PAN-FRIED BROCCOLI RECIPE BY TASTY

Here's what you need: olive oil, broccoli, salt, chicken stock, garlic, red pepper flake

Number Of Ingredients 6

2 teaspoons olive oil
1 head broccoli, cut into florets
¼ teaspoon salt
⅛ cup chicken stock
1 clove garlic, minced
red pepper flake, to taste

Steps:

  • Heat oil in a pan over medium heat until it begins to shimmer.
  • Add the broccoli and sprinkle with salt, stirring to coat in the oil.
  • Cook for 5 minutes, without moving the broccoli.
  • Add chicken stock and place a lid on the pan, and cook for 1 minute.
  • Remove the lid and add the garlic and red pepper flakes. Stir, cooking for 1 minute.
  • Enjoy!

1/4 cup KRAFT Sun Dried Tomato Vinaigrette Dressing made with Extra Virgin Olive Oil
4 skinless salmon fillets (1 lb.)
1 chili pepper, seeded, chopped
2 cups small broccoli florets, blanched
2 green onions, sliced
1/4 cup sliced almonds, toasted

Steps:

  • Heat dressing in large nonstick skillet on medium heat. Add fish and peppers; cook on medium heat 8 min. or until fish flakes easily with fork, turning after 4 min. and occasionally stirring peppers.
  • Add broccoli, green onions and nuts. Cook 1 to 2 min. or until heated through, stirring occasionally.

Pan-roasting broccoli results in a carmelized flavor, a completely different taste using broccoli, salt, and pepper. Adapted from Cook's Illustrated.

Number Of Ingredients 5

3 tablespoons water
1/4 teaspoon salt
1/8 teaspoon pepper (I used garlic pepper blend)
2 tablespoons vegetable oil
1 1/4 lbs broccoli, separated into small florets, and stems, sliced (about 5 cups florets and 3/4 cup stems in total)

Steps:

  • Stir water, salt, and pepper together in small bowl, til salt dissolves.
  • In a large skillet, heat oil over medium high then add the broccoli stems in an even layer.
  • Don't stir for about two minutes until they get light browned.
  • Add the florets and toss to combine and don't stir for another two minutes, until they just begin to brown.
  • Add water spice mixture and cover pan with lid, cooking for two minutes.
  • Uncover and cook until desired doneness.
  • Note: I eyeballed my broccoli measurements and it worked fine. I did add a little water to mine.

2-3 lbs broccoli crowns or broccoli heads (about 3 lbs), tough leaves and stems trimmed and discarded, stalks quartered lengthwise
1 lb Food You Feel Good About Angus 85% or 90% Lean Ground Beef
1 cup Food You Feel Good About Cleaned & Cut chopped Onions
1/4 cup Italian Classics Unseasoned Breadcrumbs
1/4 cup milk
1 egg
3 Tbsp Wegmans Basting Oil, divided
Wegmans Pan Searing Flour
1 Tbsp olive oil
1 tsp butter
1 tsp red pepper flakes
Zest of half lemon
1 cup Food You Feel Good About Smooth Marinara Sauce, warmed

Steps:

  • 1. Blanch broccoli 2-3 min in large pot of boiling salted water; Drain; transfer to bowl of ice water; drain and set aside. 2. Combine ground beef, onions, breadcrumbs, milk, egg, and 2 Tbsp basting oil; shape into 6 oblong patties. Dust with pan-searing flour; pat off excess. 3. Heat olive oil in skillet on MEDIUM-HIGH until oil faintly smokes; add patties. Turn over when patties change color one quarter way up and seared side has turned turn paper-bag brown, 2-3 min. When internal temp of patties reaches 160 degrees (check by inserting thermometer into thickest part of patty), remove from skillet; keep warm. Drain excess drippings from pan. 4. Add remaining 1 Tbsp basting oil and butter; swirl, being careful not to burn butter. Baste patties with spoon, 1-3 min. Transfer patties to clean platter; let rest 5-10 min. 5. Discard pan drippings. Add broccoli, red pepper flakes, lemon zest, salt and pepper to taste; toss gently to warm through. To Serve: Spoon warmed sauce onto six plates; top each with meat patty. Serve with broccoli. Chef Tip: 3 pkgs(16 oz ea) frozen broccoli can be substituted for the fresh, and you don't have to blanch it.

PAN-SEARED BROCCOLINI

Letting the broccolini brown slightly in the pan gives it a boost of flavor. To accomplish this, the broccolini must be absolutely dry when it goes into the pan; otherwise, it'll steam and won't take on any color. A large cast-iron skillet is the ideal cooking vessel for this dish.

Kosher salt
2 bunches broccolini or broccoli di cicco or broccoli spears (about 1 pound)
2 tablespoons extra-virgin olive oil
4 medium cloves garlic, minced
1 teaspoon chile flakes

Steps:

  • Bring a large pot of well-salted water to a boil. Add the broccolini and cook until the florets are tender and the stalks start to soften a bit, 2 minutes or so. Drain in a colander and run cool water over them to stop the cooking. Drain, pat very dry with towels, and set aside.
  • Heat the oil in a large skillet over medium-high heat. When hot, add half the broccolini and arrange it in a single layer. Let the broccolini cook undisturbed until it starts to brown on the bottom, 2 to 3 minutes.
  • Transfer the broccolini to a plate, add the remaining broccolini to the pan, and sear in the same way. When the second batch is seared, combine all the broccolini in the pan along with the garlic, chile flakes, and a couple pinches of salt. Continue to cook, tossing constantly, until the garlic is aromatic, about 1 minute longer.
  • Season to taste with more salt and serve warm or at room temperature.
