BEST BREAD PUDDING
Look no further: this is the only bread pudding recipe you will ever need. This super-thick version is equal parts sweet and custardy, with just a touch a spice. Perfect for a special event, or for Sunday morning breakfast at home.

- Preheat the oven to 300 degrees F. Grease an 8-inch square baking dish with the butter.
- Toast the bread cubes on a baking sheet until they start to dry and harden, about 20 minutes. Set aside. Raise the oven temperature to 325 degrees F.
- Whisk together the cream, milk, sugar, vanilla, salt, cinnamon, whole eggs and yolks in a large bowl. Add the bread to the bowl and stir until completely coated. Cover and let soak for about 30 minutes, pushing the bread down occasionally so that all the cubes are soaked. Meanwhile, pour hot water over the raisins, if using, and soak for 10 minutes. Once plumped, drain the raisins, add to the bowl of bread and gently toss.
- Pour the bread mixture into the prepared baking dish and bake until the custard is set and the top is golden brown, about 1 hour and 30 minutes. Let cool slightly before serving. Serve warm, at room temperature or cold.

Steps:
- Preheat oven to 350*.
- Brush a 2 quart casserole dish or 6 ramekins with melted butter or spray with cooking spray.
- Combine raisins and orange juice in a bowl and allow to soak for 15 minute
- Place raisin bread cubes in a large bowl. Add melted butter and toss to coat.
- Spread buttered bread cubes on a cookie sheet and bake until golden brown. Allow to cool.
- Evenly distribute cooled bread cubes in the casserole dish or ramekins.
- Top bread cubes with soaked raisins so they are evenly distributed.
- In a medium bowl, whisk milk, eggs, sugar, salt and vanilla, stirring until sugar is completely dissolved and mixture is smooth.
- Pour mixture over bread cubes and refridgerate at least 15 minute
- Place in oven. If using ramekins, place on cookie sheet first. Bake until center is set, approximately 45 min for casserole or 30 min for ramekins.
- Remove from oven and cool 15 min before serving.

Everyone loves it for dessert, but you might also enjoy serving bread pudding for brunch! I have made this and used craisins. You can use any dried chopped fruit. It's great.

- Preheat oven to 325 degrees F. and butter a 2 quart baking dish.
- Place the bread pieces in a large, shallow bowl and pour the milk over them, making sure that all the bread is moistened.
- Allow this to sit for up to 1 hour (the longer you soak the bread, the more tender the pudding will be.)
- Meanwhile, in another bowl, beat the eggs well, then add the sugar and beat again until well mixed.
- Add nutmeg (and/or cinnamon) and vanilla and mix again.
- Pour this mixture over the bread and milk mixture, then add the chopped dried fruit like raisins or craisins and toss well.
- Pour the pudding into the baking dish, dot with butter and bake for 45-60 minutes, or until it is set in the middle and browned on top.
- Serve with a dollop of whipped cream or pour half and half over each portion.

PANETTONE PUDDING
This is a posh version of bread and butter pudding, rich with cream and vanilla - great for using up any excess Christmas panettone

- Heat the oven to 160C/ 140C fan/ gas 3 and grease a 850ml/1½ pint shallow baking dish with a little of the 50g butter.
- Cut 250g panettone into wedges, leaving the crusts on.
- Butter the slices lightly with the rest of the butter. Cut the slices in half and arrange them in the dish, buttered side up.
- In a bowl, whisk together 2 eggs, 142ml double cream, 225ml milk, 1 tsp vanilla extract and 2 tbsp caster sugar and pour evenly over the panettone.
- Put the dish in a roasting tin and pour hot water around it to a depth of about 2.5cm/1in. Bake for 35 minutes until the pudding is just set - it should be yellow inside and nicely browned on top.
- Dust with icing sugar and serve with spoonfuls of whipped cream.

- cut bread into 1 inch cubes, place in ungreased 13x9-inch pan and either dry in warm oven for a couple of hours, toast lightly in 350°F oven (preferred), or toast in 350°F oven till light brown and dry.
- Chop or puree raisins.
- Sift or sieve sugar, spices and salt into a plastic bag and shake to mix.
- Heat milk, butter, eggs, yolks, raisins and sugar mixture in a sauce pan on low heat stirring constantly until butter's melted and sugar is dissolved, remove from heat if steam starts to appear.
- (You don't want to cook the eggs just yet!)
- Remove from heat, stir in vanilla and immediately pour custard over dried bread.
- If desired strain mixture with a fine strainer to remove raisins and any egg chalazae.
- Mix and press down on bread to be sure it's all covered.
- Preheat oven to 350°F.
- Allow custard to soak into bread cubes until cooled (about an hour).
- Occasionally stirring to evenly distribute mixture.
- Can be refrigerated for up-to 12 hours at this point.
- Bake in 350°F oven for 50-60 minutes (top will be browned and pudding should start to rise out of the pan).
- --------Variations--------------.
- Add a cup of toasted and chopped pecans or walnuts to custard.
- Replace 1/2 tbsp of the vanilla with another extract or liquor.
- Add some white, cinnamon or chocolate chips to custard.
- Replace 1/2 of the milk with heavy cream or 1/2 and 1/2 (makes it rich!).
- Use skim milk, delete butter, use whole wheat bread, reduce sugar to 1 cup, replace eggs/yolks with egg substitute for a "healthy version".
- Add some dried apple or banana to custard.
- Use 1 cup of sugar and add 1/2 cup of maple syrup.
- Replace up-to half the sugar with brown sugar.
- Serve with bourbon sauce, whip cream, ice cream.
