A spruced up caprese salad made with arugula, radicchio, mozzarella, tomatoes, and crispy chicken cutlets breaded with almond meal and Parmesan!

28 ounce can Tuttorosso Whole Peeled Plum Tomatoes
3 tablespoons almond meal (also known as almond flour)
2 tablespoons grated Parmesan cheese
2 teaspoons dried basil
½ teaspoon garlic powder
2 tablespoons plus 2 teaspoons extra virgin olive oil
1 pound thin sliced chicken breast cutlets
½ teaspoon salt
¼ teaspoon freshly ground black pepper
4 ounces part skim low moisture mozzarella (diced into ¼-inch pieces)
1 tablespoon plus 1 teaspoon balsamic vinegar
1 small head radicchio (chopped)
2 5- ounce bags arugula
½ cup packed fresh basil leaves (roughly chopped)

Steps:

  • Drain the tomatoes and place in a colander; rinse well. Pat dry with paper towels. Chop the tomatoes into ½-inch pieces and lay them out on a plate lined with a few sheets of towels to allow any juices to drain while you prepare the rest of the salad.
  • In a shallow bowl or plate, use a fork to combine the almond meal, Parmesan, basil, and garlic powder.
  • Season the chicken breast cutlets with salt and pepper on both sides. Dredge them in the almond meal mixture, pressing and flipping to coat both sides.
  • In a large nonstick skillet, heat 1 teaspoon olive oil over medium high heat. Add half of the chicken breast cutlets and cook until golden brown on both sides, 3 minutes per side. Transfer the cutlets to a cutting board. Add 1 teaspoon of olive oil; swirl to coat the skillet; repeat the cooking process with the remaining half of the chicken cutlets. Transfer the chicken to the cutting board and let cool slightly before chopping.
  • In a large bowl, whisk the remaining 2 tablespoons olive oil and the balsamic vinegar with a pinch of salt and pepper. Add the arugula, radicchio, basil, and toss gently to coat in the dressing. Add the tomatoes (be sure they're dry) and toss once more. Divide the salad among 4 plates and top each evenly with ¼ of the mozzarella and chicken. Serve.

1 pt cherry tomato, quartered
1 tablespoon olive oil
¼ teaspoon kosher salt

Steps:

  • Make the tomato salad: In a medium bowl, combine the cherry tomatoes with the olive oil, salt, pepper, and balsamic vinegar, and toss to coat.
  • Make the caprese chicken: Add the flour to a large plate. Beat the eggs in a large shallow bowl. On a separate large plate, mix together the bread crumbs, ½ teaspoon salt, the pepper, and garlic powder.
  • Season the chicken breasts with ½ teaspoon salt each. Dredge in the flour, then dip into the eggs, letting an extra drip off, then coat in the bread crumb mixture.
  • Heat the olive oil in a large cast iron skillet with a lid over medium-high heat. When the oil is shimmering, add the chicken in the pan and reduce the heat to medium-low. Fry the chicken, uncovered, for about 5 minutes, or until the bottom is deep golden brown. Flip the chicken and arrange the sliced mozzarella on top. Cover the pan and cook for 3 minutes, or until the mozzarella is melted.
  • Pour the tomato salad on top of the chicken breasts, letting some of the tomatoes slide into the pan around the chicken. Cover again and cook for another 2-3 minutes, until the internal temperature of the chicken reaches at least 165°F (75°C) and the tomatoes are warmed through.
  • Transfer the chicken to a platter and top with the tomatoes. Drizzle with the balsamic vinegar and garnish with the torn basil.
  • Enjoy!

Even though it is quick and easy, there is still great flavor due to the dijon, fresh thyme and parmesan. I love the lightly dressed salad which you can pile underneath each serving of chicken. If you like more dressing for your salad, by all means mix up a little extra!

1 tablespoon Dijon mustard, divided
1 tablespoon extra virgin olive oil, divided
1/2 teaspoon chopped fresh thyme
4 (6 ounce) boneless skinless chicken breast halves
salt & freshly ground black pepper, to taste
1/2 cup freshly grated parmesan cheese, divided (I've used store-bought in a pinch)
1/2 teaspoon water
4 cups packed arugula (I've also used a spring mix)
1 cup cherry tomatoes, halved

Steps:

  • Preheat the oven to 475 degrees.
  • In a small bowl, whisk 2 teaspoons of the mustard with 2 teaspoons of the olive oil and the thyme.
  • Season the chicken breasts, on both sides, with salt and pepper - then brush them all over with the mustard mixture.
  • Pat about 2 T. of the parmesan on EACH chicken breast (both sides) - it should take about 1/2 Cup total for all 4 breasts.
  • Transfer the chicken breasts to a rimmed baking sheet (I line mine with alum. foil sprayed with just a touch of Pam - for easy release and clean-up).
  • Bake the chicken on the top shelf of the oven for about 15 minutes, or until just cooked through and nicely browned.
  • Meanwhile, in a salad bowl, combine the remaining 1 teaspoon each of mustard and oil; then stir in the water.
  • Add the arugula (or spring mix lettuce) and tomatoes. Season with salt and pepper and toss well.
  • Spoon the salad onto plates, top with the chicken and serve!

4 slices firm white sandwich bread, torn into large pieces
1/2 cup grated Parmesan cheese
2 tablespoons coarsely chopped fresh parsley
Coarse salt and ground pepper
1 large egg, lightly beaten
4 boneless, skinless chicken breast cutlets (4 to 6 ounces each)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
2 tablespoons cold butter, cut into small pieces

Steps:

  • In a food processor, pulse bread, Parmesan, parsley, and 1/4 teaspoon each salt and pepper until fine crumbs form. Transfer mixture to one shallow bowl; place egg in another.
  • One at a time, dip each chicken cutlet into egg; let excess drip off, then dip into breadcrumb mixture. Press on crumbs firmly.
  • Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Cook cutlets, two at a time, adding remaining tablespoon oil for second batch, until cooked through, 2 to 3 minutes per side.
  • Wipe skillet clean. Add lemon juice and 1/4 cup water; cook over low until steaming, 1 minute. Add mustard. Remove pan from heat, and stir in butter until combined. Serve cutlets with sauce.

1/4 cup grated parmesan cheese
1 teaspoon garlic powder

8 ounces orzo pasta, cooked according to package directions

Originating in Capri, Caprese mimics the colors of the Italian flag in salad form using the now-classic combination of mozzarella, tomato and basil. Here, that trinity transforms everyday chicken cutlets into something special. Thanks to the proliferation of hothouse tomatoes (which are better enjoyed cooked than raw), this dish can be enjoyed year-round. Cocktail tomatoes, slightly larger than a golf ball and often sold on the vine, are perfect for this, but any size will work. Simple to assemble, this dish forms its own delicious pan sauce as the liquid from the cheese and tomatoes mingles with the caramelized juices from the browned chicken.

4 boneless, skinless chicken breasts (6 to 8 ounces each)
Kosher salt and black pepper

Steps:

  • Pat chicken dry. Cut a lengthwise pocket into the thick side of each breast without cutting all the way through to the other side. Season breasts inside and out using 3/4 teaspoon salt and 1/2 teaspoon pepper.
  • Stuff each breast with a quarter of the mozzarella, 2 to 3 tomato slices (depending on size) and 4 to 5 basil leaves. Enclose the filling as much as possible by pulling the chicken over the filling. (The chicken can be prepared to this point, covered and refrigerated up to 24 hours.)
  • Heat olive oil in a large 12-inch nonstick pan over medium heat. Sauté garlic, stirring, until golden, about 4 minutes. Using a slotted spoon, scoop out garlic and transfer to a paper towel-lined plate, leaving the oil in the pan.
  • Increase heat to medium-high and sauté chicken until golden on the bottom, about 6 minutes. If the breasts darken too quickly, lower heat. Flip and cook for 5 minutes, then cover and cook 2 to 3 minutes more, or until chicken is cooked through and filling is hot.
  • Using a spatula, carefully transfer chicken to a platter or four plates. Pour pan juices over the chicken. Garnish with pesto, reserved garlic and remaining basil leaves.
