SEARED SCALLOPS WITH GARLIC BUTTER
These scallops are seared until golden brown and then covered in a garlic butter wine sauce!

Steps:
- Thaw scallops in the fridge if frozen. Dab dry with a paper towel and season with salt & pepper.
- Heat oil over high heat in a nonstick skillet. Once the oil is smoking, add scallops and cook 2-3 minutes or until golden brown.
- Flip scallops over and cook an additional 1-2 minutes or just until firm and browned. Do not overcook.
- Remove from heat and place on a plate to rest.
- Reduce heat to medium and wipe-out skillet with a paper towel.
- Add butter and garlic to the pan and cook just until fragrant, about 30 seconds.
- Add white wine and cook until reduced by half, about 2 minutes. Add scallops back to the pan and spoon sauce over top.
- Garnish with lemon wedges & parsley, serve immediately.

Steps:
- Cook bacon over medium to medium-low heat in a large skillet for 10-12 minutes. The bacon should be almost cooked through but still pliable.
- Remove the bacon from the skillet and let drain on a paper-towel lined plate.
- Prepare scallops by removing the tough tendons, or side muscles, and patting dry.
- Wrap one piece of bacon around each scallop. Secure the strip of bacon with a toothpick.
- Whisk together butter, garlic, sugar, salt, and pepper in a small bowl.
- In a large, clean skillet over medium to medium-low heat add 1 tablespoon of a high smoke point oil.
- Cook wrapped scallops for 3-4 minutes per side, or until the internal temperature reaches 120 degrees.
- Brush the butter garlic sauce on top during the last 1-2 minutes of cooking.
- Remove scallops from the skillet and let rest for 5 minutes. Once the temperature reaches 130 degrees they are ready to be served.
- Serve scallops with a sprinkle of fresh parsley and lemon wedges. Enjoy!

- Heat a large skillet over medium heat and fry the bacon pieces until golden and crisp, about 5 minutes. Reserve the bacon fat in the skillet and transfer the bacon with a slotted spoon to a paper towel-lined plate to drain.
- Meanwhile, arrange the scallops so they lay flat and are evenly spaced on a plate. Pat them completely dry with a paper towel. Season the scallops with salt and pepper.
- Cook the scallops, undisturbed, over high heat until they are golden brown on the bottom, about 3 minutes. Flip the scallops and cook for 1 minute more. Turn off the heat, add the lemon zest and juice, parsley and reserved bacon pieces and toss to combine. Divide the scallops among 4 plates or a serving platter and serve immediately.

- Mince the 2 garlic cloves and chop around 1 tbsp of parsley, then set aside.
- Preheat your grill to its highest heat setting, then place a cast iron skillet on the grill.
- Place 4 strips of bacon on the cast iron and cook to your desired crispiness.
- While your bacon cooks, season both sides of your scallops with the kosher salt and freshly cracked black pepper.
- Once your bacon has finished cooking, remove it from the skillet.
- Chop the bacon to use as garnish.
- Place your seasoned scallops into the bacon-greased skillet.
- Let the scallops cook for around 2 minutes on one side.
- Turn each scallop over. They should be a nicely seared, brown color.
- Add freshly chopped garlic and unsalted butter to the cast iron skillet.
- After 2 more minutes of cooking on this side, give the scallops a quick flip so the other side can pick up a hit of butter and garlic.
- Remove the scallops from the skillet and plate them.
- Garnish with fresh parsley and chopped bacon.
- Cut a lemon in half, then squeeze the juices from 1 half over the scallops. All that's left to do is enjoy!

- Place scallops in a bowl and sprinkle with salt. Cover and let rest in the refrigerator for 30 minutes.
- Combine 5 tablespoons warm butter, lemon juice, and garlic in a bowl; whisk until combined. Let sit at room temperature for 30 minutes.
- At the same time, remove scallops from the refrigerator and let come to room temperature, about 20 to 30 minutes.

- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy about 6-8 minutes. Drain excess fat; reserving 1 tablespoon in the skillet. Transfer bacon to a paper towel-lined plate.
- Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry. Season scallops with salt and pepper, to taste. - Heat a large saute pan over medium-low heat, and add bacon. Cook slowly, stirring frequently, until brown and crisp, about 8 minutes. Remove bacon with a slotted spoon, and transfer to a paper-towel-lined plate.
- Drain excess fat, leaving a thin coat on bottom of pan. Increase heat to medium, add scallops to pan, and sprinkle with salt and pepper to taste. Cook until golden brown and opaque, about 2 minutes per side.
- Transfer scallops to the serving dish, and add shallots to pan. When shallots are translucent, add white wine; scrape browned bits from bottom of pan with a wooden spoon. Cook until liquid is reduced by half, 3 to 4 minutes. Stir in butter, and pour over scallops; top with reserved bacon. Serve over ribbon zucchini.
