PARMESAN AND PANKO ROASTED BABY POTATOES
Steps:
- Preheat the oven to 400 degrees. Line a baking sheet with tin foil then coat with cooking spray.
- Slice the potatoes in half then boil them for 7-10 minutes or until fork-tender but not cooked all the way through. Remove from the water and place on paper towels to remove excess water. Place the potatoes on the prepared baking sheet and drizzle with the olive oil then season with sea salt and freshly cracked pepper, to taste.
- Combine the panko crumbs, parmesan cheese, parsley, garlic, and paprika together in a bowl until well combined. Sprinkle the panko mixture on top of the potatoes evenly. Place into the oven and roast for 15-20 minutes or until golden brown and cooked through. Serve immediately. Enjoy.
OVEN ROASTED PARMESAN POTATOES
I have tried a lot of good roasted potato recipes, but I keep coming back to this one. I've never found one I like better! These are crispy on the outside, and soft and creamy on the inside.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
- Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.
- Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated. Sprinkle potatoes with Parmesan cheese mixture; toss to coat. Arrange potatoes, cut-side down, onto the prepared baking pan.
- Bake in the preheated oven for 15 to 20 minutes. Turn potatoes to cut-side up; continue baking until golden and crispy, about 15 to 20 more minutes. Serve with sour cream.

Steps:
- Combine flour, onion powder, granulated garlic, salt and pepper.
- Mix well.
- In separate bowl combine panko and Parmesan.
- In third bowl combine eggs and mustard.
- Take slices of tomato and dip in flour, dust off excess.
- Then dip in egg mixture, letting excess drip off.
- Finally dip in parmesan/panko mixture, pressing parmesan mixture onto slices for good coverage.
- Repeat until all slices are breaded.
- These should be stored in a single layer dusted lightly with extra crumbs.
- Heat olive oil in non-stick frying pan, over medium-high heat.
- Place 3 slices (1 order) in pan, and let cook about 1 1/2- 2 minutes on each side, until just golden brown.
- Don't flip too soon or parmesan mix will fall off.
- Serve.
CRISPY, CRUNCHY PANKO BAKED POTATO FRIES
I love crunchy fries and love panko bread crumbs. So I came up with a idea for a coating for crispy crunchy fries today when I was working with panko breading. Ingredients can be mixed up with your favorite seasonings. Also can be deep fried as well as baked.

Steps:
- Preheat oven or deep fryer to 350'.
- Add flour onto wax paper or a bowl and set aside.
- Combine in a bowl or pan, panko breadcrumbs,salt,pepper,parmesan cheese, and seasoning salt. Set aside.
- Combine in another bowl or pan, eggs and whipping cream or milk. Set aside.
- Cut potato into potato wedges or regular french fry shape. (I leave the potato peeling on).
- Dip fries into flour then into egg mixture and then into breadcrumb mixture.
- Place on a lightly greased baking sheet and baked for 30 minutes or until done.
- Turn halfway through baking.
- NOTE: If frying -- add coated fries to deep fryer and fry 10-15 minutes or until browned and tender.

PARMESAN PANKO POTATO SLICES
Steps:
- Preheat oven to 400 degrees. Wash your hands and dry. Pour 1 tablespoon of olive oil in the palm of your hand, rub olive oil over two of the potatos. Repeat with remaining olive oil, rub over remaining two potatos. Place potatos in the "bowl" section of a large serving spoon. Lay the serving spoon with the potato on a cutting board. With a serrated knife, cut slices across each potato about 1/4" apart. The bowl of the serving spoon will prevent you from cutting all the way through the other side of each potato. Note: you will be making these slices across the narrower "sides" of each potato (and not from the longer tip to tip). Finish cutting all four potatos with the slices prepared this way. As the potatos cook, the slices will separate so allow space between each potato. Place prepared potatos on a rimmed cooking sheet. Bake at 400 degrees for 40-45 minutes or until the slices look almost fully cooked. Remove from oven. In separate bowl, melt butter. Add freshly grated parmesan, Panko bread crumbs and sea salt, mix. Place about 1 heaping teaspoon of butter/parmesan/Panko/sea salt mixture between each of the potato slices. Gently push the mixture into the slices, which will fan the accordion shape. When all slices have been filled, return potatos to oven and bake for an additional 10-15 minutes or until the butter/Parmesan/Panko/sea salt crumbs are lightly browned. Enjoy!
