Seared Tuna with Sesame Crust. Learn how to make the best Sesame Ahi Tuna- crispy golden on the outside and rare on the inside in just 10 minutes flat!

10- 16 ounces ahi tuna, thawed (sushi-grade) see notes
1 tablespoon soy sauce or GF liquid aminos
2 tablespoons high heat oil for searing- peanut oil, wok oil, avocado
3 tablespoons sesame seeds (black, or both black and white)
1 teaspoon granulated garlic powder (or onion powder)
1 teaspoon kosher salt
1 teaspoon fresh cracked pepper
1 teaspoon sugar
1 teaspoon dried Italian seasoning (or dried thyme)

Steps:

  • Mix the Sesame Crust ingredients together in a small bowl.
  • Pat dry the ahi tuna with paper towels.
  • Place ahi tuna on a plate, coat all sides with soy sauce. This will help the sesame spice adhere to the tuna.
  • Generously sprinkle all sides of the ahi tuna with the sesame mix, pressing it down into the flesh. Coat the sides. Read through the rest of the directions before starting because the next part goes very quickly.
  • The goal here is to get a nice golden sear on all sides without cooking the ahi tuna all the way through. HOT PAN is key.
  • Heat a cast-iron skillet over medium-high heat, until very very hot. Place tongs, metal spatula and splatter guard (or lid) near the stove. When the pan is hot a flick of water should sizzle loudly. Once the skillet is hot, turn the fan on high. Add the oil and coat the pan and let it get hot. Carefully lay the tuna in the pan, pressing it down into the skillet with a metal spatula. Sear 45-60 seconds ( or longer)- checking the underneath by lifting one corner to see if it is golden. If golden, carefully flip. If not golden, turn the heat up. Sear the other side, 60-90 seconds until golden. Sear the long edges using tongs to hold it upright.
  • Place on a cutting board, blot if you like, then using a very sharp knife, thinly slice, and serve.
  • At this point, you could also refrigerate up to 3 days, and serve this later, chilled. Either way is good.

3/4 cup wasabi sesame seeds
1/3 cup coarsely cracked black pepper
1/3 cup coarse Hawaiian sea salt
Four 6- to 8-ounce 1 1/2-inch-thick ahi tuna steaks
Vegetable oil, for oiling the grill
4 tablespoons sesame oil
1/2 cup honey
1/2 cup red wine vinegar
1/2 teaspoon ground black pepper
2 tablespoons Dijon mustard
1/2 cup soybean oil
2 ounces spring mix
4 tablespoons capers
2 large carrots
2 large tomatoes
1 small red cabbage
1 cucumber
1 romaine heart
1/2 medium red onion, finely diced
1 lemon
2 avocados

Steps:

  • For the fish: Blend the wasabi seeds, cracked black pepper and Hawaiian sea salt in a medium bowl. Place the ahi steaks in the bowl, and carefully roll and flip the steaks to ensure they are completely coated. Remove the steaks to a plate and refrigerate until ready to cook.
  • For the vinaigrette: Mix together the honey, vinegar, pepper and mustard in a small bowl, then stream in the oil, whisking constantly.
  • For the salad: Slice, dice, chop and mix the spring mix, capers, carrots, tomatoes, cabbage, cucumber, romaine and onion, to your liking, then toss with some vinaigrette and plate four salads. Place one lemon wedge on the side of each plate and quarter the avocados. Slice each quartered avocado 3 to 6 times, creating an avocado fan out of each quarter. Set aside.
  • Before heating your grill, you will need to scrape, clean and then oil it. Once clean, preheat to medium-high and close until ripping hot, about 10 minutes. Fold a clean dish towel into a squarish 4-by-6-inch block. Pour 2 cups vegetable oil into a bowl and dip one side of your dish towel block in the oil.
  • Open the grill and begin coating grill grates with the oiled towel block. Repeat until grill grates are slick and clean. Pour the sesame oil on a small plate. Place each steak in the sesame oil on both sides, then on the grill.
  • Cook for 1 minute on each side. Then pull immediately from grill, slice 1/8- to 1/4-inch-thick with a heavy sharp blade and place directly on your plated salads. Top each salad with an avocado fan. Lastly, pair your dish with a nice Chardonnay or a local IPA. Cheers and enjoy!

3 tablespoons olive oil
1 pound Maui onions, slide thin, for caramelizing
4 (6 ounce) ahi tuna steaks, 2 inches thick
12 ounces thinly sliced, dehydrated, and crushed Maui onions
1 tablespoon white sesame seeds
1 cup premium Jasmine rice
1 Tahitian vanilla bean, split
1 tablespoon finely chopped shallots
1 tablespoon unsalted butter
2 cups clam or fish broth
2 cups apple cider vinegar
1 cup balsamic vinegar
2 cups filtered apple juice
2 ounces unsalted butter, chilled and cubed
4 ounces soy margarine, chilled and cubed
Salt and freshly ground black pepper
1/8 cup finely chopped chives

Steps:

  • To prepare ahi:
  • In a heavy bottom saucepan over high heat, heat 2 tablespoons olive oil and add the sliced onion. Cook the onions, constantly stirring until onions caramelize. Set caramelized onions aside.
  • Heat 1 tablespoon olive oil in a large skillet. Roll the tuna in the dehydrated and crushed onions and sesame seeds. Sear on all sides until browned and to desired doneness (rare to medium-rare doneness is recommended).
  • To make Vanilla Bean Jasmine Rice:
  • In a medium saucepot, cook rice over medium heat with vanilla bean, shallots, butter, and broth. Bring to a boil, reduce heat to medium-low, and cover the saucepot with a lid. Simmer until all of the liquid is absorbed and the rice is cooked, about 8 minutes. Remove from heat and fluff the rice with a fork.
  • To make Apple Cider-Soy Butter Vinaigrette:
  • In a medium saucepan, combine both vinegars and apple juice over medium heat. Reduce the liquid mixture to 1/2 cup. Just before serving, stir in the cold butter and margarine in small quantities while whisking over medium heat. Place in a blender and blend for just a few seconds. Season with salt and pepper.
  • Serve the tuna steaks alongside Jasmine rice and caramelized onions, drizzled with the vinaigrette and sprinkled with chives.

SESAME-CRUSTED AHI WITH PONZU VINAIGRETTE

2 tablespoons white sesame seeds
2 tablespoons black sesame seeds
1 pound sashimi-grade ahi tuna (steaks or loin)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 teaspoon grated fresh ginger (from about a 1/2-inch piece)
1/2 cup ponzu
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1/2 teaspoon toasted sesame oil
1/2 Fresno chile, thinly sliced
Canola oil, for cooking
2 shallots, thinly sliced
Kosher salt
Olive oil, for searing
1 scallion, finely sliced on the bias

Steps:

  • Combine the sesame seeds in a shallow bowl. Lightly rub the tuna in the olive oil, then sprinkle liberally with salt and pepper. Press the tuna into the sesame seeds, applying firm pressure so the seeds stick. Cover completely and chill in the refrigerator, uncovered, for 5 minutes, to allow the seeds to stick.
  • For the vinaigrette: In a medium bowl, whisk together the grated ginger, ponzu, soy, vinegar, sesame oil and Fresno. Pour into a serving bowl and set aside.
  • In a large nonstick pan, heat 1/2 inch canola oil to 320 degrees F.
  • Add the shallots to the oil in small batches and fry until golden brown, about 2 minutes. Remove to a paper towel-lined plate and drain. Season with salt.
  • Add 1/4 cup olive oil to another large, nonstick pan and turn the heat on high until hot. Add the sesame-crusted tuna and sear all over for 30 seconds on each side. Remove from the pan and slice 1/2-inch thick.
  • Shingle the tuna on a platter, then sprinkle over the fried shallots and sliced scallions. Serve with the vinaigrette alongside.

SESAME-CRUSTED TUNA

1/4 cup sesame seeds
1 tablespoon black sesame seeds, optional
salt and freshly ground black pepper

2 tablespoons olive oil, plus more for brushing the fish
1 1/2 tablespoons butter
2 pounds tuna steaks, cut in 6 equal portions, approximately 1-inch thick
fleur de sel

Steps:

  • In a dry skillet on medium heat, toast the white sesame seeds until they are just beginning to turn light golden brown and fragrant. Remove from heat and spread seeds on a plate. Add the black sesame seeds to the plate if using, and stir seeds around with fingertips to combine.
  • Brush the tuna pieces on all sides with olive oil. Season on all sides with salt and pepper, and dip tuna pieces in the seeds, pressing to coat on all sides. Set aside on a wax foil lined cookie sheet.
  • When ready to cook, heat the 2 tablespoons olive oil on medium high in the skillet. When oil is hot, add the butter, when the butter foams, add the fish to the skillet. Let cook without moving the fish for about 1 1/2 to 2 minutes, until the sesame crust begins to crisp and brown. When the crust is golden brown, turn the fish and cook until the other side is golden brown and crisp, about another 2 minutes, adding additional butter if needed to keep the fish from sticking and speed up the browning. Once the second side is browned, turn the fish pieces on edge with tongs, to brown the remaining sides.
  • Remove from heat and set aside. Fish will be medium rare at this point. If you prefer fish more well done, place the ban with the fish in a 375 degree F oven for another 3 to 5 minutes.
  • To serve, slice each portion in half and place on the pasta bed with the edges overlapping. Sprinkle with finishing salt, if desired.

I have tried several different recipes for making ahi tuna and was disappointed every time. So I have blended several things about other recipes to create this. I'm sure this isn't completely original, but it is original to me. This can be served as a main course with some rice and asparagus (or stir-fry vegetables) or as an appetizer. I like a little soy sauce for dipping, but there are many other spicier dipping sauces you could use.

4 (6 ounce) sushi-grade ahi tuna steaks
1 ½ teaspoons blackened seasoning
2 tablespoons teriyaki sauce
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
2 tablespoons grapeseed oil

Steps:

  • Rinse tuna and pat dry. Place in a prep dish and sprinkle both sides with blackened seasoning. Brush teriyaki sauce on all sides of the tuna to glaze it.
  • Mix white and black sesame seeds together in a shallow dish. Dredge tuna in the sesame seeds until all sides are coated.
  • Heat oil in a cast iron skillet over high heat until smoking. Arrange tuna in the pan and cook for 30 to 45 seconds. Flip and cook for another 3o to 45 seconds; do not overcook!
  • Quickly transfer tuna to a cutting board and cut into 1/4-inch thick slices. Arrange tuna on individual plates, overlapping slices slightly. Serve immediately.

1/4 cup black sesame seed
1/2 cup white sesame seeds
4 (6 ounce) ahi tuna steaks, 1 inch thick
salt & freshly ground black pepper
2 tablespoons grapeseed oil or 2 tablespoons canola oil

Steps:

  • In a shallow dish, combine the two types of sesame seeds and stir to mix.
  • Season the tuna with salt and pepper and dredge in the sesame seeds, coating the tuna evenly.
  • In a non stick pan, warm the oil until smoking, arrange the tuna in the pan (making sure not to overcrowd) and cook until the white sesame seeds start to turn golden underneath (around 1 minute).
  • Carefully turn the tuna over and cook for about another minute.
  • Transfer the tuna to a cutting board and cut into 1/4 inch thick slices.
  • Serve immediately.

  • To prepare the dipping sauce, finely chop cilantro. Using a microplane, grate the ginger and garlic into a small bowl. Add cilantro, soy sauce, water, brown sugar and sesame oil into the bowl and mix well.
