12 tablespoons Parmesan cheese (shredded)

Steps:

  • Preheat oven to 400°F
  • Place each tablespoon of cheese on parchment paper or silicone lined baking sheet about 1 to 2 inches apart.
  • Bake about 3-5 minutes. Edges should be browned, but not burned.
  • Remove from oven and allow to cool on rack. Store in airtight container.

  • Preheat the oven to 400F.
  • Put 1 tablespoon cheese into each of 16 mini muffin wells.
  • Bake until golden along the outside, about 8 to 10 minutes.
  • Cool slightly, and then remove.
  • Serve.

  • NOTE: Pre-grated Parmesan cheese includes anti-caking agents which slightly increase carbs. I used the good-stuff; Parmigiano Reggiano from Costo, which I cubed and finely crumbled with a serrated metal blade, in my food processor. Yield may vary depending on whether you use store bought grated Parmesan cheese or process the cheese yourself.

Steps:

  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.
