This recipe for a paleo and vegan acai bowl is packed with all kinds of nutrient dense ingredients. It will be loved by the whole family and is the perfect balance of tart and sweet. It's perfect for breakfast, as a snack and is completely dairy free and refined sugar free!

1 packet organic unsweetened acai
1 1/4 cups frozen mixed berries
1 small frozen banana
1/2 cup unsweetened coconut or almond milk
1 heaping tablespoon cashew butter
2 tablespoons hemp seeds (or chia seeds)
2 scoops collagen peptides (omit for vegan)
1 tablespoon coconut oil
bee pollen
cacao nibs
fresh fruit

Steps:

  • In the pitcher of a high-speed blender, add all of the ingredients.
  • Blend on medium-high for 1 minute. If you're using a Vitamix blender, be sure to use the tamper to make sure everything gets blended well.
  • Pour into a bowl and top off with your favorite toppings.

1 cup frozen mango chunks
1 cup frozen pineapple chunks
7 ounces frozen unsweetened acai pulp (such as Sambazon®)
1 cup iced water, or as needed
1 tablespoon lime juice
¼ cup unsweetened shredded coconut
1 teaspoon chia seeds
1 teaspoon agave nectar

Steps:

  • Place mango, pineapple, acai, water, and lime juice in a blender; pulse until smooth and creamy. Pour mixture into 2 bowls; sprinkle with shredded coconut and chia seeds. Drizzle with agave.

handful frozen berries
½ a very ripe banana , chopped
handful ice cubes
1 tsp coconut flakes , 5 pineapple chunks, ½ passionfruit, 1 tbsp toasted oats, to top (optional)

Steps:

  • Put the açaí powder, frozen berries, banana and ice cubes into a powerful blender with 100ml water. Blitz until smooth, then pour into a bowl and add your choice of toppings.

  • Defrost the acai packet by running it under warm water. It does not need to be completely defrosted, just enough to be able to get the puree out of the packet. Add the acai puree, frozen fruit, banana, and coconut milk to the blender. Blend until it is a thick and creamy consistency. Add more coconut milk if you want it to be a thinner consistency.
  • Pour the acai mixture into a bowl and top it with your favorite toppings, such as strawberries, cacao nibs, and the remaining half of the banana.
