Italian Beef Soup (Brodo di Carne) image

Italian Beef Soup (Brodo di Carne) with Orzo is filled with tender, slow-cooked chuck roast, vegetables, and herbs simmered in a rich, flavorful broth. Make it even heartier by adding orzo or pastina and topping with finely grated Parmigiano-Reggiano. Cook this soup low and slow for hours, resulting in mouthwatering broth and fall-apart beef.

Number Of Ingredients 10

2 lb Chuck roast
3 carrots (cut in 2-inch pieces)
3 celery stalks (cut in half widthwise)
2 Roma tomatoes (cut in half)
½ medium onion (or one small onion, cut in half)
1 bunch parsley
2 tbsp kosher salt
3½ qt water
1 lb Orzo
Parmigiano-Reggiano

Steps:

  • Add water to a large pot or dutch oven and cook on medium heat.
  • Add kosher salt, vegetables, parsley, and beef to the pot.
  • Once the water reaches a boil, turn the heat down to low-medium and allow the soup to simmer for 4 hours with the lid on, giving the soup an occasional stir.
  • At the 3 hour mark, remove the lid and allow the soup to simmer for one more hour.
  • Once the soup is done cooking, remove the soup from the heat. Remove the onion, celery, and parsley from the soup.
  • Carefully take the beef out and place it in a large shallow bowl. Place two forks in a portion of the meat facing away from each other. Gently pull the forks in opposite directions, breaking up the meat into shards with each pull. Place the meat back into the soup.
  • Add orzo to the soup bowls, then use a ladle to serve soup to each bowl.
  • Serve immediately with finely grated Parmigiano-Reggiano.
  • As the soup finishes cooking, take large saucepan or pot and add 4 - 6 quarts of water. Bring the water to a rolling boil and add a pinch of salt. Add orzo to the pot and stir gently. Allow the water to return to a boil. Cook until al dente, or about 8-9 minutes, stirring occasionally. Drain the orzo and set aside.

3/4 cup all-purpose flour
1 1/2 tbsp garlic powder
Salt and freshly ground pepper
1 1/2 lb beef chuck roast, fat-trimmed, and cut into roughly 1 1/2 inch cubes
Private Reserve extra virgin olive oil
1 large red onion, cut into large pieces
6 garlic cloves, chopped
4-5 large rainbow carrots (about 12 oz), cut into large pieces
1 cup red wine
2 cups vegetable broth
28 oz can whole peeled tomato
4-5 sprigs fresh thyme
2 sprigs fresh rosemary
16 oz white or cremini mushrooms, cleaned and sliced

Steps:

  • Mix the flour and garlic powder together.
  • Pat the meat dry and season with salt and pepper. Dredge the meat into the flour mixture to coat.
  • In a large cast-irons skillet, heat 2 tbsp olive oil. Brown the meat deeply for about 3-4 minutes on each side; crust should form. Remove from heat.
  • Now, place the browned meat in the bottom of a large crock pot. Add the remaining ingredients except the mushrooms. Stir with a wooden spoon.
  • Cover the crock pot and cook on high for 4 1/2 hours. Add the sliced mushrooms. Cover and cook for another 30 minutes or so.
  • Enjoy with your favorite Italian bread or even homemade challah!

1/4 cup chopped onion
2 cups chopped cabbage
2 medium carrots, chopped
1 cup fresh Brussels sprouts, quartered
1 cup chopped fresh kale
1 celery rib, chopped
1 tablespoon minced fresh parsley
1/2 teaspoon pepper
1/2 teaspoon dried basil
1/4 teaspoon salt
3 cups beef stock
1 can (14-1/2 ounces) Italian diced tomatoes, undrained

Steps:

  • In a large skillet, cook and crumble beef with onion over medium-high heat, until browned, 4-5 minutes. Transfer to a 3- or 4-qt. slow cooker. Stir in remaining ingredients., Cook, covered, on low 5-6 hours or until carrots are tender. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

I find that I keep collecting more an more Mediterranean recipes. Italy isn't at the bottom of my list and that's because everything is just so good! This is no exception and it makes a big batch so you'll have leftovers if you have a smaller family. Leftovers are good as they are always better on the second day for lunch. I served with crusty multi-grain rolls and a simple green salad.

2 lbs boneless beef chuck roast
12 ounces new potatoes (the tiny ones are my favorite, halved or quartered if needed)
2 medium carrots or 2 medium parsnips, peeled and cut into 1- to 2-inch pieces
1 large onion, chopped (1 cup)
1 medium fennel bulb, trimmed and cut into 1/2-inch-thick wedges
1 teaspoon dried rosemary, crushed
1 (14 ounce) can beef broth
1 cup dry red wine or 1 cup beef broth
1 (6 ounce) can tomato paste
2 tablespoons quick-cooking tapioca
1/2 teaspoon ground black pepper
4 garlic cloves, minced
1 -2 cup basil leaves, spinach leaves (or mix them all if you like) or 1 -2 cup torn fresh escarole (or mix them all if you like)

Steps:

  • Trim fat from meat, cut meat into 2-inch pieces and set aside.
  • In a 4- to 5-quart slow cooker, combine potatoes, carrots or parsnips, onion, and fennel. Add meat; sprinkle with rosemary.
  • In a medium bowl, whisk together broth, wine, tomato paste, tapioca, pepper, and garlic. Pour over mixture in cooker.
  • Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Just before serving, stir in basil. Makes 6 to 8 servings.

I was looking for a nice and easy hot soup recipe for a cold winter day, but one that would be ready when I came home from work. I found this one in Fix-It and Forget-It Cookbook. It is so yummy and flavorful! And it couldn't be any easier! You can sprinkle Parmesan cheese on the top, or add other vegetables. We loved it just the way it is, and served with a fresh, crusty loaf of bread.... Mmm.

3 small carrots, sliced
1 small onion, chopped
2 small potatoes, diced
2 tablespoons fresh parsley, chopped
1 garlic clove, minced

1 (16 ounce) can red kidney beans, undrained
3 cups beef stock
14 1/2 ounces stewed tomatoes, with juice

Steps:

  • Do not stir.
  • Add beef stock.

1 teaspoon basil
1/2 teaspoon celery seed
1 teaspoon parsley

Steps:
