ROSEMARY PARMESAN SHORTBREAD

Rosemary Parmesan Shortbread image

Provided by Claire Robinson

Categories     appetizer

Time 1h29m

Yield about 2 1/2 dozen pieces

Number Of Ingredients 7

2 cups all-purpose flour
1 cup confectioners' sugar
2 teaspoons finely chopped fresh rosemary leaves
1/2 teaspoon salt
1/2 cup finely grated Parmesan
1 cup (2 sticks) unsalted butter, at room temperature
1 teaspoon water, if needed

Steps:

  • Put the flour, sugar, rosemary, salt, and Parmesan into the bowl of a food processor and pulse until combined. Add the butter and pulse just until a soft dough forms; the dough should hold together when squeezed with your hands. If not, add the water and pulse until combined.
  • Spread a large sheet of plastic wrap on a work surface and transfer the dough onto it. Using the plastic wrap as a guide, form the dough into a loose log along 1 edge of the long side of the sheet. Roll the dough log, twisting the plastic gathered at the ends in opposite directions until the log is tight and compact, about 2 1/2 inches in diameter. Chill in the refrigerator until firm, about 1 hour.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats. Slice the dough log into 1/3-inch thick slices and arrange on the lined sheets, about 1-inch apart. Bake until the edges are just beginning to brown, 12 to 14 minutes.
  • Cool the shortbread on the pan for 5 minutes then transfer to wire racks to cool completely. Store the shortbread in an airtight container at room temperature until ready to serve.

ROSEMARY AND PARMESAN SHORTBREAD

Rosemary and Parmesan Shortbread image

I had this at a party, last year before Christmas, and spent 2+ hours looking for it...finally found it at the Washington Times website; it is a Bev Bennett recipe, and is nice and different...may be served with recipe#347481, or is great stand alone!

Categories     Savory

Time 20m

Yield 32 slices of shortbread, 8 serving(s)

Number Of Ingredients 7

1/2 cup unsalted butter, room temperature
1/2 cup shredded parmesan cheese (use the best you can...)
1/8-1/4 cup sugar (to taste, I prefer it less sweet)
3/4 cup flour
1/3 cup cornmeal (I use white)
1/4 teaspoon salt
1/4 teaspoon dried rosemary, crushed

Steps:

  • Preheat oven to 375 degrees.
  • Cream together butter, parmesan and sugar at med. speed in bowl of electric mixer. Scrape down contents.
  • Mix together flour, cornmeal, salt and rosemary in a bowl. Add to the creamed mixture, a little at a time.
  • Remove dough from bowl and form into a log approximately 9 inches long. Wrap in plastic wrap and chill for 1 hour.
  • Cut log into slices slightly wider than 1/4 inch. Place on parchment lined baking sheet.
  • Bake in pre-heated oven for 13-15 minutes or until shortbread turns faintly brown on top and light brown on bottom. Remove from oven. Cool shortbread on wire rack.
  • Makes 32 slices of shortbread. May be wrapped in heavy duty foil and frozen for 1 month. To serve, spread frozen shortbread on a baking sheet. Warm in a 325 degree oven for 5 minutes.

The sugar has been omitted from these butter-rich savory shortbread cookies and replaced with tangy Parmesan cheese! What a yummy snack! We like to eat a few of these lightly salty biscuits with a ripe juicy pear. These would also be good alongside a nice bowl of minestrone. Get authentic Parmigiano-Reggiano cheese if you can.

Time 30m

Yield 16 savory cookies

Number Of Ingredients 6

1/2 cup unsalted butter, softened

1/4 teaspoon black pepper or 1/8 teaspoon cayenne pepper
1/2 teaspoon chopped fresh rosemary (or thyme) (optional)
1 1/4 cups flour

Steps:

  • Preheat oven to 325.
  • Line an 8 inch square pan with buttered foil.
  • Beat all ingredients except flour in a mixing bowl with an electric mixer until light and creamy, 3-4 minutes.
  • Add flour and continue to mix at lowest speed until smooth dough forms.
  • Scrape dough into pan and press evenly with the back of a spoon.
  • Pierce dough randomly with a floured fork.
  • Bake 35 minutes until firm.
  • Let cool slightly then invert pan over your cutting board.
  • Remove the foil and cut the shortbread into 2 inch squares.

Number Of Ingredients 9

8 tablespoons (1 stick) unsalted butter, at room temperature
4 ounces freshly grated
Parmesan cheese
1 cup Heckers or King Arthur all-purpose flour

1/2 cup walnuts, toasted at 350°F for 10 minutes, then chopped

Steps:

  • Using an electric mixer, cream the butter; add the Parmesan, and mix well. Stir in the flour, rosemary, walnuts, salt, black pepper, and cayenne. Form the mixture into 1-inch-wide logs, wrap them in plastic, and refrigerate for at least half an hour, or up to 3 days.

Parmesan, Rosemary, and Walnut Shortbread Recipe | Epicurious.com image

Crumbly and melting, easy and irresistible, at the catering company, we keep the dough for this shortbread on hand in the freezer for in-house treats and for extra hors d'oeuvres or snacks for a party that balloons at the last minute. I first tasted this shortbread when my friend Gail Monaghan passed it around in a silver basket before a dinner party at her house. I took one bite and said, "OK, where's the pen? Hand over the recipe (there was a "please" implied): this is amazing and I need to put this in my book." She very angelically wrote it out nicely, and here it is.

Provided by @MakeItYours

Number Of Ingredients 9

8 tablespoons (1 stick) unsalted butter, at room temperature
4 ounces freshly grated
Parmesan cheese
1 cup Heckers or King Arthur all-purpose flour
1 tablespoon minced fresh rosemary
1/2 cup walnuts, toasted at 350°F for 10 minutes, then chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Pinch cayenne pepper

  • When you're ready to bake the shortbread, position a rack in the middle of the oven and preheat to 350°F. Line a baking sheet with parchment. Cut the logs into 1/4-inch-thick slices, place the slices on the baking sheet, and bake for 20 minutes, or until golden at the edges. Remove the shortbread slices and cool them on a wire rack. You can offer these by themselves passed in a basket, or top them with Sun-dried Tomato Pesto.
  • Note:
  • Buy the absolutely best Parmesan (preferably Reggiano) you can find. Ideally, get a lump and grate it yourself. Look for a chunk with rind on only one side, not two.

  • Heat the oven to 190°C/170°C fan/gas 5. Pulse the flour, baking powder, cayenne pepper and butter in a food processor until the mixture resembles fine crumbs. (If you don’t have a food processor, put the dry ingredients in a bowl and work the butter into them using your fingertips until the mixture resembles fine crumbs.) Add both cheeses and the chopped rosemary, then continue to blend until the mixture forms a dough. (If making by hand, bring the dough together with a round-bladed dinner knife.)
  • Turn the dough out onto a lightly floured surface, knead briefly, then shape into a rectangle. Wrap in cling film and chill for 15 minutes.
  • On a lightly floured surface, roll out the dough to a rectangle about 20cm x 32cm x 2mm thick. Cut the dough in half lengthways to make 2 long thin rectangles. Cut each rectangle into long triangles – you should end up with about 40.
  • Transfer the triangles to the sheets and brush each with a little beaten egg. Bake for 10-15 minutes until evenly browned. Leave to cool for a couple of minutes, then transfer to a wire rack to cool (see Make Ahead). Serve with the https://www.deliciousmagazine.co.uk/recipes/hot-buttered-rum-and-ginger-toddy/rum toddy.

  • Preheat oven to 425° F. Pulse the Parmesan and butter in food processor until mixture resembles coarse crumbs. Add flour, rosemary, walnuts, pepper and salt. Process until ingredients hold together. Divide dough into two equal halves. On a lightly floured surface, roll each half into a circle about 7-inches round and 1/8-inch thick. Cut into eight wedges. Transfer wedges to a cookie sheet. Bake until golden around edges, about 6 to 8 minutes. Remove from cookie sheet and cool on wire rack.
  • For topping, combine cranberries, sugar, water and spices in large saucepan. Bring to a boil. Reduce heat to medium and cook until mixture thickens, about 10 minutes. Stir in onions, apple and vinegar. Cook 15 minutes, stirring occasionally.
  • Do not place the topping on the cookies if they have to sit for a very long time, because they will get soggy and you want them to stay crispy. Shortly before serving, top each slice of shortbread with a spoonful of the topping and decorate with optional garnishes. Or, place the topping in a small bowl with a spoon. Put the bowl in the center of a large plate and scatter shortbread around the bowl.
