Keto Salmon Cakes With Mustard Dill Sauce image

These Salmon Burgers With Mustard Dill Sauce are gluten-free and keto-friendly. They come together quickly and easily and make a tasty appetizer or main course.

1 pound wild caught salmon (skin removed, cut into 1/4" sized chunks)
½ cup super fine almond flour
1 scallion (minced)
2 large eggs
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon fresh dill (chopped)
2 tablespoons avocado oil
¼ cup sour cream (olive oil mayonnaise may be substituted)
1 teaspoon mustard (whole grain)
1 teaspoon fresh dill (minced)
sea salt (to taste)
fresh dill ((optional))
additional mustard ((optional))

Steps:

  • In a medium mixing bowl, mix together the salmon, almond flour, scallion, eggs, salt, pepper and dill together.
  • Using hands, form salmon mixture into eight patties , about ½ inch thick.
  • Heat a large shallow skillet over medium heat. Add avocado oil. When oil is hot, add salmon patties to skillet making sure they do not touch. (You may need to cook salmon cakes in batches.)
  • When browned, flip burgers and brown the other side. Turn heat to low and continue cooking until cooked through. Salmon should be opaque. Do not over-cook.
  • Add the sauce ingredients to a small bowl. Mix thoroughly. Taste and adjust seasonings if necessary.
  • Serve with salmon burgers. Garnish with additional dill and mustard, if desired.

1 (5 ounce) can salmon, drained and flaked
½ cup dried breadcrumbs
2 tablespoons minced onion
1 tablespoon Dijon mustard
1 egg, lightly beaten
1 teaspoon lemon juice
sea salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
¼ cup light sour cream
1 teaspoon dill weed
¼ teaspoon garlic powder
sea salt to taste

Steps:

  • Mix salmon, breadcrumbs, onion, Dijon mustard, egg, and lemon juice together in a bowl; form into 2 patties.
  • Heat olive oil in a skillet over medium-high heat. Cook patties in the hot oil until lightly browned and cooked through, 4 minutes per side; season with sea salt and black pepper.
  • Mix sour cream, dill, garlic powder, and sea salt together in a bowl; serve alongside salmon patties.

1 (8 ounce) can salmon
2 tablespoons bell peppers
1/2 cup celery
1 teaspoon Old Bay Seasoning
1/2 teaspoon white pepper
2 eggs
6 Nabisco Triscuits
1/2 cup vegetable oil

Steps:

  • Pour oil in a teflon coated skillet and heat to 200 degrees.
  • Drain salmon.
  • Grind Triscuits in food processor, place on a plate for breading patties.
  • Add rest of ingredients to food processor with steel blade.
  • Pulse for 15 seconds.
  • Refridgerate ingredients for 30 minutes.
  • With a large serving spoon, gently scoop out a portion of the salmon mixture.
  • Gently roll in breading.
  • Gently place in oil.
  • Continue adding portions into the oil.
  • Saute until brown and patties are firm- about 5 minutes.
  • Smaller portions can be made for appetizers.
  • Serve with tartar sauce or favorite sauce that is low carb such as fresh dill mixed with sour cream.

14 3/4 ounces salmon, drained
1/2 cup pork rind (finely ground)
1/4 cup minced onion
2 teaspoons lemon juice
2 teaspoons parsley flakes
1 minced garlic clove
2 large beaten eggs
3 tablespoons mayonnaise

Steps:

  • Mix all ingredients and refrigerate for 1/2 hour -(optional, but they handle easier).
  • Make into 4 patties and cook until browned on either side turning once.
  • I make a double batch and freeze part of it in flattened patties in zipper bags, and just thaw in the microwave, then fry.
  • Also good as a sauce on them: mix 1 part blue cheese dressing to 1 part horsy mustard, or Jack Daniels mustard, or some kind of flavored mustard -- it is yummy!
