PARMESAN KAISER ROLLS
Received on an email from Chowhound - these look delicious! "These rolls, sometimes called Vienna rolls, are the go-to bread for a thick, juicy burger or a deli sandwich stuffed with all the fixings. This version incorporates a slightly easier shaping technique and a touch of Parmesan for an irresistible tanginess." Prep time does not include rising time, approx 2 hours.

Steps:
- In the bowl of a stand mixer fitted with a dough hook, dissolve yeast in warm water. Let sit until mixture bubbles, about 10 minutes. (If mixture does not bubble, either the liquid was not at the correct temperature or the yeast is old.)
- Add 1 1/2 cups of the flour, 1/4 cup of the Parmesan, salt, sugar, and shortening to yeast mixture and stir on low speed until just combined. Add 1 egg white and mix until completely incorporated.
- With mixer running, slowly sprinkle in remaining flour a few tablespoons at a time, until dough pulls away from the sides of the bowl in one mass, about 5 minutes. Continue mixing dough until smooth and elastic, about 8 to 10 minutes more.
- Lightly oil a large bowl with 1 teaspoon of the vegetable oil. Place dough in the bowl and turn to coat in oil. Cover with a damp towel and let rise until doubled in size, about 1 hour. Meanwhile, oil a baking sheet with remaining 2 teaspoons oil and set aside.
- After dough has risen, punch it down and turn it out onto a clean surface. Divide dough into 6 pieces (each about 4 1/2 ounces) and shape into 12-inch ropes.
- To form a roll, tie one rope into a loose knot; you want 3-inch "tails" on either side of the knot. Take the tail that is on top, wrap it underneath the knot, then push it up through the center hole. Bring the second tail over top of the knot and push it down through the center hole. The formed roll will be an elaborate knot that will look the same on top and bottom. Repeat to form 6 rolls.
- Place rolls about 3 inches apart on the oiled baking sheet, cover with a damp towel, and let rise until puffy and about 1 1/2 times larger, about 45 minutes. Meanwhile, heat the oven to 425°F and arrange one rack in the middle and the second on the bottom. Place a metal baking sheet on the bottom rack.
- Mix remaining egg white with cold water in a small bowl until evenly combined. Brush tops of rolls with egg wash, sprinkle evenly with poppy seeds and remaining 1 tablespoon Parmesan, and place on a baking sheet.
- Place ice cubes on the preheated baking sheet, and immediately place baking sheet with rolls on the upper rack. Bake until golden and internal temperature reaches 190°F, about 20 minutes. Transfer rolls to a wire rack to cool for at least 30 minutes.
GERMAN KAISER ROLLS
Steps:
- Put the flour, sugar, salt, butter, malt, milk, yeast and water into a large mixing bowl.
- Mix on the slowest speed for 3 minutes, then increase the speed and knead for 9 to 10 minutes.
- After the kneading, leave the dough in the bowl but dust it with some dusting flour and then cover the bowl with a clean kitchen towel and let rest for 20 minutes.
- Divide the dough into 9 portions of about 75g each.
- Shape each dough portion into a sphere, using the method shown in the video. This is important to create tension in the dough.
- Dust each sphere in dusting flour and cover them with a towel or linen.
- Let rest for 15 minutes.
- Use your palm to flatten each sphere, then use the method shown in the video to shape the dough into kaiser rolls.
- Put the kaiser rolls "face down" onto a linen or kitchen towel and cover them with a towel or linen.
- Let rest for 30 minutes.
- Preheat the oven to 220°C / 428°F (convection oven) or 230°C / 445°F (traditional oven).
- Place the rolls face up onto a baking sheet.
- Use a spray bottle with water to spray all rolls until they are very wet on the outside. Optional sprinkle sesame or poppy seeds on top of the rolls.
- Place the baking sheet with the rolls on the middle rack of the oven. Then create some steam by either spraying water to the walls of the oven or by using a baking pan with hot rocks on the bottom of the oven and pouring 50 ml of water in the stones.
- Bake for 20 to 25 minutes but open the oven 2 minutes before they are done to release the steam.
- Let the kaiser rolls cool completely, then eat them fresh.

Steps:
- Beat egg whites until stiff.
- Set aside.
- Combine yeast and warm water, and let sit about 5 minutes.
- Add shortening, sugar, salt and 3 cups of the flour.
- Beat with dough whisk or heavy spoon for 2 minutes.
- Fold egg whites into yeast mixture.
- Gradually add flour 1/4 cup at a time, until dough comes together and begins to pull away from bowl.
- Turn onto a floured surface.
- Knead, adding more flour as needed, for 8-10 minutes, until smooth and pliable w/ bubbles.
- Place in a lightly oiled bowl, turn to coat, and cover with damp towel.
- Let rise until double, about 1 hour.
- Punch down, cover and let rise again until double (about 45 minutes.) Punch down and turn out onto lightly oiled surface.
- Divide dough into 18 equal pieces.
- Use rolling pin to flatten each piece into a 7 inch circle.
- Fold left side to center to form a flap.
- Fold next side into center.
- Repeat all the way around 4 times to make overlapping flaps.
- Lift the first flap to ease the last flap underneath.
- Press center to seal the dough.
- Takes some work, but they look pretty when you get the technique down!
- Place rolls upside down on a well-greased baking sheet, 3 inches apart to help them keep their shape.
- Let rise 30 minutes, turn right side up, let rise 15 more minutes.
- Preheat oven to 425.
- Put a shallow pan on the bottom shelf of oven.
- Lightly brush the rolls with egg wash.
- Sprinkle with poppy or caraway seeds or coarse salt.
- Place 1 cup of ice cubes in the heated pan in oven.
- Immediately put the rolls in and bake 15 to 20 minutes until golden brown (internal temp will read 190).
- Remove and cool on racks.
KAISER ROLLS (BREAD MACHINE)

- Bread Machine Method:Place all of the ingredients into the pan of your machine, program the machine for manual or dough, and press start. About 10 minutes before the end of the final kneading cycle, examine the dough's consistency; it should be quite stiff, but not at all "gnarly;" adjust its consistency with additional flour or water, as necessary. Allow the machine to complete its cycle.
- Shaping:Transfer the dough to a lightly greased work surface, and divide it into six equal pieces. Shape the pieces into round balls, and place them on a lightly greased or parchment lined baking sheet.
- Working with one ball of dough at a time, center your kaiser stamp over the dough. Press down firmly, cutting to the bottom but not all the way through the dough. This is important; if you don't cut deeply enough, the shape disappears as the roll bakes; if you cut too deeply (all the way through), the roll will form "petals" as it rises and look like a daisy, not a Kaiser roll. KAISER ROLLS FROM KING ARTHUR FLOUR
These deli-style "bulky rolls" are perfect for over-stuffed sandwiches. Top them with sesame or poppy seeds for that authentic "bakery look" and though there are a lot of steps I found it to be pretty easy. I did get a "stamp" from KA to get the Kaiser roll look. (I did not turn them upside down as directed - wasn't sure how hard they'd be to turn over)

- In a large bowl, or the bowl of your electric mixer, combine all of the ingredients, stirring till the dough forms a cohesive mass and begins to clear the sides of the bowl.
- Knead the dough for 5 minutes, then allow it to rest for 10 minutes (which gives the dough a chance to absorb the liquid, and the gluten in the flour a chance to relax.)

KIMMELWECK ROLLS
A New York State favorite, a kimmelweck roll is a hard roll similar to a crusty Kaiser roll, sprinkled with caraway and coarse salt instead of sesame or poppy seed topping. Steps:
- Sprinkle the yeast over 1/4 cup of the lukewarm water in a small bowl; set aside to proof about 5 minutes.
- Combine the remaining 3/4 cup lukewarm water, the oil, sugar, salt, barley malt syrup or honey, and 1 egg white in a large mixing bowl.
- Stir to dissolve the sugar.
- Add 1-1/2 cups of the flour and mix until smooth; add yeast mixture and add in additional 1 1/2 cups flour.
- Turn the dough out onto a lightly floured work surface and knead the dough for 5 to 7 minutes, until smooth and elastic but still slightly tacky to the touch, adding only as much additional flour as necessary to keep the dough from sticking.
- Transfer to a large greased bowl, cover with plastic wrap, and set aside at room temperature to rise until doubled (about an hour).
- Punch the dough down, cover the bowl again, and let the dough rise a second time, for about 30 minutes.
- Return the dough to the work surface and divide it into 8 equal pieces.
- Shape each piece into a smooth round, then flatten the rounds slightly.
- Place on a parchment-lined or greased baking sheet, well spaced to allow spreading.
- Cover loosely with a towel and let rise for about 30 minutes.
- Preheat the oven to 425°F
- Combine the remaining egg white and the 1 tablespoons water in a small dish and blend.
- Brush the rolls lightly with the egg white wash.
- Score 4 crescent-shaped slits into each roll with a very sharp knife, radiating out from the center.
- Sprinkle the rolls with the coarse salt and caraway seeds and sprinkle with water.
- Bake for 5 minutes.
- Quickly open the oven door, sprinkle the rolls again with water, and close the oven.
- Bake the rolls for about 20 minutes more, until browned and crisp.
- Cool the rolls on wire racks.
- **For a Vienna Loaf:
- Follow the recipe directions for rolls with the following exceptions: After the second rise, divide the dough in half and shape each half into an oval with tapered ends.
- After the final rise, apply the egg wash and cut a 1/2" deep slit down the top of each loaf; omit the salt and caraway sprinkle, if desired.
- Bake in 400°F oven, baking for about 30 minutes more after the second spray with water (for a total of 35 minutes).
- **For Salt and Pepper Sticks: Follow the recipe directions with the following exceptions: Omit the second rise.
- Divide the dough into 13 equal pieces, roll each piece out into a 12" rope of even thickness, and space the ropes 1-1/2" apart on the prepared baking sheet.
- After the final rise, apply the egg wash, but do not make any cuts into the do dough; sprinkle with coarse sea salt crystals and coarsely ground or cracked black pepper instead of with salt crystals and caraway seeds.
- Do not spritz with water.
- Bake for about 18 minutes.
