cup cheese.

2 large shallots, sliced into rings
1 lb fresh green beans, ends snipped
1 cup chicken broth
1/2 teaspoon salt
1/4 cup freshly grated parmesan cheese

Steps:

  • Melt the margarine in a non-stick skillet over medium-high heat.
  • Add the shallots and cook 10 minutes, or until golden, stirring occasionally.
  • Add remaining ingredients except for the parmesan cheese.
  • Bring mixture to a boil. Cover, reduce heat and simmer around 15 minutes or until the beans are tender.
  • Transfer to a serving dish and sprinkle with the parmesan cheese.
