- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and return pasta to pot.

- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in fettuccine, bring back to a boil, and cook pasta over medium heat until tender yet firm to the bite, 8 to 10 minutes. Drain and return pasta to pot.
- Mix butter, Parmesan cheese, salt, and pepper into pasta until evenly combined.

PASTA AND HERBED CREAM SAUCE

- In a large pot of boiling salted water add the spaghetti and cook until it is al dente. Meanwhile, in a large skillet set over moderately low heat, melt the butter, add the rosemary and cook it, stirring, for 1 to 2 minutes. As soon as the pasta is cooked, drain and add it to the pan. Add the cream, salt, pepper and nutmeg. Toss to coat and let reduce 1 to 2 minutes, gently stirring, or until lightly thickened. Add Parmesan to taste, toss to combine and transfer to serving dish. Sprinkle with parsley.

- Set a large pot filled with 5 quarts of water over high heat, cover, and bring to a boil. Add 6 tablespoons fine sea salt or 1/2 cup kosher salt. Set a colander in the sink.
- Lightly dust a sheet of pasta with semolina flour, then loosely roll into thirds lengthwise, like folding a letter. Using a sharp knife, cut noodles in 3/4-inch increments. Shake off the excess semolina, and repeat with remaining pasta sheets. Form pasta into small nests (about 3 ounces per portion) on baking sheets lined with parchment paper and dusted with semolina.
- Add 4 nests of pasta to the water and stir. (Freeze the rest of the pasta for later use.)
- Set a large frying pan over medium heat and add the olive oil, garlic, and red pepper flakes. Cook, stirring, until the garlic threatens to turn golden, about 1 minute.
- Just before the garlic begins to brown, add 1 cup pasta cooking water and increase heat to medium-high. Let the sauce simmer until it reduces by about a third.
- Cook pasta until al dente, about 3 minutes, and drain, reserving another cup of pasta water.
- Add drained pasta to the pan and toss. Add parsley, and continue cooking over medium heat for 1 minute, tossing continuously with tongs. If pasta looks dry, add a little pasta water. It should be slightly wetter than you are comfortable with, because the pasta will continue to absorb sauce even after you pull it from the heat. Taste and adjust salt as needed. Remove from heat, and serve immediately with freshly grated Parmesan.

ALMOST AS SIMPLE PASTA WITH PARMESAN, HERBS, AND FRESH GARLIC
Another family favorite that lends itself to easy variations -- tweak the taste to complement the day's main dish by your choice of herbs. You probably have all these ingredients handy in your pantry and refrigerator. I swear the kids would eat this every day if I'd make it that often. I can't personally vouch for freezing it, but I know that it reheats well in the microwave after being refrigerated. Cooking time is mainly cooking the pasta.

- Saute garlic in butter or olive oil with herbs until garlic is soft but not browned.
- Toss with hot pasta, Parmesan, salt, and pepper.
- Herb suggestions: Italian seasoning. Fresh or dried basil. Fresh or dried Rosemary. Herbs de Provence. Fresh or dried basil and oregano in combination. Fresh or dried parsley. PARMESAN HERB SEASONING
This makes wonderful little gifts. I make a huge batch up and put in sandwich bags and freeze. 1 Bag makes one of the recipes below. It is also nice sprinkled on veggies, homemade potato chips or at 1 package to a container of sour cream for a great dip.

- Place mix into 1 small thin sandwich bag.
- Tie mix into corner of bag with ribbon.

- Parmesan Herb Crescent Rolls:
- 1 can refrigerated crescent roll dough, unbaked
- 1 packet seasoning mix
- Open a can of refrigerated crescent rolls - unroll dough.
- Sprinkle dough evenly with seasoning from packet before shaping into crescents.
- Bake as directed on crescent roll package.
- Parmesan Herb Monkey Bread:
- 1 can refrigerated biscuits, unbaked (8 count)
- 1 packet seasoning mix
- 1/2 stick margarine, melted
- Cut biscuits into quarters and place in large bowl.
- Add seasoning mix to melted butter and stir well.
- Pour butter over biscuits and toss to coat very well.
- Place biscuit pieces in medium loaf pan (4 1/2 x 8 1/4")
- Bake at 350 for 20 minutes.
- Parmesan Herb Salad Dressing:
- Place 1/2 cup good quality olive oil into a jar.
- Add 1/4 cup cider vinegar.
- Add seasonings mix from packet.
- Place lid on jar and shake until blended.
- Serve over green salad.
- Makes 3/4 cup salad dressing.
