SHOU ZHUA BING (CRISPY CHINESE PANCAKES)

Shou Zhua Bing (Crispy Chinese Pancakes) image

Shou Zhua Bing is a deliciously wonderful cousin of the scallion pancake that translates to "Hand grab pancake" because you can easily pull apart the layers.

Time 55m

Number Of Ingredients 13

3 tablespoons oil
4 scallions ((white parts only; whole, not chopped))
3 star anise
1 tablespoon Sichuan peppercorns
3 tablespoons all-purpose flour
1/8 teaspoon five-spice powder
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup boiling water
3/4 cup cold water
1 1/2 tablespoons sesame seeds
1/4 cup finely chopped scallions ((optional))
Salt ((to taste))

Steps:

  • In a small saucepan over low heat, add the oil. Throw in the scallion pieces, star anise, and Sichuan peppercorns. Keep the pan over low heat for about 10 minutes, until fragrant. Pick out all the spices, so you essentially have a pot full of spiced oil. Stir in the flour and five-spice powder to create a thin roux. Set it aside, and let it cool completely.
  • In a mixing bowl, combine the flour and salt. Make a well in the flour and add the boiling water. Mix with a fork or a pair of chopsticks. Gradually add the cold water and knead everything together to form a smooth dough ball. Cover with a damp cloth and let it rest for 30 minutes.
  • Depending on the pancake size you want, divide the dough into 4-8 equal pieces. Lightly brush some oil on a clean work surface. Roll each piece of dough into a long rope, and then use a rolling pin to roll it flat. Brush a thin layer of the roux all over the dough, and then sprinkle it sparingly with sesame seeds, chopped scallion, and salt.
  • Start on one end and roll the dough up. Stand the roll upright and press it down with your palm. Lightly roll out the resulting circle until you get a pancake that's between 1/4-1/2" thick. It's ok of the outer edges break open a bit. Repeat for each pancake.
  • At this point, you can cook them, or freeze them by separating each pancake with a layer of plastic wrap or wax paper, and then putting them in a freezer bag. There's no need for thawing when you want to cook them.
  • Heat a pan over medium heat and add a tablespoon or two of oil. Place the pancake in the pan. Once the bottom starts to turn a little golden, add two teaspoons of water to the sides of the pan (don't pour the water on the pancake), and immediately cover with a lid. Cook 3 minutes. Uncover the pan, flip the pancake, and do the same steps with the other side.
  • To finish, uncover the lid again, turn up the heat slightly, and brown both sides while flipping the pancake occasionally. When it's golden brown, use a pair of chopsticks to squeeze and pinch the pancake a couple times to loosen the layers (this step is optional), because you ideally want to see the layers when you hand-pull it apart. The cooked pancake should be crispy and slightly chewy.

Categories     Pancakes

Time 1h10m

Yield 8

Number Of Ingredients 6

¼ tsp salt
¾ cup warm water
1 cup plus ¼ cup for sprinkling all purpose flour
1 tbsp plus 1 tbsp for brushing Vegetable Oil
1 tbsp toasted, or as needed Asian sesame oil
½ cup finely chopped green onion

Steps:

  • Dissolve the salt in warm water, and mix in 1 cup of flour to make a soft dough. Turn the dough out onto a well-floured work surface, and knead for about 5 minutes until slightly springy. If the dough is sticky, knead in ¼ teaspoon of vegetable oil.
  • Divide the dough into 8 equal-size pieces, and keep the pieces covered with a cloth.
  • In a bowl, mix the remaining flour with the remaining vegetable oil to make a mixture like fine crumbs.
  • On a floured work surface, roll a piece of dough out into a thin square about 5x7-inch in size, brush the dough with toasted sesame oil, and sprinkle lightly with about 1½ teaspoon of the flour-oil mixture.
  • Sprinkle about 1 tablespoon of chopped green onion onto the dough, and spread the onion out evenly.
  • Starting with a long end, roll the dough up into a rope shape, and pinch the seam and the ends closed. Roll the rope shape into a flat spiral, and press lightly with hands to compact the spiral and keep it from unrolling.
  • Place the spiral down onto the floured work surface, and gently roll it out into a pancake with the onions folded inside, turning the pancake over often as it's rolled out. Roll gently and turn often to avoid making holes in the pancakes.
  • Finished pancakes should be about 5-inch in diameter. Repeat with the rest of the dough pieces, making 8 onion pancakes.
  • Heat a non-stick skillet over medium heat, and brush with vegetable oil. Pan-fry each pancake in the hot skillet for about 5 minutes per side until golden brown on both sides.
  • Cut into wedges and serve warm. Enjoy!

SHEET-PAN PANCAKES

Sheet-Pan Pancakes image

Last year, when it seemed like the whole world was cooking from scratch and tending to sourdough starters, Ree Drummond had other ideas: She gave herself permission to chill out and take some shortcuts. Her seventh cookbook, The Pioneer Woman Cooks: Super Easy!, reflects her current zero-stress attitude in the kitchen. "It was really fun developing the recipes," Ree says. "I'd made many of them on my show during quarantine, and to me it was a creative challenge to strike a balance between home cooking and convenience cooking." These sheet-pan pancakes, for example, save her from having to babysit individual pancakes on a griddle. They also include a triple whammy of toppings - strawberries, blueberries and chocolate chips - so everyone in the family is happy. What's the Pioneer Woman's favorite of the three? "Yes to all!" she says.

CHINESE SCALLION PANCAKES

Chinese Scallion Pancakes image

Unlike true pancakes, "Cong You Bing" (or Chinese scallion pancakes) are made from a dough instead of a batter. The tasty appetizers are the perfect "sponge" for mopping up extra sauce and can be made ahead of time for convenience. Just wrap a green onion pancake in foil and reheat in the oven. -Jenni Sharp, Milwaukee, Wisconsin

CHINESE SCALLION PANCAKES

Chinese Scallion Pancakes image

Scallion pancakes are a popular dish in China, and available from restaurants and street vendors. There are many different regional variations. My version is Shanghai-style and is my grandmother's recipe. These can be frozen after step 3, and thawed and finished cooking when ready to eat.

Categories     Appetizers and Snacks

Time 1h45m

Yield 4

Number Of Ingredients 6

2 cups all-purpose flour
1 tablespoon salt, divided
¾ cup boiling water
½ cup cold water, or as needed
vegetable oil, or as needed, divided
1 bunch green onions (scallions), minced

Steps:

  • Mix flour and 1 teaspoon salt together in a large bowl; pour in boiling water and quickly mix together until water is absorbed. Work cold water, about 1 tablespoon at a time, into flour mixture just until dough forms. Knead dough for 10 minutes. Cover bowl with a damp cloth and let dough rest for 40 minutes.
  • Turn dough onto a lightly floured work surface; divide into 4 equal pieces.
  • Roll 1 piece of dough into a large thin round; brush the top with vegetable oil and sprinkle with about 1/2 teaspoon salt and 1/4 the green onions. Pick up 1 end of the round and roll dough around green onions into a long scroll-shape. Take 1 scroll end and roll dough into a disk. Repeat with remaining dough, letting each disk rest for 10 minutes.
  • Heat about 1 tablespoon vegetable oil in a skillet over medium-low heat. Place 1 disk on a floured surface and roll into a 1/2-inch thick round; cook in the hot oil until golden brown, 2 to 3 minutes per side. Repeat with remaining disks.

  • Start by making the dough. Add the flour, water, and salt to a mixing bowl and mix until it forms a dough. Knead for 5 minutes. Set aside and cover with a damp kitchen towel to rest.
  • Then make the filling components. In a small bowl, combine the pork, five spice, cumin, soy sauce, pinch of sugar, and 1/4 teaspoon salt. In another bowl, combine the cabbage, scallion, garlic powder, sesame oil, and white pepper.
  • Now you're ready to assemble the pancakes. Divide the dough into 8 equal portions and keep the unused dough covered with a damp towel. Next, use a couple drops of oil to lightly oil your work surface--a bamboo or wood cutting board works well. Roll one of the dough pieces into a long, thin rectangle about four inches wide. No need to make it perfect. Very lightly oil the dough and spread on about an eighth of your pork mixture. Then add about 2 tablespoons cabbage to one end. Roll the dough forward like a snail. Then stand it on one end so it's like a standing cylinder. Press the dough down into a flat pancake (about 3/4 inch thick, with a diameter of about 3 1/2 inches) with one hand and then sprinkle with sesame seeds. These measurements are just meant to give you a general idea so no need to get out any tape measures!
  • Next, pour ½ cup oil into a small cast iron skillet or pan and heat to about 300 degrees. Place pancakes into the pan (we did 3 at a time) and fry until golden. Carefully flip and fry on the other side (about 3 minutes per side). Always be extra careful when working with hot oil.
