Parmesan Chicken with Cherry Tomato Salad image

Time 50m

Yield 4-6 servings

Number Of Ingredients 10

1 lb boneless, skinless chicken thighs or breasts (around 6 pieces)
½ cup all-purpose flour
2 eggs
1 cup panko breadcrumbs
1 cup shredded parmesan cheese
7 tablespoons olive oil
12 oz cherry tomatoes, quartered

Salt and pepper

Steps:

  • Spread flour on shallow dish. Beat eggs in second shallow dish. Combine breadcrumbs and cheese in third shallow dish. Pat chicken dry with paper towels and season with salt and pepper. • Meanwhile, toss tomatoes, garlic, basil and remaining 1 tablespoon oil together in a bowl and season with salt and pepper to taste. Transfer chicken pieces to individual plates and top with cherry tomato mixture.
  • Serve and enjoy!

PARMESAN CHICKEN BREAST WITH TOMATO AND HERB SALAD

Parmesan Chicken Breast With Tomato and Herb Salad image

For better weeknight chicken, dredge it in flour loaded with freshly grated Parmesan and shallow-fry it. The cheese works to create a sort of frico, so you don't need bread crumbs for a deeply flavorful crust. While you could make this entirely on the stovetop, you risk overcooking the Parmesan, and under- or overcooking the meat. Instead, finish it in the oven, which yields a juicy, tender breast and keeps the Parmesan from getting too dark. Serve with perfectly ripe beefsteak and cherry tomatoes, jumbled together with salt and herbs and a splash of vinegar to make the tomatoes pop.

Provided by Sarah Copeland

Categories     dinner, weekday, poultry, main course

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 1/2 pounds ripe beefsteak or heirloom tomatoes, cut into wedges (or halved if small)
1 pint cherry tomatoes, halved
1 tablespoon sherry or cider vinegar
1 teaspoon kosher salt, plus for seasoning
1/4 teaspoon black pepper, plus more for seasoning
6 ounces Parmesan
1 cup flour
2 large eggs, well beaten
4 skinless, boneless chicken breast, halved (about 1/2-inch thick)
3 tablespoons canola or grapeseed oil
2 tablespoons thinly sliced basil
1/4 cup finely chopped parsley

Steps:

  • Toss together tomatoes, vinegar, salt and pepper in a bowl, and set aside. Heat the oven to 425 degrees with a rack in the lowest position.
  • Make the chicken: Line a baking sheet with parchment paper. Finely grate half the Parmesan on a box grater. Grate the remaining half on the larger side of the box grater. Add both to a shallow bowl along with 1/2 cup flour, and whisk together. Put the remaining 1/2 cup flour in another shallow bowl, and the beaten egg in another.
  • Season the chicken generously with salt and pepper. Dip the chicken breasts, one at a time, into the flour. Shake off any excess and dip into the eggs, turning to coat evenly. Shake off the excess and dip into the Parmesan mixture, pressing to adhere and holding the chicken gently by the ends to keep the coating intact. Transfer to the lined baking sheet.
  • Heat 2 tablespoons oil in your largest ovenproof skillet. When the oil is shimmering, lay the chicken breasts in the pan, in batches if needed. Cook without moving until the coating on the bottom is deeply golden brown and releases easily from the pan, 5 to 6 minutes. Carefully flip the breasts and cook until the other side is just golden on the outside, about 3 minutes more. Transfer the skillet to the oven (or transfer the chicken to a separate baking sheet if needed for space) and cook until the juices run clear and an instant-read thermometer inserted into the thickest part of the chicken registers 165 degrees, 4 to 6 minutes more, depending on the thickness of each breast.
  • Sprinkle the herbs over the tomatoes, and drizzle with the remaining 1 tablespoon oil; serve alongside the chicken.

PARMESAN CHICKEN W/CHERRY TOMATO SALAD ATK

Parmesan Chicken w/Cherry Tomato Salad ATK image

Why this recipe works: we enjoy the old classic Chicken Parmesan bet felt that it was ready for a little freshening up. So for this recipe, we swap in panko bread crumbs combined with a little Parmesan cheese for the traditional bread-crumb coating, and we top the chicken cutlets with a bright cherry tomato and basil salad instead of the usual marinara sauce. Shred the Parmesan on the large holes of a box grater. Sprinkle with additional shredded Parmesan before serving, if desired.

Provided by wishfulcooking

Categories     Main Dish

Time 30m

Yield 6

Number Of Ingredients 10

1/2 cup All purpose flour
2 large Eggs
1 cup panko bread crumbs
1 cup Parmesan cheese shredded
4 thin-cut* boneless chicken breasts skinless (approx 1 lb)
Salt & pepper
7 tablespoons Olive oil
1 pint Cherry tomatoes quartered
1 Garlic cloves minced
2 tablespoons fresh basil finely chopped

Steps:

  • 1. Spread flour in shallow dish. Beat eggs in second shallow dish. Combine panko and Parmesan in third shallow dish. Pat chicken dry with paper towels and season with salt and pepper. One at a time, dredge cutlets in flour, dip in eggs, and coat with panko mixture, pressing to adhere. 2. Heat 3 tablespoons oil in large nonstick skillet over medium heat until shimmering. Cook 2 cutlets until golden brown and crisp, about 2 minutes per side. Transfer to paper towel-lined plate. Repeat with additional 3 tablespoons oil and remaining cutlets. 3. Toss cherry tomatoes, garlic, basil, and remaining oil in bowl, and season with salt and pepper. Transfer cutlets to individual plates and top with cherry tomato mixture. Serve. *Place each chicken breast on a cutting board and, placing one hand on top of the breast to hold it steady, use a chef's knife to slice the meat in half horizontally. If you want thinner cutlets, cover each piece with plastic wrap and pound to your desired thickness. To make cutting the soft meat a little easier, you can freeze it until firm but not completely frozen, about 20 minutes.

CHERRY TOMATO AND WHITE BEAN SALAD

Cherry Tomato and White Bean Salad image

This simple salad makes a bright, tangy companion to grilled meat or fish. Marinating the red onions and garlic in the vinaigrette for 15 minutes not only diffuses their flavor but also softens their bite. This salad travels well and would be an excellent choice for a potluck or picnic. It's also supremely versatile, and can be dressed up with any soft herb like basil, tarragon or mint, and chile, in almost any form.

LEMON AND GARLIC CHICKEN WITH CHERRY TOMATOES

Lemon and Garlic Chicken With Cherry Tomatoes image

This is a summery dish to make in the middle of a cold winter (or early spring), but you can find decent cherry tomatoes even now, from Florida or from Mexico. I marinate the breasts in lemon juice, olive oil, garlic and rosemary before I pound them. This makes them very flavorful, a great savory contrast to the sweet tomato topping.

Provided by Martha Rose Shulman

Categories     dinner, quick, main course

Time 30m

Yield Serves 4

Number Of Ingredients 13

2 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
2 garlic cloves, minced or pureed
1 teaspoon chopped fresh rosemary
Salt and freshly ground pepper to taste
2 boneless skinless chicken breasts (most weight 8 to 10 ounces)
1/4 cup dry white wine
2 heaped cups cherry tomatoes, - about 3/4 pound
Pinch of sugar
2 tablespoons all-purpose flour or a gluten- free flour such as rice flour or corn flour
2 tablespoons grapeseed, sunflower or canola oil
1 tablespoon chopped flat-leaf parsley
1/4 cup freshly grated Parmesan (optional)

Steps:

  • Stir together the olive oil, lemon juice, garlic, rosemary, and salt and pepper in a large bowl. Cut each chicken breast into 2 equal pieces (3 if they weigh 12 ounces or more) and place in the bowl. Stir together and refrigerate 15 to 30 minutes.
  • Remove chicken from marinade and pat dry with paper towels (discard marinade). Place two sheets of plastic wrap (1 large sheet if you have extra-wide wrap) on your work surface, overlapping slightly, to make 1 wide sheet, and brush lightly with olive oil. Place a piece of chicken in the middle of plastic sheet and brush lightly with oil. Cover the chicken with another wide layer of plastic wrap. Working from the center to the outside, pound chicken breast with the flat side of a meat tenderizer until about 1/4 inch thick. (Don't pound too hard or you'll tear the meat. If that happens it won't be the end of the world, you'll just have a few pieces to cook.) Repeat with the remaining chicken breast pieces.
  • Season the pounded chicken breasts with salt and pepper on one side only. Dredge lightly in the flour (you will not use all of it) and tap the breasts to remove excess.
  • Turn oven on low. Heat a wide, heavy skillet over high heat and add oil. When oil is hot, place one or two pieces of chicken in the pan - however many will fit without crowding. Cook for 1 1/2 minutes, until bottom is browned in spots. Turn over and brown other side, about 1 1/2 minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and keep warm in the oven. If there is more than a tablespoon of fat in the pan, pour some off into a jar or bowl.
  • Turn heat on burner down to medium-high. Add wine to pan and stir with a wooden spoon to deglaze. Add cherry tomatoes and cook, stirring often or tossing in the pan, until they begin to shrivel and burst. Add sugar and salt and pepper to taste and continue to cook, tossing the tomatoes in the pan and stirring often, for 5 to 10 minutes, until tomatoes have collapsed but are still intact. Top chicken breasts with the tomatoes, sprinkle with parsley and with Parmesan if using, and serve.
