PARKER HOUSE ROLLS

Parker House Rolls image

Provided by Bobby Flay

Categories     dessert

Time 2h45m

Yield about 24 rolls

Number Of Ingredients 8

1 1/2 cups milk
1 stick unsalted butter, cut into pieces, plus more for brushing
1/2 cup sugar
1 package active dry yeast
1/2 cup warm water
3 large eggs, lightly beaten
1 1/2 teaspoons salt
6 cups all-purpose flour

Steps:

  • Place milk in a small saucepan and bring to a simmer. Remove from the heat, stir in the butter and sugar and let cool. Dissolve yeast in warm water and let sit until foamy. Combine milk mixture, eggs, yeast, salt, and 1/2 of the flour in a mixer with the dough attachment and mix until smooth. Add the remaining flour, 1/2 cup at a time, and stir until a smooth ball forms.
  • Remove from the bowl and knead by hand on a floured surface for about 5 minutes. Place in greased bowl, cover, and let rise in a warm place until doubled in bulk, about 60 to 70 minutes. On a floured surface, punch down the dough and shape into desired shapes. Place on a parchment paper-lined baking sheet. Cover again and let rise until doubled, about 30 to 40 minutes.
  • Preheat the oven 350 degrees F.
  • Bake for about 20 minutes or until golden brown. Remove from the oven and brush with melted butter before serving.

This recipe was from the Omni Parker Hotel in Boston. I believe it was published in our local newspaper. I've made it for several dinner parties and its very tasty. Prep time is marinating time.

Categories     Canadian

Time 2h15m

Yield 4-6 serving(s)

Number Of Ingredients 11

6 (8 ounce) cod fish fillets or 6 (8 ounce) haddock fillets
1 cup milk
1 teaspoon fresh lemon juice
2 teaspoons Worcestershire sauce
salt
pepper
1/2 cup olive oil
2 teaspoons paprika
1/4 lb buttery cracker, finely crushed
1/2 lb melted butter
1/2 cup white wine

Steps:

  • Marinate fish fillets in milk, lemon juice, Worcestershire sauce, salt, pepper, olive oil, and paprika for at least two hours (the longer the better).
  • Preheat oven to 400°F.
  • Remove fillets from marinade and roll in cracker crumbs, covering completely.
  • Place in baking pan, (I usually spray with non stick spray) and drizzle with melted butter.
  • Pour white wine into pan, but not directly over the coated fish.
  • Bake until flaky, approx 10-15 minutes.
  • If necessary, place pan under broiler for a few minutes to give top of fish a little color.

PARKER HOUSE SCHROD (FRESH CATCH OF THE DAY)

Parker House Schrod (Fresh Catch of the Day) image

Serving suggestion: boiled or roasted new potatoes, a green vegetable, a wedge of lemon and a dozen Parker House Rolls

Provided by Food Network

Categories     main-dish

Time 27m

Yield 6 servings

Number Of Ingredients 17

6 (8-ounce) fillets baby cod or haddock
1 cup milk
1 teaspoon lemon juice
2 teaspoons Worcestershire sauce
Salt
Pepper
1/2 cup olive oil
2 teaspoons paprika
1/4 pound buttery, flaky crackers, finely crushed
1/2 pound melted butter
1/2 cup white wine
6 cups all-purpose flour (about)
1/2 cup sugar
2 teaspoons salt
2 packages active dry yeast
1 cup margarine or butter (2 sticks), softened
1 large egg

Steps:

  • Marinate fish in milk, lemon juice, Worcestershire sauce, salt and pepper, olive oil, and paprika for 2 hours (the longer the better).
  • Preheat oven to 400 degrees F.
  • Remove from marinade and dip each fillet into cracker crumbs. Cover all surfaces well. Place fillets in buttered baking pan. Drizzle with melted butter.
  • Pour white wine into pan, being sure not to drizzle directly onto fish. Bake until flaky, approximately 10 minutes. Do not overcook. Place under broiler for a few minutes to finish and give color.
  • In a large bowl, combine 2 1/4 cups flour, sugar, salt, and yeast; add 1/2 cup margarine or butter (1 stick). With mixer at low speed, gradually pour 2 cups hot tap water (120 degrees F to 130 degrees F.) into dry ingredients. Add egg; increase speed to medium; beat 2 minutes, scraping bowl with rubber spatula. Beat in 3/4 cup flour or enough to make a thick batter; continue beating 2 minutes, occasionally scraping bowl. With spoon, stir in enough additional flour (about 2 1/2 cups) to make a soft dough.
  • Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 minutes, working in more flour (about 1/2 cup) while kneading. Shape dough into a ball and place in greased large bowl, turning over so that top of dough is greased. Cover with towel; let rise in warm place (80 to 85 degrees F.) until doubled, about 1 1/2 hours. (Dough is doubled when 2 fingers pressed into dough leave a dent.)
  • Punch down dough by pushing down the center or dough with fist, then pushing edges of dough into center. Turn dough onto lightly floured surface; knead lightly to make smooth ball, cover with bowl for 15 minutes, and let dough rest.
  • Preheat oven to 400 degrees F.
  • In 17 1/4-inch by 11 1/2-inch roasting pan, over low heat, melt remaining 1/2 cup margarine or butter; tilt pan to grease bottom.
  • On lightly floured surface with floured rolling pin, roll dough 1/2 inch thick. With floured 2 3/4-inch round cutter, cut dough into circles. Holding dough circle by the edge, dip both sides into melted margarine or butter pan; fold in half. Arrange folded dough in rows in pans, each nearly touching the other. Cover pan with towel; let dough rise in warm place until doubled, about 40 minutes.
  • Bake rolls for 15 to 18 minutes until browned.

BEST BOSTON CREAM PIE

Best Boston Cream Pie image

Famous for having been created at the Parker House Hotel in Boston Massachusetts. Adapted from Your Guide to Boston, Mass. A little history: The Omni Parker House Hotel is a hotel in Boston, Massachusetts, currently owned by Omni Hotels and named the Omni Parker House. Not far from the seat of the Massachusetts state government, it has long been a frequent rendezvous for politicians. The Parker House is known for having invented American foods such as Boston cream pie and the Parker House roll, and for having coined the term "scrod". The Omni Parker House currently has 551 rooms and suites that underwent an $80 million renovation completed in 2000. The Parker House opened in 1856. Many well-known people have worked at the Parker House, including Ho Chi Minh who was a baker in the bakeshop from from 1911 to 1913, Malcolm X who was a busboy in the early 1940's, and Emeril Lagasse. John F. Kennedy announced his candidacy for Congress in the hotel's Press Room, proposed to Jackie Kennedy, as well as held his bachelor party here. The hotel was home to the Saturday Club, also referred to as the Saturday Night Club, which consisted of literary dignitaries such as Henry Wadsworth Longfellow and Ralph Waldo Emerson.

SCROD | LEXICON - NEW ENGLAND TODAY
The American Heritage Dictionary calls scrod “a young cod or haddock, especially one split and boned for cooking.” Most of New England disagrees with this definition of scrod, saying that it isn’t a fish at all, though what a scrod is seems to be all over the map. Boston’s Parker House says the term was invented there (along with Parker House rolls and Boston …
