Moist and flaky, this pan fried grouper with lemon butter is delicious with some veggies on the side or as is. Butter sauce is rich and accompanies the fish so well.

grouper fillet 8 oz portion
1 tablespoon butter
juice of 1/2 lemon
1 garlic clove, minced
1/4 cup chopped parsley

Steps:

  • Season grouper fillet with salt and pepper on both sides. Heat butter over medium heat in the skillet and saute minced garlic in it for 1 minutes.
  • Add grouper and cook for about 3 minutes on each side. Take the fish out and set aside.
  • Add lemon juice and parsley to garlic butter. Saute for a minute or two.
  • Top grouper fillet with lemon buter parsley mixture and serve.

3 pounds boneless, skinless grouper fillet, or substitute snapper or orange roughly
1/2 cup unpeeled slivered almonds
1/2 teaspoon allspice
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
2 teaspoons ground cumin
1 1/2 teaspoons paprika
1/4 cup olive oil
1/2 small bunch flat leaf parsley, coarse stems removed
Lemon wedges, for garnish

Steps:

  • Rinse the fillets and pat them dry with paper towels. Check the fish for bones and remove with tweezers, if necessary. In a food processor, combine the almonds, allspice, salt, pepper, cayenne, cumin, and paprika. Pulse until finely ground, but do not over process or the nuts can become oily. In a shallow baking dish, spread out the nut spice mixture. Dredge the fillets in the mixture, one at a time, shaking off the excess.
  • In a large heavy skillet, heat the olive oil over medium high heat. Fry the fillets for about 3 minutes on each side, until light brown. With a slotted spatula, remove the fish to a warm platter or individual serving plates and scatter with the parsley sprigs. Serve with wedges of lemon.

1 large or two small skin-on fish fillets, about 8 ounces (rainbow trout, small salmon, brown trout)
Kosher salt
Ground black pepper
Flour for dredging
2 tablespoon Canola oil
3 tablespoons butter
1 tablespoons capers, drained
1 lemon, juiced

Steps:

  • Heat a heavy pan over medium high heat.
  • Season fish on meat side with salt and pepper. Lightly dredge fish in flour and shake off excess. When pan is good and hot, add Canola oil followed immediately by 1 tablespoon butter. As soon as foaming subsides, place fish in pan with the skin side down. Jiggle pan for the first 10 seconds to keep the fish from sticking. Cook until golden crust forms on meat. Carefully turn fish away from you and again jiggle pan for the first few seconds. Cook until skin turns golden brown. Remove to a warm plate.
  • Pour out the cooking fat, add remaining butter and quickly fry the capers. Remove pan from the heat, add lemon juice to pan and swirl. Pour sauce over the fish and serve.

This is a simple preparation for cooking white fish fillets. I used skinless grouper fish fillets because the skin can be strong tasting and unpleasant. I let the fish sit in milk and a mixture of onions, fennel, celery seed, bay leaf and thyme. Then I simply pan-fried the fish, basted it with clarified butter and waited until the flesh turned opaque.Grouper has succulent, moist meat on the inside if cooked properly. Its mild, slightly sweet taste is great to introduce to children. My baby daughter loved it. I think her favorite part was that I let her drizzle lemon juice over her fish.

4 (8-ounce) grouper fillets
1 cup milk
3 cloves fresh garlic, peeled and halved
1 fresh bay leaf
1 sprig lemon thyme
1 teaspoon white pepper, freshly ground
1¼ teaspoons salt
2 tablespoons clarified butter, melted
juice of 1 lemon

Steps:

  • Clean the fish fillets. Pat dry. Cover with milk. In a mortar and pestle, combine the fennel, celery seeds and turmeric. Once powdered, add 1 clove garlic, onion, bay leaf and thyme. Add to the milk. Mix well and let sit for 5 minutes. Add 1 tablespoon oil. Set aside.
  • Allow your pan to get nice and hot, then add olive oil and pan fry the grouper 2-3 minutes on each side or until you get good color.
  • Pat dry the fish fillets one more time. Season with salt and pepper. In a non-stick pan, heat the rest of the oil and add the rest of the garlic, sauteeing until glistening.
  • Dust one side of the fillets with flour and place them in the pan, floured side down. Once a thin crust is forming, dust the top with more flour and flip the fish. Pan fry 8 minutes on each side. Baste with butter, flip the fish one more time and wait until you get a lightly golden color.
  • Drizzle with lemon juice, cover and let sit for 5 minutes before serving.

½ teaspoon dried parsley
⅛ teaspoon paprika
¼ teaspoon ground white pepper
2 pounds grouper fillets
2 tablespoons mayonnaise
⅛ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
  • Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
  • Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.

1 c. all-purpose flour
salt and pepper to taste
1 c. corn meal
4 - (6 oz.) Florida grouper fillets
1/2 c. vegetable oil for deep-frying

Steps:

  • 1. Beat eggs, salt and cayenne together in a shallow dish. Add salt and pepper to taste to flour. Place flour mixture and cornmeal in separate shallow dishes. Dredge each fillet in flour mixture and dip in egg wash. Dredge again in cornmeal. 2. In a deep fry pan, heat 1 inch of the oil to 375°F on a deep-fat thermometer. Fry the fillets in batches for 2 to 4 min. on each side, or until browned and fish flakes easily with a fork. Transfer fillets to paper towels to drain; serve immediately. This only serves 2 but can easily be increased to serve how many servings you need. Although the original recipe suggests using snapper, other white fish such as Tilapia or Grouper can be used. When I made this I used Tilapia, as it is more readily available where I live. As there is not much oil used to cook the fish, it best to use a bit of Pam in the skillet or a non-stick pan, as the fish tends to stick. Recipe source: local newspaper
