PARSNIP PANCAKES WITH SMOKED FISH AND CAPER SOUR CREAM

Parsnip Pancakes With Smoked Fish and Caper Sour Cream image

ZWT6 Scandinavia. The sweetness of the parsnips is complemented by the saltiness of the smoked fish, but it's the caper sour cream that makes the whole dish come together. From Flea St. Cafe, these vegetable pancakes are on the menu for breakfast, lunch and dinner. Recipe by Jesse Cool on http://www.foodandwine.com.

Time 40m

Yield 16 pancakes, 4 serving(s)

Number Of Ingredients 13

3/4 cup sour cream
1/2 cup plus 2 tablespoons grated red onion, plus 2 tablespoons minced red onion, for garnish
2 tablespoons chopped dill
2 tablespoons drained capers
4 large parsnips, peeled and grated
1 large baking potato, peeled and grated
1 large egg, beaten
2 tablespoons all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
vegetable oil, for frying
6 -8 ounces sliced smoked fish fillet, such as sable or 6 -8 ounces salmon

Steps:

  • In a small bowl, combine the sour cream with 2 tablespoons of the grated red onion, 1 tablespoon of the dill and the capers; cover and refrigerate.
  • In a colander set in the sink, combine the remaining 1/2 cup of grated red onion with the parsnips and potato. Let stand for 15 minutes, then squeeze to remove any excess liquid.
  • Transfer the parsnip mixture to a medium bowl and add the egg, flour, baking powder, salt and pepper. Mix thoroughly.
  • Preheat the oven to 300°. Heat 1/8 inch of vegetable oil in a large cast-iron skillet.
  • Drop rounded tablespoons of the pancake batter into the skillet, spacing them evenly and pressing lightly to flatten.
  • Cook the pancakes over moderate heat until browned and crisp, about 4 minutes per side.
  • Drain the pancakes on a paper towel-lined platter, then transfer them to a baking sheet and keep warm in the oven.
  • Arrange 4 pancakes on each plate.
  • Place 1 1/2 to 2 ounces of the smoked fish and a dollop of caper sour cream alongside. Garnish with the remaining dill and minced red onion and serve.

'CHOUCROUTE' OF FISH

'Choucroute' of Fish image

This is a riff on a classic choucroute garni - usually a mess of smoked and fresh meats with sauerkraut - made primarily with fish, but with the addition of ham or bacon. Smoked fish is key here; salmon adds beautiful richness and color, and any white fillet completes the picture. Serve this dish with buttered rye croutons instead of the traditional boiled potatoes for more flavor and crunch.

Categories     weekday, main course

Time 1h

Yield 4 servings

Number Of Ingredients 17

8 tablespoons (1 stick) butter
2 cups rye-bread cubes
1 pound sauerkraut, rinsed and drained
4 ounces chopped smoked ham or slab bacon
1 teaspoon juniper berries, crushed
1 teaspoon caraway seeds
1 teaspoon fresh thyme, or 1/2 teaspoon dried
3 bay leaves
1 cup white wine, not necessarily bone-dry
1/2 to 3/4 pound white-fleshed fillet, like halibut
1/2 to 3/4 pound smoked trout or haddock
1/2 to 3/4 pound skinned salmon
Salt and pepper
1 shallot, minced
1/2 cup cream
Juice of 1 lemon
Chopped fresh parsley for garnish

Steps:

  • Heat the oven to 300. Melt 2 tablespoons of butter. Put the rye-bread cubes on a rimmed baking sheet, and toss with the melted butter. Bake, stirring occasionally, until golden and crisp, 15 to 20 minutes.
  • Meanwhile, put the sauerkraut, ham, juniper, caraway, thyme, bay leaves and all but 2 tablespoons of the wine in a Dutch oven over medium-high heat. When the mixture bubbles, lower the heat to a simmer and cover. Cook, stirring occasionally, for 40 minutes. Lay the fish on top, sprinkle with salt and pepper and cover the pot. The fish will be tender in about 10 minutes.
  • As the fish cooks, put the shallot and the remaining 2 tablespoons wine in a small saucepan over medium-high heat; cook until the liquid has almost evaporated, about 5 minutes. Turn the heat to low, and stir in the cream. Add the remaining butter, a little bit at a time, stirring constantly. Once the mixture is creamy, stir in the lemon juice and some salt and pepper; keep the mixture warm over the lowest possible heat.
  • When the fish is tender, spoon it and the sauerkraut onto a platter; pour the sauce over all, scatter the croutons on top and around, garnish with the parsley and serve.

  • Foie gras on toast. Whether you are celebrating Christmas in France, or just a regular evening with friends, foie gras is an incontournable (an essential).
  • Huitres – Oysters. Another classic French appetizer is oysters, especially if you are trying to add a touch of je ne sais quoi and elegance to your party.
  • Smoked Salmon Canapés. France produces over 32000 tons of smoked salmon every year, so you can see how popular it is. For a Blini au Saumon, take a blini and top it with a dollop of cream cheese.
  • Tartine de fromage blanc. Fromage blanc is a light cheese originating in the north of France. It is a light cheese that can be spread across small pieces of toast.
  • Escargots. Rather than being squeamish, if you have ever had escargots, you know that they are actually a delight. Usually served drenched in garlic butter and pesto (or the French pistou), the little balls of meat easily go down.
