CINNAMON PANCAKE CUBES

"When I was young, my mother introduced our family to this delicious way to use up leftover buttermilk pancakes," says Donna Bielenberg of Tabernash, Colorado. "In fact, my father urged us not to eat all the pancakes so we could have these yummy cinnamon-and-sugar squares later."

SPECIAL PANCAKES (BATTER CAKES)

Special Pancakes (Batter Cakes) image

These are the best of the best in old-fashioned pancakes. (Thank you, Halifax Liz for letting me know that your grandmother was making these in Northern Ireland 70 years ago.) It's no wonder a recipe like this has such staying power, they're super easy & make use of on-hand ingredients. The secret to their firm but fluffy texture is using tiny cubes of white bread to support the batter. But you'll never know they're in there! I've been making this recipe for about 10 years now & I like to serve these pancakes with jams, maple syrup & my homemade syrup from Recipe #22066. I also usually double the recipe if there is more than just the 3 of us eating. The recipe was found in "Pancakes A to Z", one of the three books in my favorite cookbook series by Marie Simmons and there titled "Rux's Family's Favorite Pancakes". My family simply dubbed them "Special Pancakes" and even though it doesn't take a special day to make them, they make ANY day feel special.

Categories     Breakfast

Time 13m

Yield 14 3-inch pancakes, 4 serving(s)

Number Of Ingredients 8

6 slices firm white bread (I use whatever type I have on hand)
1/4 cup all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
3/4 cup milk
2 large eggs
4 tablespoons salted butter, melted
2 tablespoons vegetable oil (maybe less, for griddle or skillet)

Steps:

  • Using a serrated knife, trim the crusts off the bread & then cut the bread into 1/2 inch cubes.
  • In a large bowl, combine the bread cubes, flour, sugar and baking powder.
  • In a separate bowl, whisk together the milk & eggs, then stir in the melted butter. Add to dry ingredients, stirring to blend.
  • Let mixture stand for 5 minutes.
  • Stir mixture well, breaking up some of the cubes.
  • Heat large non-stick griddle or skillet over medium heat (I use 300-350° on my old electric griddle).
  • Lightly brush the griddle with vegetable oil (I use a paper towel folded several times to spread the oil evenly onto the griddle.) Non-stick cooking spray can be substituted but I have found we prefer to use the light film of oil because it really adds to the outer color & texture of the pancake.
  • Pour a scant 1/4 cup batter onto the griddle. Adjust the heat to medium-low and cook until the bottoms are lightly browned.
  • With a large spatula, carefully flip the pancakes over to brown the other side. Repeat til all the batter is used up. Serve with syrups or jams of your choice.

PANCAKES FOR ONE

Pancakes for one image

Treat yourself to fluffy American-style pancakes with this simple recipe for one person. Drizzle over maple syrup and serve with berries, if you like

Provided by Esther Clark

Categories     Breakfast, Brunch, Dessert, Treat

Time 20m

Number Of Ingredients 7

1 large egg
40g plain flour
½ tsp baking powder
45ml milk (dairy, nut or oat based)
1 tsp butter
½ tbsp oil
maple syrup or honey and berries, to serve (optional)

Steps:

  • Separate the egg, putting the white and yolk in seperate bowls. Mix the egg yolk with the flour, baking powder and milk to make a smooth paste.
  • Beat the egg white and a pinch of salt with an electric whisk (or by hand) until fluffy and holding its shape. Gently fold the egg white into the yolk mixture. Be extra careful not to knock any of the air out.
  • Heat the butter and oil in a non-stick frying pan. Dollop a third of the mixture into the pan and cook on each side for 1-2 mins or until golden brown. Repeat with the remaining mixture to make three pancakes. Drizzle over some maple syrup or honey and serve with berries, if you like.

PERFECT PANCAKES RECIPE

Perfect pancakes recipe image

An easy pancake batter recipe with tips on how to make the best pancakes every time with sweet or savoury toppings

Provided by Good Food team

Categories     Breakfast, Dinner, Lunch, Main course, Supper, Buffet, Snack, Brunch, Dessert

Time 30m

Number Of Ingredients 5

100g plain flour
2 eggs
300ml semi-skimmed milk
1 tbsp sunflower oil or vegetable, plus extra for frying
pinch salt

Steps:

  • Put 100g plain flour and a pinch of salt into a large mixing bowl.
  • Make a well in the centre and crack 2 eggs into the middle.
  • Pour in about 50ml from the 300ml of semi-skimmed milk and 1 tbsp sunflower oil then start whisking from the centre, gradually drawing the flour into the eggs, milk and oil. Once all the flour is incorporated, beat until you have a smooth, thick paste. Add a little more milk if it is too stiff to beat.
  • Add a good splash of milk and whisk to loosen the thick batter. While still whisking, pour in a steady stream of the remaining milk. Continue pouring and whisking until you have a batter that is the consistency of slightly thick single cream.
  • Heat the pan over a moderate heat, then wipe it with oiled kitchen paper.
  • Ladle some batter into the pan, tilting the pan to move the mixture around for a thin and even layer. Quickly pour any excess batter into the mixing bowl, return the pan to the heat.
  • Leave to cook, undisturbed, for about 30 secs. If the pan is the right temperature, the pancake should turn golden underneath after about 30 secs and will be ready to turn.
  • Hold the pan handle, ease a palette knife under the pancake, then quickly lift and flip it over. Make sure the pancake is lying flat against the base of the pan with no folds, then cook for another 30 secs before turning out onto a warm plate.
  • Continue with the rest of the batter, serving them as you cook or stack onto a plate. You can freeze the pancakes for 1 month, wrapped in cling film or make them up to a day ahead.

PANCAKES

Pancakes image

This is really a great recipe! It is fast, simple and you usually have the ingredients on hand. I never use a mix! I got this from my sister years ago, and I have shared it many times.

Provided by Ellen Brody

Categories     Breakfast

Time 10m

Yield 9 small pancakes

Number Of Ingredients 7

1 egg
3/4 cup milk
2 tablespoons butter or 2 tablespoons margarine, melted
1 cup flour
1 tablespoon sugar (or 1/2 teaspoon honey or molasses)
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Beat egg until fluffy.
  • Add milk and melted margarine.
  • Add dry ingredients and mix well.
  • Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel.
  • The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.
  • Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
  • When bubbles appear on surface and begin to break, turn over and cook the other side.

PANCAKE CUBES

Pancake cubes image

When my daughters were young, I would make pancakes often and found that I always had leftovers. Rather then just freeze them, I would make this recipe to use up the leftovers and I found that I enjoyed them even better made this way. I was then making sure that I always had some leftovers to use this recipe.

Provided by Lucille Hoerle

Categories     Pancakes

Time 15m

Number Of Ingredients 4

8 large leftover pancakes
1 Tbsp granulated sugar
1 tsp cinnamon
2 Tbsp butter/margarine

Steps:

  • 1. Cut the cold leftover pancakes into small squares. Add the sugar and cinnamon to the pancakes and mix well. Heat a griddle and add butter. Once butter has melted and the griddle is hot, add the pancake mixture. Fry and move around the little squares of pancakes and brown lightly until all the butter is soaked up and the pancake squares have begun to brown. I used to serve this as is but you can certainly add maple syrup or honey to the dish when serving.

WHOLE WHEAT PANCAKES – SOPHIE'S FOOD CHOICE
