- In a large bowl, combine all the seasonings, add chicken wings and mix by hand ensuring even coating.
- Transfer the wings to a suitable size Ziploc bag. Refrigerate for at least half an hour. Marinating up to 24 hours is perfectly acceptable and will only be beneficial.
- Preheat a large frying pan. Sear chicken wings on both sides over high heat for about one and a half to two minutes per side.
- Reduce heat to low, cover with a lid leaving a small crack, and continue cooking for about 20 minutes until the meat is tender. Flip the wings twice or three times during cooking.

- If the wings are not already cut, cut them into flat, tips and drummettes. Discard the tips as it's not needed for this recipe. Pat the flats and drummettes dry with a kitchen towel.
- Mix the paprika, onion granules, cayenne pepper, and salt. Add the mix with the wings into a bowl and mix till well combined.
- Add a large skillet on the stove over a medium heat, add the oil then arrange the chicken wings skin side down in the pan.
- Fry for 10 minutes then flip to the other side and fry for another 10 minutes.Check with the biggest piece to know if it's cooked. It's cooked if there is no blood around the bone and the juice run clear.
- Take off heat and leave to rest for few minutes.
- Serve as appetizers or with sides of choice.

FRIED CHICKEN WINGS WITH RANCH
The dressing here is all about the garlic. The garlic and onion powders are important for that true ranch flavor we know from childhood. I serve these wings with lots of sliced carrots and cucumbers on the side for dunking in the dressing. I also just put out homemade or jarred pickle spears too. It's nice to take a break every few wings and eat your vegetables.

- Preheat the oven to 350 degrees F.
- Make the dressing: In a medium bowl, whisk together the sour cream, mayonnaise, buttermilk and pickle juice with the grated garlic, dill, hot sauce, garlic powder and onion powder. Taste for seasoning.
- Prepare the wings: Pour the oil into a deep, heavy-bottomed pot. Heat the oil to 350 degrees F over medium heat. Prepare 2 rimmed baking sheets, one lined with a wire rack. In a large bowl, combine the flour and cornstarch. Separate the larger wings and the smaller ones. Season all of them with salt and toss in the flour mix. Shake off the excess.
- Fry the wings : Lower half of the larger wings into the oil and gently "swirl" the oil with a slotted spoon as they fry. This swirling will assure they fry more evenly on all sides. When they are light to medium brown, 5 to 7 minutes, remove them with the slotted spoon and lay them out on the wire rack to cool. Season with salt. Cook the rest of the wings in batches, keeping the cooked wings warm in the second baking sheet in the oven until all are fried. Leave the wings in the oven for at least 10 minutes to assure all are cooked through.
- Arrange the wings on a serving platter with the ranch dressing alongside for dunking. Serve with the lemon, carrots, cucumbers and pickles.

PAN FRIED CHICKEN WINGS
Cooking chicken wings in a pan is easy and takes half the time as oven-baked wings. Serve them simple or add your favorite sauce to the skillet.

- Cut the wings into drumettes and wingettes, if needed (hopefully yours came pre-cut ;) Dry the wings on both sides with a paper towel.
- Add the chicken to a small bowl along with 1 Tbsp of the oil, the salt, and pepper. Stir to combine.
- Preheat a cast-iron skillet on medium high and add the remaining 1 Tbsp of avocado oil.
- Place the chicken wings in the skillet with the meatier skin side DOWN. Lower the heat to medium. Pan fry the chicken wings for 10 minutes until crispy. With tongs, flip the wings over and continue cooking them for about 5 more minutes until brown and crisp. The internal temperature of the wings should be 165F.
- To add sauce to the wings, dab the excess grease around the wings to absorb some of the oil before adding. Add sauce to your liking and quick cook the wings for 30-60 seconds until the sauce is warm and the coats the chicken.
- Serve warm and enjoy! Allow at least 3-4 wings per person. A 1 lb package should serve 3-4 people.
CRISP FRIED CHICKEN WINGS

- Mix flour, salt, 1/2 teaspoon paprika, garlic powder, and black pepper together in a sealable plastic bag.

- Rinse and dry chicken.
- Place wings in shallow dish and pour over the soy sauce, ginger, cilantro, garlic, and lemon juice.
- Toss well to coat; marinate, refrigerate for 2 hours.
- Remove wings from marinade and pat dry.
- Season with salt and pepper.
- In a large saute pan over medium to medium-high heat, melt the butter in olive oil.
- When the butter stops foaming, add honey and chicken wings and fry until browned on each side, about 5 minutes.
- Continue cooking wings, turning them over often to coat them as the glaze reduces.
- Cook until the wings are sticky and cooked through.
- Garnish with sesame seeds and serve.
- DO NOT OVER COOK-- the glaze will burn and taste nasty!
