EMAW'S GOULASH
As some of you know I have been attempting to record my mother's recipes for all eternity. This has been one of my all time comfort meals all my life. Some of the ingredients would change depending on how much $$ we had at the time. Feel free to add any seasoning you might like.

Steps:
- Prepare elbow macaroni according to directions on package till al dente.
- Save a little of the pasta water in case you need it later to loosen the sauce.
- Brown meat in a large skillet, drain the fat and add the onion and bell pepper half way through cooking.
- Drain any ramaining fat when onion and pepper is done and add garlic, stir it about.
- Add the meat mixture to the cooked macaroni, add the canned tomatoes, corn and sauce.
- Mix all this together and add seasoning to taste.
- You may need to add some of the pasta water to loosen the sauce if it is too dry.
- This is really good the next day too.

TEXAS GOULASH
Ultimate comfort food, Texas Goulash was originally my mother's recipe which she taught me to make at age 10. I've changed a few things over the years and made it "my own" after having prepared it for at least 40 years. You'll need a deep skillet for this one.

Steps:
- In a 3 quart saucepan, heat 2 cups of water on medium heat.
- While the water is heating, in a deep (3-inch) cast iron skillet or other large pot, crumble the ground chuck. Stirring and breaking up the meat, cook over medium high heat until no longer pink. Remove the meat from the skillet and drain the fat; set meat aside.
- Add 1 tablespoon of olive oil to skillet and heat over medium heat. To the oil, add onion, bell pepper, and celery. Cook and stir the vegetables until softened, then add the minced garlic cloves and continue cooking for 2-3 minutes.
- Add the meat to the vegetables, the two cups of hot water, and the rest of the ingredients, except the macaroni.
- Let sauce cook for 30-40 minutes, adding additional water, if needed.
- While the sauce simmers, refill the saucepan with water and cook macaroni according to package directions. Drain macaroni and add to meat/sauce mixture and stir.
- Serve with warm, crusty homemade or French bread.

BOSNIAN-STYLE GULASH
Steps:
- Preheat the oven to 300 degrees F.
- Cut the beef into small cubes. Chop the onions and add to a large pot with the olive oil, garlic, tomato sauce and tomato paste and cook over medium heat for 10 minutes. Add the cubed beef and cook for 15 minutes. Add the beef broth, parsley, salt, pepper and all-purpose seasoning. Transfer to the oven and cook for about 3 hours. Once finished, whisk in the flour until combined.
SPAGHETTI GOULASH
This is our ultimate household comfort food...My husband's absolute favorite. It goes together very easily once you read through the recipe you'll understand.

Steps:
- Fry the bacon in a big kettle, drain on paper towels.
- In same pot brown the hamburg and the onions, about 15 minutes.
- Return the bacon to the pot and add the tomatoes simmer for about 45 minutes.
- Add the black pepper, sugar and tomato juice.
- Cook your spaghetti in a separate pot, when done rinse with cool water to stop the cooking process.
- Add the cooked spaghetti to the pot of sauce.

GOULASH
Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

Steps:
- Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
- Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute. Stir the tomato paste into the beef mixture to coat, then cook until the paste thickens and deepens in color, about 2 minutes.
- Add the diced tomatoes, tomato sauce, Worcestershire and beef broth to the beef mixture and stir, scraping up any browned bits from the bottom of the pot, to combine. Bring the mixture to a boil over medium heat. Reduce the heat to medium low and add the cavatappi. Cook, stirring occasionally, until the pasta is al dente, 8 to 10 minutes.
- Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

Steps:
- Sauté onion in butter and oil till soft, add garlic and cook for about 1 minute, place in small bowl.
- Add ground beef to skillet and brown, put onion and garlic back into skillet with meat and add diced tomatoes, tomato paste, tomato sauce and beef broth, season with salt and pepper, stir well and simmer for about 2 hours with lid on stirring a few times.
- Stir in wine and simmer with lid off for 15 minutes then mix in cooked macaroni.
