Papas Arrugadas Recipe (Wrinkled Potatoes) image

This papas arrugadas recipe (wrinkled potatoes) is a hugely popular dish in the Canary Islands, with small potatoes boiled in water with coarse sea salt. Serve them with mojo picon for huge flavor!

2 pounds small potatoes
1/4 cup coarse sea salt
Mojo Sauce for serving

Steps:

  • Clean the potatoes and add them to a large pot.
  • Cover them with water, then add in the salt.
  • Boil the potatoes for 15 to 20 minutes, until softened.
  • Drain the water, then return the potatoes to the pot. Heat back to medium-low heat and let the remaining water evaporate from the pot. You should see a light salt crust form on the potatoes.
  • Serve with mojo sauce!

2 lbs baby yukon gold potatoes (should be egg size or smaller)
5 thin slices lemons
1/4-1/3 cup sea salt (about)
water

Steps:

  • Arrange potatoes (if possible in a single layer) in a wide and shallow soup pot.
  • Add water--just half way up the potatoes (not covering them).
  • Add the salt and lemon slices.
  • Bring to a boil and cover with a damp towel.
  • Reduce heat to medium, and cook until done, and water has evaporated considerably--the skins should begin to"wrinkle.

These rather dry little potatoes are served with almost every meal on the Canary Islands. They use a small potao with a light brown skin, but unless you have access to a specially market, use golf-ball size red or white new potatoes. Large grained sea salt is the secret. Serve with Mojo Rojo or Mojo Verde ( see recipes I've posted). Very simple recipe for beginner cook. From Eating Well.

8 new potatoes, about 1 1/2 inches in diameter, scrubbed
1/2 cup sea salt

Steps:

  • Place potatoes in a large sauce pan and add just enough water so potatoes are not completely covered.
  • Add salt and bring to a boil over high heat.
  • Reduce heat to medium and cook at a lively simmer until potatoes are tender, 20-30 minutes.
  • Drain.
  • Return the potatoes to the saucepan and place over low heat.
  • Shake the pan until a light crust forms on the potatoes, about 1 minute.
