We were invited to a BBQ by our neighbour and someone brought along this delicious skewered chicken and mango dipping sauce. Being the foodie that I am and loving the taste of the fruit, chicken and dipping sauce I pleaded for the recipe.

1 large mango, peeled
1/4 cup plain yogurt
1 jalapeno pepper, seeded and coarsely chopped
1 lime, juice of
1 green onion, coarsely chopped
salt, to taste
1/2 fresh ripe pineapple, peeled and cut into chunks. (Tinned will work too)
3 boneless skinless chicken breasts, cut into cubes
2 small green bell peppers, cut into chunks (or 1 red and 1 green)
1 small red onion, cut into chunks
1/2 teaspoon salt
fresh coarse ground black pepper, to taste
nonstick cooking spray (if needed)
6 bamboo skewers, soaked in cold water for at least 30 minutes

Steps:

  • To prepare dipping sauce place mango in a food processor or blender, add yogurt, jalapeno, lime juice, green onion and salt.
  • Pulse until smooth and refrigerate until needed.
  • Thread cubed chicken, pineapple, green peppers and red onion onto the soaked bamboo skewers sprinkling with salt and pepper.
  • Heat BBQ or charcoal grill to medium heat and spray with cooking oil if needed.
  • Place skewers on grill and cook 5 to 7 minutes per side turning as needed until the chicken is thoroughly cooked.
  • Serve with the dipping sauce.

This recipe is easy to prepare, tastes great, and the flavors are so well blended! The sauce is tangy and sweet and reminds me of the Caribbean. The recipe calls for broiling the chicken, but you could also grill it.

2 tablespoons olive oil
1 onion, diced (about 1 cup)
1 red pepper, diced (about 1 cup)
3 garlic cloves, coarsely chopped
1 teaspoon salt
fresh ground black pepper
1/2 teaspoon ground allspice
1/3 cup red wine vinegar
3 tablespoons molasses
2 tablespoons Worcestershire sauce
2 tablespoons lime juice
1/4 cup low-sodium tomato sauce
1 mango, diced (about 1 1/2 cups)
2 -3 jalapenos, minced
2 boneless skinless chicken breasts (about 3/4 pound each)

Steps:

  • Heat the oil in a medium-sized skillet over medium-high.
  • Add the onions and cook until translucent, about 2 minutes.
  • Add the red peppers, garlic, salt and pepper, and allspice and cook for 2 minutes more.
  • Stir in the vinegar, molasses, Worcestershire sauce, lime juice and tomato sauce and cook for 1 minute more.
  • Transfer the mixture into a bender and add the mango and jalapeño.
  • Blend until smooth.
  • Put 1 cup of the barbecue sauce into a sealable plastic bag with the chicken and marinate for 1 hour.
  • Preheat the broiler.
  • Put the chicken on a broiler pan and discard the marinade.
  • Broil the chicken on high for about 12 minutes, turning once.
  • Let the meat rest for 10 minutes before slicing.
  • Spoon about 1/2 cup of barbecue sauce over the meat slices and serve.
  • **Cook time doesn't include marinating the chicken in the mango barbecue sauce for an hour.

4 boneless skinless chicken breasts
1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 jalapeno pepper, seeded and minced

1/2 cup reduced-sodium chicken broth
1/2 cup orange juice
1 tablespoon brown sugar
1 teaspoon cornstarch
1 cup diced mango
2 tablespoons lime juice

Steps:

  • Heat olive oil in a large skillet over medium heat.
  • Trim visible fat from chicken breasts.
  • Combine flour, salt and pepper in a bowl, dredge each chicken breast in the flour mixture and place into skillet.
  • Cook until no longer pink in center, 4 to 5 minutes on each side. Transfer to a plate and cover to keep warm.
  • Add jalapeno, garlic and ginger to the pan, stirring until softened (1 to 2 minutes).
  • Add broth and stir for an additional minute.
  • Mix orange juice, brown sugar and cornstarch in a small bowl; add to the pan and stir until thickened (about 4 minutes).
  • Stir in mango and cook until heated through (about 1 minute).
  • Remove from heat and stir in lime juice. Spoon sauce over chicken and season with cilantro.

8 ounces uncooked rigatoni pasta
1 tablespoon olive oil, divided
2 skinless, boneless chicken breast halves - cubed
1 onion, sliced and separated into rings
1 green bell pepper, cut into thin strips
3 cloves garlic, minced
1 teaspoon fresh ginger, minced
1 mango - peeled, seeded, and chopped
1 cup heavy cream
salt and pepper to taste
1 tablespoon grated Parmesan cheese
4 sprigs fresh parsley, for garnish

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rigatoni pasta, cook for 8 minutes, until almost done, and drain.
  • Heat 1/2 the olive oil in a large skillet over medium heat. Place chicken in the skillet, and cook 10 minutes, or until juices run clear. Remove from heat, and set aside.
  • Heat the remaining olive oil in the skillet, and cook the onion and green pepper until tender. Mix in the garlic, ginger, and mango, and continue to cook and stir 5 minutes, or until mango is soft. Gradually mix the heavy cream into the skillet, and cook 5 minutes, until thickened.
  • Return the chicken to the skillet. Stir in the partially cooked pasta, and season with salt and pepper. Cook and stir 2 minutes, until ingredients are well blended and pasta is al dente. Mix in the cheese. Garnish with parsley to serve.

Coconut Chicken With a Tropical Mango Rum Sauce image

I made this for Ready Set Cook 2006. This Easy, Sweet, Caribbean recipe consist of chicken strips coated with coconut and fried with a warm rum mango sauce with a little kick. Scotch Bonnet Pepper are very HOT! Be careful not to get in your eyes. Best to wear gloves when handling. Serve over rice for a main meal or as appetizers.

1/2 cup cornstarch
1/2 teaspoon grated nutmeg
1/2 teaspoon black pepper
1/4 teaspoon salt
1 1/2-2 lbs chicken breasts, cut into strips
1/4 cup rum
2 large mangoes, peeled and diced
1/2 teaspoon grated nutmeg
1/2 teaspoon grated cinnamon
1/3 cup packed light brown sugar
1 large fresh lime juice, and zest or
1 large fresh lemon juice, and zest
1 teaspoon fresh grated ginger

1/2 teaspoon scotch bonnet pepper (optional)
3 egg whites
2 1/2 cups grated coconut
oil, to fry

Steps:

  • Mix the first 4 ingredients together in a large container with a top. Add chicken pieces, toss till coated and set aside.
  • Place all Mango Rum Sauce ingredients in a blender or food processor and blend till smooth. Add to a pot and simmer over low heat for 10 minutes. Keep warm.
  • Whisk egg whites till frothy. Toss in chicken pieces till coated.
  • Place coconut in a bowl and dip each piece of chicken to coat with coconut.
  • Set aside.
  • Place enough oil to cover bottom of a large pan by 1/2 inch and heat to medium high.
  • Cook 1/2 the chicken at a time about 4-5 minutes each side. Do not over crowd the pan.
  • Drain cooked chicken on paper towels.
  • Place chicken on a serving platter serve with Mango Rum Sauce.

1/4 to 1/2 cup heavy cream
3/8 cup chopped raisins
3/8 cup chopped flaked coconut
3/8 cup chopped roasted and salted almonds
1/2 cup chopped cilantro for garnish
Serve with brown or white rice, also farro makes a good accompaniment.

Steps:

  • 1. Marinade chicken thighs by placing them in a zip loc bag. Add 2 tablespoons olive oil, 1 tablespoon rum, salt and pepper to your taste. Keep in fridge for 2--4 hours. 2. Make the mango sauce by sautéing the shallots in the butter until soft. Place in blender along with the chopped mangos and heavy cream and blend. Mix in diced jalapeños if using. Store in re fridge until ready to plate, 3. Combine chopped raisins, coconut and almonds. Set aside. 4. Take chicken out of fridge and either pan sauté or Barbeque. 5. Take serving plates and spread 1/4 of the mango sauce on half the plate. Thinly slice two of the thighs per plate and fan on top of mango sauce. 6. Top chicken slices with the raisin/coconut/almond mixture. 7. Serve with rice or farro sprinkled with the chopped cilantro.
