2 tsp kosher salt
2 Tbsp olive oil
1 Tbsp sesame oil
2 Tbsp lemon juice
1 Tbsp brown sugar
2 garlic cloves ((pressed))
1/2 tsp freshly ground black pepper
1 tsp dry dill
1/2 tsp cayenne pepper ((optional))

Steps:

  • In a large bowl, combine all the seasonings, add chicken wings and mix by hand ensuring even coating.
  • Transfer the wings to a suitable size Ziploc bag. Refrigerate for at least half an hour. Marinating up to 24 hours is perfectly acceptable and will only be beneficial.
  • Preheat a large frying pan. Sear chicken wings on both sides over high heat for about one and a half to two minutes per side.
  • Reduce heat to low, cover with a lid leaving a small crack, and continue cooking for about 20 minutes until the meat is tender. Flip the wings twice or three times during cooking.

750 g Chicken wings
1 tablespoon Smoked Paprika
1/4 teaspoon Onion granules
1/4 teaspoon Garlic granules
1/4 teaspoon Cayenne pepper
Salt (to taste)
2 tablespoons Oil (sunflower or vegetable oil)

Steps:

  • If the wings are not already cut, cut them into flat, tips and drummettes. Discard the tips as it's not needed for this recipe. Pat the flats and drummettes dry with a kitchen towel.
  • Mix the paprika, onion granules, cayenne pepper, and salt. Add the mix with the wings into a bowl and mix till well combined.
  • Add a large skillet on the stove over a medium heat, add the oil then arrange the chicken wings skin side down in the pan.
  • Fry for 10 minutes then flip to the other side and fry for another 10 minutes.Check with the biggest piece to know if it's cooked. It's cooked if there is no blood around the bone and the juice run clear.
  • Take off heat and leave to rest for few minutes.
  • Serve as appetizers or with sides of choice.

1 cup (8 ounces) sour cream
1/4 cup mayonnaise
1/4 cup buttermilk
1/4 cup pickle juice
2 large cloves garlic, grated

2 teaspoons onion powder
1 1/2 quarts canola oil
1 cup all-purpose flour
1 cup cornstarch
3 1/2 pounds chicken wings split into drumettes and flats (about 18 each)

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the dressing: In a medium bowl, whisk together the sour cream, mayonnaise, buttermilk and pickle juice with the grated garlic, dill, hot sauce, garlic powder and onion powder. Taste for seasoning.
  • Prepare the wings: Pour the oil into a deep, heavy-bottomed pot. Heat the oil to 350 degrees F over medium heat. Prepare 2 rimmed baking sheets, one lined with a wire rack. In a large bowl, combine the flour and cornstarch. Separate the larger wings and the smaller ones. Season all of them with salt and toss in the flour mix. Shake off the excess.
  • Fry the wings : Lower half of the larger wings into the oil and gently "swirl" the oil with a slotted spoon as they fry. This swirling will assure they fry more evenly on all sides. When they are light to medium brown, 5 to 7 minutes, remove them with the slotted spoon and lay them out on the wire rack to cool. Season with salt. Cook the rest of the wings in batches, keeping the cooked wings warm in the second baking sheet in the oven until all are fried. Leave the wings in the oven for at least 10 minutes to assure all are cooked through.
  • Arrange the wings on a serving platter with the ranch dressing alongside for dunking. Serve with the lemon, carrots, cucumbers and pickles.

Oil for deep-fat frying
BUFFALO WING SAUCE:
3/4 cup Louisiana-style hot sauce
1/4 cup unsalted butter, cubed
2 tablespoons molasses
1/4 teaspoon cayenne pepper
SPICY THAI SAUCE:
1 tablespoon canola oil
1 teaspoon grated fresh gingerroot
1 garlic clove, minced
1 minced Thai chile pepper or 1/4 teaspoon crushed red pepper flakes
1/4 cup packed dark brown sugar
2 tablespoons lime juice
2 tablespoons minced fresh cilantro
1 tablespoon fish sauce
SPICY BARBECUE SAUCE:

1/2 lb-1 lb chicken wing sections, cut into drumettes and wingettes
2 Tbsp avocado oil- we prefer this for pan frying over olive oil since it does well with high heat.
1/2 tsp sea salt
1/2 tsp ground black pepper

Steps:

  • Cut the wings into drumettes and wingettes, if needed (hopefully yours came pre-cut ;) Dry the wings on both sides with a paper towel.
  • Add the chicken to a small bowl along with 1 Tbsp of the oil, the salt, and pepper. Stir to combine.
  • Preheat a cast-iron skillet on medium high and add the remaining 1 Tbsp of avocado oil.
  • Place the chicken wings in the skillet with the meatier skin side DOWN. Lower the heat to medium. Pan fry the chicken wings for 10 minutes until crispy. With tongs, flip the wings over and continue cooking them for about 5 more minutes until brown and crisp. The internal temperature of the wings should be 165F.
  • To add sauce to the wings, dab the excess grease around the wings to absorb some of the oil before adding. Add sauce to your liking and quick cook the wings for 30-60 seconds until the sauce is warm and the coats the chicken.
  • Serve warm and enjoy! Allow at least 3-4 wings per person. A 1 lb package should serve 3-4 people.

1 cup low sodium soy sauce
1 tablespoon grated fresh ginger
