Pappardelle, from an Italian verb meaning "to gobble up," is an apt name for a sturdy pasta that fills out a hearty veal stew.

1 whole veal shank (about 1 1/2 pounds osso buco), cut into 3 pieces
1 medium onion, peeled and diced
4 medium carrots, peeled and diced
3 stalks celery, ends trimmed and diced
1 red bell pepper, seeded and diced
1/2 cup white wine
3 cans (14.5 ounces each) low-sodium chicken stock, skimmed of fat
1/2 ounce dried porcini mushrooms, broken into small pieces
1 cup canned chopped tomatoes
1/4 teaspoon crushed red-pepper flakes
1 pound pappardelle (broad, flat noodles) or tagliatelle
1 tablespoon finely chopped fresh rosemary
Olive-oil cooking spray

Steps:

  • Heat oven to 400 degrees. Trim silver skin from veal. Heat a Dutch oven coated with olive-oil cooking spray over medium heat until very hot. Add veal; cook until browned, turning as needed, about 5 minutes. Add onion, carrots, celery, and red pepper; stir to combine. Reduce heat to medium low, and cook until vegetables are softened, about 6 minutes. Increase heat to high, and add wine; cook until almost all the wine has evaporated, about 5 minutes.
  • Add chicken stock, mushrooms, and tomatoes; bring to a boil. Place cover on Dutch oven; transfer to oven. Cook 1 hour; remove lid, and continue cooking until veal is falling off the bone and sauce is quite thick, about 1 hour 10 minutes more. Using a wooden spoon, break the veal into smaller pieces, and remove the bones. Stir in crushed red-pepper flakes.
  • Bring a large stockpot of water to a boil while osso-buco sauce is finishing. Cook pappardelle until al dente, about 10 minutes. Drain in a colander, and transfer to bowls; top with sauce. Garnish with chopped rosemary, and serve.

1/2 cup all-purpose flour
3/4 teaspoon salt, divided
1/2 teaspoon pepper
6 beef shanks (14 ounces each)
2 tablespoons butter
1 tablespoon olive oil
1/2 cup white wine or beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups beef broth
2 medium carrots, chopped
1 medium onion, chopped
1 celery rib, sliced
1 tablespoon dried thyme
1 tablespoon dried oregano
2 bay leaves
3 tablespoons cornstarch
1/4 cup cold water
GREMOLATA:
1/3 cup minced fresh parsley
1 tablespoon grated lemon zest
1 tablespoon grated orange zest
2 garlic cloves, minced
Polenta,optional

Steps:

  • In a large resealable plastic bag, combine the flour, 1/2 teaspoon salt and pepper. Add beef, a few pieces at a time, and shake to coat., In a large skillet, brown beef in butter and oil. Transfer meat and drippings to a 6-qt. slow cooker. Add wine to skillet, stirring to loosen browned bits from pan; pour over meat. Add the tomatoes, broth, carrots, onion, celery, thyme, oregano, bay leaves and remaining salt., Cover and cook on low for 7-9 hours or until meat is tender. Discard bay leaves., Skim fat from cooking juices; transfer juices to a large saucepan. Bring to a boil. Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened., In a small bowl, combine the gremolata ingredients. Serve beef with gremolata and sauce. If desired serve over polenta.

4 (14-ounce) fresh veal shanks
Olive oil
Salt and pepper
1 pound mirepoix (onion, carrot, and celery), diced 1/4-inch
2 cloves garlic, chopped
2 anchovy fillets
2 tablespoons tomato paste
1 cup Barolo wine
2 quarts brown veal stock
4 Roma tomatoes, seeded and chopped 1/4-inch
1 bunch Italian parsley, washed and chopped fine

Steps:

  • First season the meat with olive oil, salt and fresh ground black pepper, then in a smoking hot cast iron pan sear both sides of the shank. Remove the veal and set aside. Add in the mirepoix, garlic, anchovy and tomato paste, caramelize all the ingredients together, add the Barolo to the pan to deglaze. Add the veal stock to the pan and reduce by 1/4. When reduced, pour the simmering liquid over the 4 veal shanks in a roasting pan, add the diced tomato and parsley. Cover first with plastic wrap then with aluminum foil, place in a preheated 325 degree oven for 3 1/2 hours. Check for fork tenderness. Garnish with the gremolata and shaved, roasted parsnips and carrots. (Gremolata: chopped parsley, lemon zest, bread crumbs, anchovy) Reduce braising liquid by 1/4, season and pour over shanks.

Anyone who likes mushrooms and enjoys their pasta sweet and creamy should try this. I normally prefer spicier food, but made this for dinner last night and thought it was delicious. I heated the left-overs in the microwave for lunch today, and the sauce tasted even better. I used lite cream and penne rigate in place of the pappardelle. Recipe was recently featured on Australian television cooking show, Fresh.

375 g pappardelle pasta
2 tablespoons olive oil
2 garlic cloves, crushed
1 onion, chopped finely
250 g mushrooms, finely sliced
1 cup cream (250ml)
1/2 cup parmesan cheese, grated
60 g pine nuts, toasted
100 g sultanas
salt and pepper
1/4 cup flat leaf parsley, chopped

Steps:

  • Cook pasta in a large pot of boiling salted water according to packet instructions until al dente; drain and return to pot.
  • Meanwhile, heat oil in large fry pan over medium heat and cook garlic and onion for 3-4 minutes or until soft. Add mushrooms and cook a further 5 minutes or until just tender.
  • Stir in cream, half the cheese, pine nuts and sultanas and simmer gently until heated through. Season with salt and freshly ground black pepper.
  • Add sauce to hot pasta and stir through flat-leaf parsley.
  • Serve pasta topped with remaining parmesan.

  • Preheat oven to 150C. Heat a frying pan over medium-high heat. Add 60ml olive oil and veal, and fry, turning occasionally, until browned all over (8-10 minutes). Remove veal from pan, add remaining oil, reduce heat to medium, add onion, carrot, mushrooms and garlic, and fry gently, stirring occasionally, until onion is golden (8-10 minutes). Add red wine, reduce by half (4-5 minutes). Add veal to bottom of pan, scraping vegetables aside, then add tomatoes, prosciutto fat, stock and marjoram, cover with a tight-fitting lid or foil, transfer to oven, and braise until meat falls from bones (2½-3 hours). Rest in stock for 30 minutes so meat retains its juices. Remove and discard excess fat and bones, roughly shred veal, set aside while reducing sauce.
  • Bring braising liquid and vegetables to boil over high heat, reduce to 500ml (2 cups) (12-15 minutes) until well flavoured. Add roughly shredded veal back to sauce, season to taste.
  • Cook pasta in a large saucepan of boiling salted water until al dente (6 minutes). Drain, reserving a little pasta water, add pasta to ragù and toss over medium-high heat to combine, adding a little pasta water to loosen the sauce if necessary. Season to taste and serve scattered with parmesan and extra marjoram.
