Steps:
- Place chicken between two pieces of plastic wrap and pound to 1/4″ thick, then cut into strips of about 1″ wide x 2″ long (approximately). Place chicken pieces in medium bowl with buttermilk and let sit in fridge for about an hour.
- Preheat oven to 375 degrees F.
- Set out a paper plate with flour; a bowl with Parmesan cheese, ranch dressing and bread crumbs mixed together; and another bowl with the 2 beaten eggs.
- Remove chicken strips 1 at a time from buttermilk and dip in flour, then dip into eggs, then coat with the bread crumb mix. Lay out coated chicken on a baking sheet lines with parchment paper.
- Bake for 10-12 minutes or until internal temp of 165 degrees F.
PARMESAN RANCH BAKED CHICKEN TENDERS
Steps:
- Preheat oven to 350 degrees F. and line a large baking sheet with tin foil.
- Place Parmesan, Ranch Dressing Seasoning Mix and 1 tablespoon of dried parsley leaves onto a large plate or shallow dish. Use a fork to mix ingredients well. Use another fork to dip both sides of the chicken tender in melted butter then both sides into Parmesan mixture, making sure all sides are coated well. Transfer Parmesan coated chicken tenders to foil lined baking sheet, placing 1/2 inch apart from each other. Once all chicken has been coated and placed onto baking sheet, bake for 23-35 minutes at 350 degrees F. then turn on oven's broiler and carefully watch to cook tops of chicken until browned. Each oven will be different, mine took about 3 minutes. I didn't leave the oven, just watched through the window. Once the Parmesan browns, it goes very fast, so watch carefully. Remove tenders from oven and let cool for a couple minutes before serving. Serve hot with your favorite dipping sauce.

- Preheat oven to 375°F. Line a baking sheet with foil (for easy cleanup, if desired); spray with nonstick spray. Set aside.
- Combine Corn Flakes, dry ranch dressing mix, and Parmesan cheese in a shallow dish.
- Place melted butter in a separate shallow dish.
- Use paper towels to pat the chicken dry.
- Working with one piece of chicken at a time, dip the dry chicken in the melted butter to coat, then dredge in the Corn Flakes mixture.
- Place the breaded tenders on the prepared baking sheet. Spritz lightly with nonstick spray or mist with oil (this helps them brown even more in the oven).
- Bake for about 14-15 minutes, flipping halfway through, or until chicken reaches an internal temperature of 165°F and the coating is browned and crispy.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
- Season chicken strips with salt and pepper.
- Combine flour, Italian seasoning, paprika, garlic powder, and onion powder in a resealable plastic bag. Add chicken strips and seal the bag. Shake the bag until chicken strips are well coated with the flour mixture.
- Beat eggs together in a small bowl. Combine bread crumbs and Parmesan cheese in another bowl.
- Dip each chicken strip into egg until well coated, then dip in bread crumb mixture to coat. Place on the prepared baking sheet.

I use the boxed Kellogg's cornflake crumbs for this, you can usually find them next to the Shake and Bake chicken coating mixes, if you are not able to find the boxed crumbs then you can use a processor to crush the cornflakes, reduce the baking time to 25 minutes for strips and for tenders bake only 20 minutes --- LOW-FAT OPTION use a healthy butter alternative in place of butter

- Set oven to 350 degrees F.

- Preheat oven to 400 degrees. Line a large baking sheet with aluminum foil, and fit with baking rack. Lightly spray with non-stick cooking spray. Set aside.
- On a cutting board, slice the chicken breasts into 1/2" tenders. Place sliced chicken into a resealable plastic bag. Add the Parmesan Ranch Dipping Sauce, and coat chicken well.
- In a shallow dish (a pie plate works well), add the breadcrumbs, Parmesan cheese, parsley flakes, salt and pepper. Stir together to combine.
- With a fork or tongs, add the ranch coated chicken to the breadcrumb mixture, and coat all sides. Shake off excess crumbs and place on prepared baking sheet.
- Bake chicken tenders for 18-20 minutes, until golden brown. Remove from oven, and serve with additional Parmesan Ranch Dipping Sauce.

- Preheat the oven to 500 degrees F.
- Brush 1 tablespoon of oil over each of 2 heavy large lined baking sheets. Place the buttermilk in a large bowl. Add the chicken tenders and stir to coat. Let stand at least 15 minutes and up to 30 minutes.
- Meanwhile, mash the garlic with the salt in a medium bowl. Whisk in the vinegar and then the remaining 1/2 cup of oil. Season the vinaigrette, to taste, with pepper. Transfer the vinaigrette to a small serving bowl.
- Stir the Parmesan and bread crumbs in a pie dish. Remove the chicken tenders from the buttermilk and dredge them in the bread crumb mixture to coat completely, pressing to adhere. Arrange the coated chicken tenders on the prepared baking sheets, spacing evenly. Drizzle the remaining 2 tablespoons of oil over the chicken tenders and bake until they are cooked through and golden brown, about 14-18 minutes.
- Transfer the chicken tenders to a platter and serve the vinaigrette alongside for dipping.

PARMESAN CHICKEN TENDERS
This is our family favorites. It is easy and quick to prepare. If all the ingredients are handy you can have these tenders in less than 20 minutes. I usually serve this with garlicky pasta or white rice. Try on top of green salad with your favorite vinaigrette. These are for both kids and grown-ups pleasing dish. Taste better when hot but still good cold, too.

- Season chicken tenders with salt and pepper slightly.
- In a shallow bowl combine eggs, milk, and mustard. Dump the tenders and coat them well.
- Another shallow bowl combine breadcrumbs and parmesan cheese.
- Pick up each tenders and coat with crumb mixtures.
- Heat larger non stick skillet on medium heat. Add olive oil.
- Saute the tenders 2-3 minutes each side until they are golden brown and crispy.
