1 tablespoon olive oil
3 lbs skinless salmon fillets
salt and pepper
2 medium shallots, chopped
1/4 cup white wine vinegar
1/4 cup white wine
1/2 cup butter, cut into cubes
2 tablespoons chopped parsley
2 tablespoons drained capers
1 tablespoon lemon zest

Steps:

  • Heat oven to 400 degrees.
  • Line a baking sheet with foil; brush with olive oil.
  • Season both sides of the salmon filets with salt and pepper.
  • Bake until salmon flakes easily, about 20 - 25 minutes.
  • Meanwhile in a heavy saucepan, simmer shallots, vinegar and wine until shallots are soft and very little liquid remains.
  • Add the butter and 2 tablespoons water, whisking constantly over high heat until the butter is melted and incorporated.
  • Stir in the parsley, capers and lemon zest.
  • Serve over the salmon.

4 (6 ounce) fillets salmon
2 tablespoons olive oil
2 tablespoons capers
⅛ teaspoon salt
⅛ teaspoon ground black pepper
4 slices lemon

Steps:

  • Preheat a large heavy skillet over medium heat for 3 minutes.
  • Coat salmon with olive oil. Place in skillet, and increase heat to high. Cook for 3 minutes. Sprinkle with capers, and salt and pepper. Turn salmon over, and cook for 5 minutes, or until browned. Salmon is done when it flakes easily with a fork.
  • Transfer salmon to individual plates, and garnish with lemon slices.

4 salmon steaks, about 1 1/2 inches thick
1/3 cup fresh lemon juice
1/2 cup butter, melted
salt and pepper
1/4 cup of chopped parsley
1/4 cup chopped capers

Steps:

  • Rub the salmon steaks with lemon juice and brush them with melted butter.
  • Season with salt and pepper to taste.
  • Arrange in a baking dish and bake in preheated hot oven (425°F) for about 20 minutes, basting with a combination of melted butter and lemon juice every 5 minutes.
  • Do not turn.
  • Arrange the cooked salmon steaks on a hot platter.
  • Mix the pan juices with the chopped parsley and capers, and pour over the steaks.
  • If additional liquid is needed, add a little dry vermouth or white wine.
  • Good with new potatoes, dressed with butter and parsley, and a cucumber salad.
  • Makes 4 servings.

Please refer to the chef's recipe for directions or use your own potato cake recipe. Keep in mind the nutritional info will be incorrect for this reason, i.e. only used half the ingredients for the potato cakes.

1 -2 teaspoon blackening seasoning, mix (I use Paul Prudhomme)
olive oil
4 cups coarsley grated potatoes
2 eggs, beaten
1/4 cup self raising flour
1/4 cup sour cream
6 teaspoons grainy mustard
1 tablespoon chopped fresh chives
salt
fresh ground pepper
2 tablespoons olive oil
1/3 cup fat free sour cream
2 tablespoons mayonnaise
1 teaspoon prepared horseradish
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon lemon juice
1 dash Tabasco sauce
3 -4 cups fresh Baby Spinach
olive oil
salt
1 dash red wine vinegar

Steps:

  • Combine sauce ingredients, whisk and set aside.
  • Prepare potato cakes in heavy large skillet using a scant amount of olive oil. Set aside and keep warm.
  • Season both sides of salmon fillets. Using same skillet drizzle olive oil. Sear fillets until just done, about 1-2 minutes per side. Remove and keep warm.
  • Using same skillet drizzle a scant amount of oil if needed. Cook spinach just until wilted, about a minute or two. Drizzle with vinegar and season with salt.
  • To serve drizzle sauce on plate, place spinach, then potato cake, then salmon.

Posting for safe keeping. This is the best salmon I have ever made. Use 4 - 6 oz filets. This is nice over sauteed spinach. Prep time is marinade time.

2 salmon fillets
1 garlic clove, thinly sliced
1 tablespoon soy sauce
1 teaspoon Dijon mustard
1 tablespoon mirin or 1 tablespoon maple syrup
1/2 lemon, juice of
1/4 teaspoon dried dill
1/4 teaspoon paprika
1/4 teaspoon fresh pepper
1 teaspoon sweet butter
1 teaspoon extra virgin olive oil

Steps:

  • Combine all marinade ingredients (not butter and oil) in a large dish and whisk. Place filets in the marinade, coating well and cover with plastic wrap. Marinate in the refrigerator overnight or for several hours.
  • Heat up a large skillet over medium with the butter and oil. Once melted remove salmon filets form the marinade and place in the skillet, cut side down. Let cook for about 7 minutes. Flip the filets onto the skin side and cook another 5 minutes. Transfer the filets to a plate and with the heat still on, add the leftover marinade to the skillet. Turn the heat to high and let the sauce bubble and reduce, swishing it around occasionally in the pan. When it has thickened to your liking pour over the fish. Serve and enjoy.
