PLANTATION PUNCH
This punch has a tradition of being served in the South, and is best made with freshly squeezed lemon and lime juices and not-from-concentrate fresh orange juice. The prep is done the night before, so you can put the whole punch together in about 5 minutes the next day. (The cooking time is actually the time the punch needs to be in the fridge overnight.)

Steps:
- The night before serving, mix the orange, pineapple, lemon and lime juices with the sugar and grenadine to dissolve the sugar.
- Place half of the chopped pineapple cubes in a 6-cup round ring mold or fluted tube cake pan.
- Pour in about 5 cups of the punch.
- Freeze until the punch is solid, at least overnight.
- Separately cover the remaining punch and pineapple cubes and refrigerate.
- When ready to serve, stir together the remaining punch, pineapple cubes and the rum.
- Pour into a punch bowl.
- Dip the outside of the ring mold in a large bowl of warm water until the frozen punch ring loosens from the mold, about 10 seconds.
- Unmold the ice ring into the punch and serve immediately.

WOODLAND PLANTATION PUNCH
This recipe was published in the LCBO's Food and Drink Magazine. Have you ever wondered about the mansion on the label of Southern Comfort bottles? It's called Woodland, a real Louisiana plantation house and the last of its kind along the great effluvial delta of the Mississippi that juts far into the Gulf of Mexico. It has been restored and transformed into a beautiful, nine-bedroom inn, filled with period antiques, and looks across the gardens at another salvage project, a century-old wooden Baptist church rescued from a nearby town. The plantation's owners, the Creppel family, have turned the church into a restaurant and bar called Spirits and it comes as no surprise that house cocktails are based on Southern Comfort. The popular flavored whiskey was invented in New Orleans in 1875. This cocktail was created by the firm's ambassador, Lou Giglio, in honour of Woodland plantation.

WEDDING PUNCH
I've made this punch for several weddings, parties and showers and it always goes over well! From the 1986 Southern Living Annual Recipes. I haven't made it with champagne, but I am sure it would be delicous that way! Take time to make the ice ring; it really makes the punch perfect! If you need to make a lot of this, you can make the punch up to the point where you chill the base and instead freeze it. I've made enough for 100 people this way with good results. Also, the original recipe calls for a 28-ounce bottle of tonic water. I just always use the full 1 liter bottle. Preparation time includes a swag on how long it takes to make the ice ring. Cooking time is just the time to combine the base, ice ring and carbonated beverage.

- Cut orange slices in half. Line bottom of a 6 1/2 cup ring mold with half of orange slices and cherries. (A Bundt pan works just fine for this although you may need more than 1 liter of ginger ale).
- Pour in a thin layer of ginger ale, and freeze until firm.
- Arrange remaining orange slices and cherries along side of ring mold, and pour in another thin layer of ginger ale. Freeze until firm.
- Pour in remainder of ginger ale and freeze until firm.
- Combine orange juice, pineapple juice, lime juice, and sugar, stirring until sugar dissolves. Chill mixture. (You can freeze here for use later).
- Just before serving, pour chilled juice mixture into punch bowl; add tonic water, champagne or additional ginger ale, and ice ring.
- If you freeze the base, let it thaw completely before making the punch.

- Preheat oven to 325 degrees F.
- Spread peaches and juice in the bottom of a 13X9 inch baking dish that has been sprayed with oil.
- Sprinkle dry cake mix over peaches, evenly.
- Do not pack into the peaches.
- Pour melted butter over the cake mix.
- Mix the coconut and pecans together and spread evenly on top of butter cake mix.
- Bake 55-60 minutes.
