HARIALI PANEER TIKKA (GREEN PANEER SKEWERS)
Paneer is marinated in a creamy herb and garlic yogurt marinade, then charred.

Steps:
- Put the garlic, chiles, coriander and mint leaves in a blender and process until ground, then transfer to a bowl. Add the tamarind paste and mix together. Season with salt. The amount of chiles and salt can be increased or decreased to taste. This chutney should be consumed on the day it is made.
- To prepare the marinade, put the yogurt, cream, garlic paste, cilantro leaves, red and green chile pastes, chutney, roasted gram flour and oil in a large bowl. Season with salt and mix together.
- Coat the paneer with the marinade and set aside for about 2 hours.
- Prepare a charcoal grill, or alternatively preheat the oven to 180ºC/350ºF/Gas Mark 4. Take a metal skewer and thread the marinated paneer cubes through it, leaving a 2.5-cm/1-inch gap between each cube. Roast over a charcoal grill or in the preheated oven for 10-15 minutes.

- Whisk the yogurt in a large bowl until smooth. I have used greek yogurt here, you can use regular yogurt just make sure to strain it for several hours until you have thick yogurt left and then use in the recipe.
- Add all the ingredients for marinade to the yogurt- ginger garlic paste, mustard oil, coriander powder, chaat masala, kashmiri red chili powder, garam masala, red chili powder, kasuri methi and salt.
- Whisk to combine everything together. Add in juice of 1 lemon along with chopped cilantro and mint. Mix well.

- To a blender add cilantro, mint, ginger, garlic, green chili, salt and juice of 1/2 lemon (big lemon). Blend until you have a coarse paste.
- Transfer this to a large bowl. To that bowl, now add yogurt. Mix until combined.Add kasuri methi, garam masala, coriander powder and chaat masala. Mix to combine.
- Then add mustard oil. If you don't have mustard oil you can use any other oil but mustard oil is highly recommended here.Using a wire whisk mix until everything is well combined and you have a smooth marinade.
- Add onion, peppers (I used a mix of green & red) and paneer. Using your hands, toss the paneer and veggies with the marinade until it's all well coated with it.
