PAPAYA BERRY SMOOTHIE



Papaya Berry Smoothie image

Papaya's are rich in antioxidants. Contains many minerals a good source of potassium & magnesium. When they are green they contain a good source of papain a protein-digesting enzyme similar to bromelain. Which is used in meat tenderizers. Berries are a good source of anticancer compound ellagic acid. Studies have shown those that ate strawberries were 3 times less likely to develop cancer then those that didn't eat them.

1 cup papaya, peeled and seeded
1 cup frozen mixed berries
1/2 cup skim milk or 1/2 cup soymilk
1 tablespoon honey (optional)

2 (10 ounce) packages frozen sweetened raspberries, thawed (or 2 cups sweetened fresh raspberries)
2 tablespoons lime juice
2 tablespoons sugar
3 papayas, halved and seeded

Steps:

  • Combine first three ingredients (raspberries - sugar) in a blender or food processor and puree until sugar is dissolved and mixture is smooth.
  • Strain to remove seeds (***this can be prepared 2 days ahead and refrigerated***).
  • Place payaya halves on individual plates and spoon raspberry sauce into the cavities.
  • Serve immediately.
